Mandelbroit, otherwise known as biscotti, is an extremely low tech recipe. You don't need a mixer. You don't even need a fork. You don't have to spoon drop the dough onto a cookie sheet. You do have to make lots 'cause they'll get eaten up fast.

Yield 2 dozen cookies

Number Of Ingredients 10

1/2 cup vegetable oil
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 cups flour (I like to use Rubinfeld 70 per cent whole wheat)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup slivered almonds
1/2 cup raisins or dried cranberries or chocolate chips
1 teaspoon cinnamon

Steps:

  • 1. Preheat oven to 180 C (350 F). 2. Dig your hands in and combine everything together like a toddler making a mud pie. Or better yet, give this job to one of your kids-not a toddler though unless you want your kitchen plus child splattered with sticky mandelbroit batter. 3. Once the batter is all mixed together shape it into two logs and place on baking trays covered with baking paper. (Dear reader, take a moment to contemplate this wonderful fact-no spooning the batter out one cookie at time-isn't that wonderful?) 4. Bake 30-40 minutes. 5. Remove from oven. Cool slightly (10 minutes max or you'll have mandel rocks) and slice with a sharp knife. If you like your sticks harder you can return to turned off oven after slicing. By the way, this freezes beautifully,

For the last few years I have been a personal chef to many lovely families. Each Pesach season I look forward to our family reunion, when I move into their kitchen and whip up their pesach menus. This recipe for mandel bread has become my most requested recipe. This year alone my team and I have made over 1,000. I have been making this for over 20 years, first from my small one bed room apartment as a young married wife, to a making it for all my extended families - my Pesach clients. READ MORE

Number Of Ingredients 8

4 eggs
1 cup sugar
2/3 cup oil
pinch of salt
2 tablespoons Manischewitz Potato Starch
1 and 1/2 cups Yehuda Cake Meal
1 and 1/2 cups ground almonds or walnuts
Glicks Chocolate Chips (optional)

Steps:

  • Beat eggs well. Add sugar gradually. Add other ingredients , beating constantly to blend well.
  • Divide into five portions and form into logs. Place logs on a greased baking sheet.
  • Bake at 350 for 30 minutes until golden. While hot, cut into slices and return to oven for another 10 minutes.

4 eggs
1 ¼ cups white sugar
¼ teaspoon salt
1 cup vegetable oil
3 ½ cups all-purpose flour
1 cup toasted and chopped almonds
1 teaspoon baking powder
2 teaspoons vanilla extract
1 teaspoon almond extract

Steps:

  • Beat eggs and 1 cup sugar together in mixer until blended, add salt and 1/4 cup oil and mix again until blended. Combine 1/4 cup flour and almonds, tossing until coated.
  • Add rest of flour mixture to egg mixture alternately with the remaining 3/4 cups oil, beginning and ending with the dry ingredients. Stir in extracts and almonds until well blended.
  • Divide into eight portions and shape each into portions of 8 x 3 inch log shaped portions on lightly greased cookie sheets.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 25 minutes or until lightly browned.
  • Cut each log diagonally into 1/2 inch slices and place slices on their sides. Bake again at 350 degrees F (175 degrees C) for about five minutes. Remove to wire racks and cool. May be sprinkled with sugar before baking.

I got this recipe from my MIL. I have also made chocolate biscotti with the basic dough recipe by adding semi-sweet chocolate bits and eliminating the raisins, nuts, cherries and butterscotch bits.

1/4 pound(s) butter
1 cup(s) sugar
3 - eggs
1/2 cup(s) orange juice
3 1/2 cup(s) sifted flour
2 1/2 teaspoon(s) baking powder
1 teaspoon(s) vanilla extract
1/2 cup(s) white raisins
1/2 cup(s) chopped walnuts
1/4 cup(s) marachino cherries
8 ounce(s) butterscotch chips
- sugar

Steps:

  • Mix the butter and sugar together. Add remaining ingredients in order given. This will be a sticky dough. On lightly greased baking sheet, using a spoon, make three (3) long loaves. With back of spoon smooth together and flatten somewhat. Sprinkle wth sugar. Bake at 350 degrees for 35 minutes till lightly browned or till toothpick comes out clean. Cool. Cut on the diagonal. FOR BISCOTTI- after cutting, place on baking sheet (cut side down) and return to oven for approximately 5 minutes per side till lightly toasted and crispy. FOR MANDELBREAD.....cut and do not toast
