NO BAKE CHERRY DELIGHT
No bake summer dessert!

Steps:
- Place graham crackers into a zip top bag.
- Crush graham crackers with a rolling pin or with your hands
- In a separate bowl, place heavy cream and beat until soft peaks form. Mix in sugar.
- If using ready made whipped cream, add whipped cream into a bowl
- Mix in marshmallows
- In a 8 inch square baking dish, sprinkle half the graham crackers
- Put marshmallow mixture over graham crackers. Spread gently so graham crackers are covered.
- Poor cherry pie filling over top of marshmallow mixture. Spread evenly
- Sprinkle remaining graham crackers over top.
- Cover and refrigerate until ready to serve.

Steps:
- Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
- Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
- Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
- Refrigerate for at least 2 hours before serving. I like to leave it overnight.
- Refrigerate leftovers.

- Roll out pastry onto a lightly floured surface. Cut into 1/2-in.-wide strips; make a lattice crust. Beat egg white and water; brush over top. Sprinkle with coarse sugar. Using a floured 2-in. round cookie cutter, cut out eight circles. Place 2 in. apart on ungreased baking sheets. Bake at 450° for 10-12 minutes or until lightly browned. Remove to a wire rack., Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in cherry juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; add cherries., Spoon about 1/3 cup warm cherry mixture into each of eight dessert dishes. Top with 2 tablespoons ice cream and garnish with a cookie.
