1-1/2 cups diced seeded plum tomatoes
1 jar (6 ounces) mango or peach baby food
1 can (4 ounces) chopped green chilies
1/4 cup each diced green, sweet red and yellow peppers
2 tablespoons lime juice
3 garlic cloves, minced
4-1/2 teaspoons olive oil
4-1/2 teaspoons chopped fresh cilantro
1 tablespoon sugar
1-1/2 teaspoons grated lime zest
1/2 teaspoon salt
1/4 teaspoon pepper
Tortilla chips

Steps:

  • In a large bowl, combine the mangoes, tomatoes, baby food, chilies, peppers, lime juice, garlic, oil, cilantro, sugar, lime zest, salt and pepper. Cover and refrigerate for 4 hours or overnight. Serve with tortilla chips.

1 ripe avocado
oil, for brushing
1 mango, peeled and diced
¼ red onion, finely diced
1 jalapeño, deseeded and finely diced
2 tablespoons fresh cilantro, minced
2 tablespoons fresh lime juice
salt, to taste

Steps:

  • Preheat gas grill on high heat.
  • Using a sharp knife, slice the avocados in half by cutting in a straight line around the pit.
  • Place the avocado half containing the pit in your hand and face it away from you. Gently stick the tip of the knife into the side of the pit and carefully pry it out of the avocado. For a ripe avocado, the pit will pop out with little effort. You can hold a kitchen towel in your hand and place the avocado in the towel for added protection from the edge of your knife.
  • Place the avocado halves on a tray. Using a pastry brush, brush oil on each of the avocado halves.
  • Place the avocados on the grill, flesh side down, and grill for 3-4 minutes, until grill marks appear.
  • Remove the avocados and brush with honey.
  • In a small bowl, mix the mango, onions, jalapeños, cilantro, lime juice, and salt until well combined.
  • Spoon the salsa into the avocados and serve.

This fresh mango salsa / salad is very quick and easy to make with just a handful of ingredients. It combines sweet, sour and spicy flavours into a delicious and colourful dish full of freshness. It can be served as a dip, salad or side dish with various proteins.

1 ripe mango (peeled, pitted and diced)
¼ cup sweet or red onion (diced)
¼ cup english cucumber (diced)
¼ cup red bell pepper (seeded and diced)
1 tomato (diced)
3 tablespoons fresh lime juice
1 tablespoon apple cider vinegar
¼ cup fresh cilantro (roughly chopped)
salt and pepper (to taste)
½ jalapeño pepper (seeded and diced)
¼ teaspoon cayenne pepper

Steps:

  • In a serving bowl, mix together the mango, red bell pepper, onion, tomato, cilantro and cucumber. Drizzle with lime juice and vinegar and toss well to coat. Season with salt and pepper to taste. Optionally add jalapeño or cayenne pepper.
  • Chill for at least 10 minutes before serving. Add more fresh cilantro, lime juice, salt and pepper to taste just before serving.

18 oz boneless salmon fillet
8 corn tortillas, 6 inch (15 cm)
½ teaspoon salt, divided
1 ½ tablespoons olive oil, divided
2 teaspoons lime juice, divided
½ teaspoon chili powder
1 teaspoon mexican spice mix
1 ½ teaspoons paprika
½ teaspoon garlic powder
¼ teaspoon cumin, ground
¼ teaspoon cayenne powder
5 oz avocado, cubed
6 oz mango, cubed
1 ½ oz red onion, chopped
½ cup sour cream
1 teaspoon lime zest
½ oz jalapeño
½ cup coriander, roughly chopped
¼ teaspoon black pepper, garnish
½ teaspoon garam masala

Steps:

  • Preheat the oven to 150°F. Start by splitting the salt, oil, and lime juice in half.
  • In a small bowl, mix chili powder, Mexican spice mix, paprika, garlic powder, cayenne, cumin, ¼ tsp salt, and ¾ tbsp oil. Marinate the fish with this mixture for 5 minutes.
  • Meanwhile, in another bowl, mix avocado, mango, red onion, and 1 tsp lime juice to make the salsa.
  • In a pan over medium heat, use the remaining ¾ tbsp oil to sear the fish for 8 minutes until it's brown. Remove the fish from the pan and discard the skin.
  • To make the sauce, mix sour cream, lime zest, remaining 1 tsp lime juice, and remaining ¼ tsp salt in a bowl until well combined and smooth.
  • Bake tortillas for 5 minutes.
  • To assemble, shred the salmon and add the pieces onto the tortillas together with the salsa, jalapeno, and coriander. Pour the sauce on top.
  • Serve.

5 tablespoons lime juice
MANGO SALSA:
2 medium ripe mangoes, peeled and chopped
3/4 cup cubed fresh pineapple
3/4 cup chopped peeled papaya
1/2 cup finely chopped red onion
1/2 cup finely chopped sweet red pepper
2 jalapeno peppers, seeded and minced
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
24 thin slices cantaloupe
12 thin slices prosciutto, halved lengthwise

Steps:

  • Place shrimp and lime juice in a large shallow bowl. Refrigerate, covered, while making salsa, turning once.
