I invented this dish as an easy, grown-up version of the frozen cream-filled pops we all enjoyed as children. The mandarin oranges and whipped topping re-create the tangy orange and ice cream flavors. One bite cools the heat from the rest of the meal.-Elizabeth Freise, Bryn Mawr, Pennsylvania

2 cans (15 ounces each) mandarin oranges, well drained
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup chopped pecans

Steps:

  • Place oranges in a bowl. Fold in the whipped topping. Just before serving, fold in pecans.

8 ounces marshmallows

Steps:

  • Drain Mandarin Oranges and pineapple. Mix all ingredients together and refrigerate for 1 hour. Serve chilled.

6 oz Vanilla Cook & Serve pudding mix
6 oz orange gelatin
30 oz mandarin oranges (liquid reserved)
1 cup reserved mandarin orange liquid
3 cups milk
8 oz whipped topping
1/4 tsp orange extract (optional)

Steps:

  • Combine vanilla pudding, orange gelatin, milk, reserved mandarin orange liquid, and orange extract (optional) in a large saucepan. Bring to a boil, stirring constantly. The mixture should be thick and smooth.
  • Cover the saucepan with a lid or transfer into a large bowl and cover. Refrigerate for at least four hours or overnight.
  • Whisk the pudding mixture until smooth. Stir in whipped topping.
  • Gently fold in mandarin oranges. Grab a bowl immediately!
