SIMPLE BANANA BREAD
I developed this recipe because I wanted a bread recipe, not cake-like, while living in a 10-foot trailer. This recipe is very low in fat.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 8x4 inch loaf pan and set aside.
- In a large bowl, sift together the flour, baking powder, and salt. Set aside.
- In another bowl, mash the bananas and stir in the eggs and sugar. Stir in the flour mixture and mix until just combined, then fold in the chopped nuts (optional). Pour the batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 55 to 65 minutes or until bread tests done. Remove from oven and cool on a rack for 10 minute, then remove from pan and cool completely. Slice and serve.

THE BEST BANANA BREAD
This is the most successful and versatile quick bread recipe I've found! You can also use chunky applesauce or a 15 ounce can of pumpkin for wonderful variations.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.
- Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.
- Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

MAMA'S BANANA BREAD
My family absolutely loves when I make this! It looks complicated, but it's really not. I got this out of a Paula Deen magazine. Just a few hints...I use flexible cookware when I bake and the first time I made this I had to use 3 regular sized loaf pans. The next time I used two flexible bunt pans it turned out great! I couldn't find one on here that used brown sugar in place of white. So I thought I would share this one. I don't know how many servings this makes, all I know is that it will feed my brood and then some. **Note: I have substituted Splenda Brown Sugar and light sour cream as well; it still turns out fantastic! - Preheat oven to 350. Grease two (6x9 inch) loaf pans.
- In a small bowl, mash bananas together with vanilla.
- In a large bowl combine brown sugar, oil, sour cream, and eggs, stirring until combined.
- In a medium bowl, combine flour, baking soda, baking powder, and salt. Gradually add to sugar mixture, stirring until just combined. Stir in banana mixture, ground pecans, and mini chocolate morsels.
- Pour into pans and bake for 1 hour and 15 minutes, or until wooden pick inserted in center comes out clean. Let cool in pans for 15 minutes; remove from pans, and cool completely on wire racks.

MAMA'S BANANA BREAD
The holidays weren't complete without Mama's Banana Bread and Recipe #382815. I've tried to keep the tradition going...even sending the breads up North to family. Mama's Banana Bread is wonderful for breakfast (try it toasted) with sweet cream butter, midday with coffee, or a late night snack. It's so easy to make, don't wait for the holidays....have it for the family all year long!!

- Preheat oven to 350 degrees.
- In a medium bowl, sift together flour, salt, and baking soda. Set aside.
- Melt butter. In a large mixing bowl, with hand mixer, beat butter and sugar together until well blended. Add eggs, ONE AT A TIME, mixing well after each egg. Add mashed bananas and vanilla extract. Mix together.
- Fold in the flour mixture and walnuts. Blend until all the flour is moist.
- Grease two 9x5x3-inch loaf pans. Divide batter equally between the 2 pans.
- Bake 1 hour or until center of loaf is firm and toothpick inserted comes out clean.

MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

- Grease and flour an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan; set aside.
- Sift together flour, soda, baking powder, cinnamon and salt.
