CITRUS GRANITE WITH CRAYFISH SKEWER

Steps:

• Bring all ingredients to a boil, except Aquavit. Strain. Add 2 tablespoons Skane Auavit. Place into a glass baking dish. Put into freezer. Take out when solid. Chop up so it looks like crystal.
• To make skewers, start with a piece of cheese on the skewer and add 1 tail of crayfish, 1 piece of potato and then cheese. Repeat until skewer is full.

CHOCOLATE GRANITE

Steps:

• Bring water to a boil in a saucepan. Add all ingredients, bring to a boil again. Pour into a shallow container and freeze overnight. When frozen, scrape with a metal spoon. Serve immediately.

CITRUS SALAD WITH PISTACHIOS & MAPLE VINAIGRETTE

Steps:

• For the salad: Add the arugula to the bottom of a platter and top with the oranges, grapefruit and avocados. Sprinkle with pistachios and crumbled feta.
• For the vinaigrette: Whisk together the olive oil, white wine vinegar, maple syrup and some salt and pepper.
• Drizzle the dressing over the salad and serve.

MAPLE CITRUS SALAD

Steps:

• With a vegetable peeler remove a 2 by 1-inch piece of zest from 1 of the oranges, being careful not to peel off any of the white pith. Cut into thin strips and set aside.
• Cut about 1/2 inch off of the top and bottom each piece of fruit. Remove the peel and pith from each piece of fruit by standing it on its end and cutting down along the curve of the fruit. Slice the fruit into 1/4 inch thick rounds and arrange on a platter.
• In a small bowl combine the maple syrup, lemon juice and cinnamon. Pour the dressing over the fruit, garnish with the zest and serve.
