MAMA'S CILANTRO CREAM SAUCE

This is the sauce from my Reggae Wraps recipe. After several people asked me to post it separately I gave in. This sauce is great on just about anything but shoe leather! WONDERFUL on ASIAN cuisine, INDIAN dishes, just about anything that is grilled or spicy! Try this on tacos, burritos, grilled meats, seafood or veggies. Hope you enjoy it.

1 cup sour cream
1/4 cup cilantro, finely chopped
2 green onions, chopped
4 teaspoons lime juice

Steps:

  • Mix sauce ingredients together and refrigerate.
  • Taste, add salt and pepper if you would like.
  • Also great with some freshly grated lime zest.
  • Note: This amount is double the amount used in Reggae Wraps.

Our local television station here in Houston has a segment on Sundays that airs local restaurants and it's recipes. I have been waiting and waiting for this one! This Cilantro Cream Sauce is served over Chicken Enchiladas and they are to die for in my opinion. This cream sauce is absolutely evil :) It's a very very rich sauce and should be avoided by all dieters! I made this and poured it over some chicken enchiladas which came out great but now I'm thinking of a pasta dish and substituting the alfredo sauce with this one. The possiblities are endless with this recipe. I hope you enjoy it as much as I do!

4 cups heavy whipping cream (Divided)
1/2 teaspoon Lawry's Seasoned Salt
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 cup cornstarch
1 cup shredded cilantro

Steps:

  • Place 3 cups of Heavy Whipping Cream in a saucepan over medium heat.
  • Stir occasionally to avoid scorching.
  • Add the following ingredients and bring it to a boil: Lawry's Seasoned Salt, Salt and Cayenne Pepper.
  • In a separate mixing bowl add 1/4 cup of cornstarch and the remaining 1 cup of heavy whipping cream and mix thoroughly with a wire whisk.
  • As soon as your mixture begins to boil add the cornstarch/heavy cream mixture and use your whisk to whip until blended well.
  • Remove your saucepan from heat.
  • Add 1 cup of shredded cilantro and stir until blended.
  • Pour over your favorite chicken or seafood enchilada dish or whatever you would like.

This cilantro cream sauce can be used as a dip, or as a sauce for fish or chicken. My husband eats it on everything he can consume! Taste and add additional seasoning if necessary. tomatillo sauce is usually spicy, so be prepared!

1 (8 ounce) package cream cheese, softened
1 tablespoon sour cream
1 (7 ounce) can tomatillo salsa
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
½ teaspoon ground cumin
2 teaspoons garlic powder
1 bunch fresh cilantro, chopped
1 tablespoon fresh lime juice

Steps:

  • Combine cream cheese, sour cream, salsa, pepper, celery salt, cumin, garlic powder, cilantro and lime juice in a blender or food processor. Blend until smooth and creamy. Place in a serving bowl.

This sauce is AMAZING! Not only is great as a sauce over chicken or enchiladas, its great as a dip for chips too! Amazingly to me it tastes like guacamole even though there is no avocado. I put some serving suggestions at end of recipe that i think would be great too. You have to try it and know that served hot or cold it will be a great hit. Enjoy!

1/2 cup mayonnaise
1 cup sour cream
2 cups fresh cilantro leaves (1 big bunch -remove the leaves from stems)
1/2 teaspoon lime peel (zest grated from one small lime would do)
1/2 teaspoon garlic, minced (more if you like)
1/2 teaspoon cumin
salt & pepper

Steps:

  • Combine all ingredients in blender and blend until smooth.
  • Add more salt and pepper to season to your liking.
  • If you let sit in refrigerator it will firm up a bit.
  • If you will serve warm, stir in a spoon of fresh cream and just pop in microwave for a few seconds before serving.
  • SERVING SUGGESTIONS:.
  • -Spoon a bit under skin of chicken breast and add some cheese before baking. Then drizzle baked chicken with more of this sauce.
  • - Drizzle over any style enchiladas.
  • - Serve as dip next to salsa for chips.
  • - leftover sauce makes an amazing salad dressing; add some fresh cracked pepper to top of salad, tastes like a Mexican salad.
  • - Add to your 7 layered bean dip.
  • -Mix in some cheese, green onions and salsa for a zesty dip.
