NO BAKE CHERRY DELIGHT



No Bake Cherry Delight image

No bake summer dessert!

Number Of Ingredients 4

6 graham crackers
1 cup heavy cream plus 1 Tablespoon sugar (or 2 cups ready made whipped cream (Cool Whip))
2 cups mini marshmallows
3 cups pie cherry filling or 1 can pie cherry filling

Steps:

  • Place graham crackers into a zip top bag.
  • Crush graham crackers with a rolling pin or with your hands
  • In a separate bowl, place heavy cream and beat until soft peaks form. Mix in sugar.
  • If using ready made whipped cream, add whipped cream into a bowl
  • Mix in marshmallows
  • In a 8 inch square baking dish, sprinkle half the graham crackers
  • Put marshmallow mixture over graham crackers. Spread gently so graham crackers are covered.
  • Poor cherry pie filling over top of marshmallow mixture. Spread evenly
  • Sprinkle remaining graham crackers over top.
  • Cover and refrigerate until ready to serve.

This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

1 sheet refrigerated pie pastry
1 egg white
1 tablespoon water
2 teaspoons coarse sugar
1/2 cup sugar
1/4 cup cornstarch
1 cup cherry juice blend
2 cans (14-1/2 ounces each) pitted tart cherries, drained
1 cup reduced-fat vanilla ice cream

Steps:

  • Roll out pastry onto a lightly floured surface. Cut into 1/2-in.-wide strips; make a lattice crust. Beat egg white and water; brush over top. Sprinkle with coarse sugar. Using a floured 2-in. round cookie cutter, cut out eight circles. Place 2 in. apart on ungreased baking sheets. Bake at 450° for 10-12 minutes or until lightly browned. Remove to a wire rack., Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in cherry juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; add cherries., Spoon about 1/3 cup warm cherry mixture into each of eight dessert dishes. Top with 2 tablespoons ice cream and garnish with a cookie.
