FARMHOUSE CHICKEN CORNBREAD CASSEROLE
Cozy, down-home comfort food! This Farmhouse Chicken Cornbread Casserole is an easy dinner recipe that the whole family will love.

Steps:
- Preheat oven to 400 degrees F. Spray a 2-quart or 3-quart baking dish with cooking spray. If you use a 2-quart dish, the cornbread topping will be slightly thicker.
- In a large bowl, whisk together condensed soups and milk. Stir in cooked chicken and cheese.
- Pour chicken mixture into prepared baking dish.
- In a separate bowl, stir together corn muffin mix, cream style corn, sour cream, egg and melted butter. Spread evenly over the chicken mixture.
- Bake, uncovered, for about 40-45 minutes, or until a toothpick inserted in the center of the topping comes out clean. Tent the casserole loosely with foil if the top starts to get too dark before it's cooked through. Let stand for about 5-10 minutes, then serve!

- Preheat oven to 350°. Place bread cubes on an ungreased 15x10x1-in. baking pan. Bake 20-25 minutes or until toasted. Cool on baking pan., In a large skillet, heat butter over medium-high heat. Add onion and celery; cook and stir 6-8 minutes or until tender. Transfer to a greased 4-qt. slow cooker. Stir in cornbread, chicken, soups, broth and seasonings., Cook, covered, on low 3-4 hours or until heated through.

- 1. Heat oven to 350 degrees. Spray 10 inch square or 7"x11" inch pan with cooking spray. In large bowl whisk together all ingredients except the last 3 items until well blended. pour into prepared pan. In a bowl, mix together the crushed crackers, melted butter, and shreaded cheddar cheese. Carefully sprinkle over the corn mixture. Cover with foil. Bake for 45 minutes. Remove foil and continue to bake until browned..about 20 more minutes. I make this every Thanksgiving without jalapinos, but other times I make it with them. - Preheat the oven to 375 degrees F. In a mixing bowl, combine all of the ingredients and mix well. On the stove top, heat the oil in a large skillet until hot but not boiling. Pour the hot oil into the bowl with the other ingredients and mix well. Pour the batter into the skillet and bake for 35 to 50 minutes. Start checking for doneness after 35 minutes; it should be golden brown when done.

Reminiscient of traditional cornbread dressing, this casserole variation includes chicken. Pick up a deli-roasted bird if you don't have 3 1/2 cups of chopped chicken on hand. It yields just enough meat for this recipe.

- Sauté celery and onion in hot oil in a medium skillet over medium-high heat 7 minutes or until vegetables are tender; set aside.
- Combine cornbread and poultry seasoning in a large bowl.
- Layer half of cornbread mixture on bottom of a lightly greased 11- x 7-inch baking dish.

- Preheat the oven to 400 degrees F (200 degrees C). Prepare a 1 1/2- to 2-quart casserole dish with cooking spray.
- Set aside 2 tablespoons of the cornbread mix and the white portions of the green onions for the filling.
- Prepare the cornbread topping: combine remaining cornbread mix with 1/2 cup water, Cheddar-Jack cheese, and green portions of green onions in a mixing bowl; stir to combine. Add additional water, 1 tablespoon at a time, until fully combined and a thick, spreadable batter forms. Set aside.
- Prepare the filling: heat a large nonstick pan over medium-high heat and add olive oil. Add chicken, carrots, mushrooms, bell pepper, onion, jalapeno, reserved white portions of green onions, Cajun seasoning, salt, and pepper. Cook and stir until chicken is no longer pink, 7 to 8 minutes. Stir in reserved cornbread mix. Add 1/4 cup water and bring to a simmer. Stir occasionally until slightly thickened, 1 to 2 minutes.
- Transfer chicken and vegetable filling to the prepared casserole dish. Top with cornbread batter and smooth with a spatula. Don't worry if layer is thin.
- Bake in the preheated oven until browned and bubbly, 20 to 25 minutes. Let rest for 5 minutes before serving.

Steps:
- Mix eggs, butter, sour cream, and cornbread mix together.
- Pour in both cans of corn.
- Stir in half the cheese.
- Pour into a baking pan or casserole dish.
- Bake at 350F for 30 minutes.
- Remove from the oven and sprinkle the remaining cheese on top.
- Bake until the cheese has melted and the center of the casserole is solid.

This was something I always looked forward to during the holidays. I don't know why Mama only made it, then! I've broken that tradition by making it anytime I get hungry for it. However, when it's stuffed inside of the turkey, it's even better! I hope you enjoy! :)

Steps:
- Prepare cornbread as package directs. I use a Mexican Cornbread mix. Don't use one that contains sugar.
- When your cornbread has cooled, break it and the toast into a large bowl.
- Sauté onions, celery, and green bell pepper, optional red bell pepper, and garlic in butter until onions are transparent.
- Add the shredded chicken and the sautéed veggies into the cornbread mixture. Use your hands to really mix it up.
- Add poultry seasoning and cayenne pepper, mixing well.
- Add in the broth a little at a time. Add in just enough to make it thick and somewhat soupy. Mix, well.
- Give it a taste. It should taste exactly the way you want your dressing to taste. If it needs more spices add them here.
- When you are content with the taste, stir in the eggs.
- Pour into a buttered 9 X 13 casserole dish.
- Bake for 45 minutes or until set.
