SCOTTISH SNOW CAKE RECIPE



Scottish Snow Cake Recipe image

A sponge cake baked onto a raspberry jam covered pastry and topped with icing and coconut! Dreamy!

Number Of Ingredients 13

about 110g (1 cup) confectioner's/powdered sugar
a little milk or water
finely shredded, unsweetened coconut to sprinkle on top
150g (1 ¼ sticks) good quality butter, unsalted and at room temperature (if you only have salted butter, omit the salt)
150g (⅔ c) superfine or Baker's sugar (caster sugar in the UK)
3 eggs, beaten
150g (1 ¼ c) self-rising flour, or all purpose flour with 1 tsp baking powder, SIFTED
a pinch of salt
255g (2 cups) flour
170g (1 ½ sticks) butter, cold
57g (¼ c) sugar
1 egg yolk
(about 6 to 8 oz raspberry jam to cover the pastry)

Steps:

  • Using two knives of a pastry cutter, cut the butter finely into the sugar, but do not cream.
  • Add the egg yolk and stir to combine.
  • Add the flour. Using your fingertips, rub the butter into the flour until it has a breadcrumb texture.
  • Press the mixture into the bottom of a 9"x13" cake pan, pressing firmly.
  • Bake for about 10 minutes. Don't let it start to brown. Remove from the oven and allow to cool, while making the cake batter.
  • In a stand mixer or using a handheld mixer, cream the butter and sugar until very light and fluffy. It will begin to pale in color, too.
  • Add about one third of the beaten eggs, and mix well at medium speed.
  • Then add about a third of the sifted flour. Repeat this step. Add the rest of the eggs and mix well, then turn the mixer to low and add the final flour and just mix until well combined.
  • Spoon the jam evenly onto the pastry base taking care not to let it reach the side of the pan.
  • Place dollops of cake batter all over the jam to make it easier to spread. (Try not to let the jam get mixed into the batter.)
  • Spread the batter evenly all over the jam and pastry.
  • Pop the cake into the oven for approximately 30 minutes. Do not open the oven until you start to smell the cake and it looks well risen (through the glass). Gently insert a cake tester or skewer into the center of the cake to check that it's completely cooked before removing from the oven. Allow to cool completely in the pan.
  • Run a knife around the cake, down to the pastry, then shake the pan. You should feel that the cake is loose in the pan before decorating it.
  • Put the confectioner's sugar in a bowl and slowly add the milk or water a little at a time (1/2 tsp) until a thick, but runny consistency is reached. Adjust with more sugar or liquid if you see the icing isn't spreading nicely. Cover the cake with this icing.
  • Before the icing begins to dry, sprinkle generously with finely shredded, unsweetened coconut.
  • Allow the icing to dry and set completely which will take a few hours. Once it's set, use a serrated knife to cut the cake into squares (cutting into 18 pieces is a good size). Alternatively, you can cut the Scottish Snow Cake into fingers or even diamond shapes. Keep covered at room temperature.

1-1/2 cups sugar
1 cup raisins, chopped
1 cup water
3/4 cup butter, cubed
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
4 large eggs, separated, room temperature
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 cup chopped pecans
CREAM CHEESE FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla extract
Pinch salt
4 cups confectioners' sugar
Additional chopped pecans, optional
Optional: Cinnamon sticks, fresh bay leaves, fresh rosemary sprigs, confectioners' sugar

Steps:

  • In a large saucepan, combine the first eight ingredients; cook and stir over medium-low heat until sugar is dissolved. Remove from the heat; cool. , In a large bowl, beat egg yolks; gradually stir in spice mixture. Combine the flour, baking powder, salt and baking soda; gradually add to spice mixture until blended. Stir in pecans. In a small bowl, beat egg whites until soft peaks form; fold into the batter. , Pour into two greased and floured 9-in. round baking pans. Bake at 325° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a large bowl, beat cream cheese and butter until fluffy. Add vanilla and salt. Gradually beat in confectioners' sugar until smooth. To decorate, spread frosting between layers and over top and sides of cake, leaving cake slightly exposed on the sides. If desired, top with pecans, cinnamon sticks, fresh bay leaves, fresh rosemary sprigs and confectioners' sugar. Store in the refrigerator.

3-1/2 cups shortening
7-1/2 cups sugar
30 egg whites
4 cups milk
3 tablespoons plus 1 teaspoon clear vanilla extract
10 cups all-purpose flour
3 tablespoons plus 1 teaspoon baking powder
1 teaspoon salt
COCONUT FILLING:
1 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
2 cans (13.66 ounces each) coconut milk
1 cup half-and-half cream
8 egg yolks, beaten
2 tablespoons butter
1 teaspoon clear vanilla extract
1 cup sweetened shredded coconut
FROSTING:
1 cup shortening
1 cup butter, softened
8 cups confectioners' sugar
6 tablespoons milk
2 teaspoons clear vanilla extract
DECORATIONS AND ASSEMBLY:
11 wooden dowels (eight 2-3/4 inches x 1/4 inch, three 3 inches x 1/4 inch)
3 cardboard cake circles (one 8 inch, two 5 inch)
3 packages (1-1/2 pounds each) ready-to-use rolled white fondant
Assorted snowflake cookie cutters
White edible glitter
1 small new paintbrush
Additional clear vanilla extract
2 to 3 drops blue food coloring
Pastry bag and round pastry tip #4
Rock candy

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. In another bowl, combine the egg whites, milk and vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with egg white mixture, beating well after each addition., Pour 2 cups batter into each of four greased and floured 6-in. round baking pans. Pour 3 cups batter into each of four greased and floured 9-in. round baking pans. For 6-in. pans, bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. For 9-in. pans, bake at 350° for 27-33 minutes or until a toothpick inserted in the center comes out clean. (Smaller cake pans have a deeper fill and need to bake longer.) Cool the cakes for 10 minutes before removing from pans to wire racks to cool completely. , For filling: In a large heavy saucepan, combine the sugar, cornstarch and salt. Gradually whisk in coconut milk and cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter and vanilla. , Transfer to a large bowl. Cool to room temperature. Cover surface of filling with waxed paper; refrigerate until cooled. Stir in coconut., For frosting: In a large bowl, beat shortening and butter until light and fluffy. Add the confectioners' sugar, milk and vanilla; beat until smooth., To assemble cake: Level cake tops if necessary. Place a 9-in. cake on a serving plate; spread with 1-1/4 cups filling. Top with second 9-in. cake; spread top with 3/4 cup frosting. Insert four 2-3/4-in. wooden dowels 1-2 in. apart into center of cake to support the next layers. , Place third 9-in. cake on an 8-in. cardboard circle; place over cake on platter. Spread with 1-1/4 cups filling. Top with remaining 9-in. cake. Frost top and sides of cake with about 2 cups frosting, forming a crumb coating. Roll out 1-1/4 pounds of fondant into a 21-in. circle. Drape over cake and gently smooth, working from the center. Trim ends. Insert four 2-3/4-in. dowels 1 to 2 in. apart into center of cake. Set aside., On a work surface, place a 6-in. cake on a 5-in. cardboard circle. Spread with 1 cup filling; top with second 6-in. cake. Spread top with 1/2 cup frosting. Insert remaining dowels 1 to 2 in. apart into center of cake. Place third 6-in. cake on remaining cardboard circle and position on dowels; spread with 1 cup filling. Top with remaining cake. Frost top and sides of cake with about 1-1/4 cups frosting. Roll out 1-1/4 pounds of fondant into an 18-in. circle. Drape over cake and gently smooth, working from the center. Trim ends. Gently place 6-in. layer cake on 9-in. layer cake., Roll out remaining fondant to an 1/8-in. thickness. Cut with snowflake cookie cutters. Reroll scraps if desired. Place glitter in a small bowl. Press one side of each snowflake into glitter. With a paintbrush, brush vanilla over plain sides of snowflakes; secure onto cake. , In a small bowl, beat food coloring and remaining frosting until smooth. Cut a small hole in the corner of a pastry bag; insert pastry tip. Fill with blue frosting; pipe desired design over cake. Decorate with rock candy. Refrigerate leftovers.

1 package (3 ounces) strawberry gelatin
3 tablespoons sugar
3 tablespoons all-purpose flour

1/2 cup canola oil
2 large eggs, room temperature
1 cup finely chopped strawberries
FROSTING:
1/2 cup butter, softened
1/2 cup crushed strawberries
4-1/2 to 5 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. Line the bottoms of 2 greased 8-in. round baking pans with parchment; grease parchment., In a large bowl, combine cake mix, gelatin, sugar and flour. Add water, oil and eggs; beat on low speed 30 seconds. Beat on medium 2 minutes. Fold in chopped strawberries. Transfer to prepared pans., Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., For frosting, in a small bowl, beat butter until creamy. Beat in crushed strawberries. Gradually beat in enough confectioners' sugar to reach desired consistency. Spread frosting between layers and over top and sides of cake.

400g white sugar cube
100g preserving sugar
3 tbsp edible pearly balls
1 egg white , lightly whisked
edible silver glitter
1 20cm-wide Christmas cake (see 'goes well with')
ribbons
shop-bought decorations (optional)

Steps:

  • Once the cake has been removed from the oven, increase the heat to 200C/180C fan/gas 6. Leave the cake in its tin. Put the sugar cubes in a large bowl and crush with the end of a rolling pin to a sugary rubble. Mix in the preserving sugar, pearly balls and egg white - it should have the texture of wet sand. Tip the mixture on top of the cake and level the surface. Bake the cake for 5 mins to set the sugary crust, then remove and leave to cool.
  • Once completely cooled, remove from the tin and peel off the baking parchment. Sprinkle the top with edible glitter, tie ribbons around the side and decorate with your favourite figurines, if you like.

SNOW-CAPPED FAIRY CAKES

175g butter
175g golden caster sugar
3 eggs
200g self-raising flour
finely grated zest 1 orange
1 tsp vanilla extract
4 tbsp milk
1 egg white
4 tbsp orange juice
175g icing sugar
fruit jellies and silver balls , to decorate

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Line 18 holes of a 2 x 12-hole bun tins with paper cake cases. Melt butter and cool for 5 mins, tip into a large bowl with all the cake ingredients, then beat together for 1-2 mins until smooth.
  • Spoon the cake mixture into the cake cases, filling them three-quarters full (a heaped tablespoon is about right). Bake for 15-18 mins until lightly browned and firm to the touch. Cool on a wire rack.
  • To make the icing, put the egg white and orange juice into a heatproof bowl, sift in the icing sugar, then set over a pan of simmering water. Using an electric hand whisk, whisk the icing for 7 mins until it is glossy and stands in soft peaks. Remove from the heat, then whisk for a further 2 mins until it is slightly cooled.
  • Thinly slice the fruit jellies. Spoon the icing onto the cakes, swirling it with a knife, then decorate with slices of jelly fruits and a few silver balls. Leave to set. The cakes will keep for up to 3 days in the cake tin.
