MAKAI PAKA (EAST AFRICA) RECIPE BY TASTY

Here's what you need: corn, unsalted butter, medium tomato, serrano chile, ground coriander, green chile, ground turmeric, coconut milk, lemon juice, fresh cilantro

Number Of Ingredients 10

3 ears corn, shucked
1 tablespoon unsalted butter
1 medium tomato, diced
1 serrano chile, minced
1 teaspoon ground coriander
1 teaspoon green chile
½ teaspoon ground turmeric
27 oz coconut milk
2 tablespoons lemon juice
1 bunch fresh cilantro, chopped

Steps:

  • Blanch the corn in a large pot of boiling water for 3 minutes. Remove the corn from the pot.
  • Let the corn cool slightly, then slice crosswise into 2-inch (5 cm) pieces, about 4 per cob.
  • In a medium pot, melt the butter over medium heat. Add the tomato and cook until softened. Add the serrano chili, ground coriander, green chile powder, and turmeric and stir well.
  • Add the coconut milk and bring to a simmer. Add the corn and lemon juice and stir well.
  • Transfer the corn and sauce to a serving bowl and garnish with cilantro.
  • Enjoy!

⅓ cup mayonnaise
⅓ cup sour cream
½ lime, juiced
1 teaspoon chipotle powder
¼ cup cotija cheese
fresh cilantro, to taste

Steps:

  • Blanch the corn in a large pot of boiling water for 3 minutes. Remove the corn from the pot.
  • Heat the canola oil in a medium pan over medium-high heat. Add the corn and cook, turning occasionally, until nicely browned on all sides. Transfer to a serving plate.
  • In a small bowl, combine the mayonnaise, sour cream, and lime juice. Brush all over the corn.
  • Sprinkle the corn with the chipotle powder, cotija cheese, and cilantro.

Steps:

  • Blanch the corn in a large pot of boiling water for 3 minutes. Remove the corn from the pot.
  • Heat the ghee in a medium pan over medium-high heat. Add the corn and cook, turning occasionally, until nicely browned on all sides. Transfer to a serving plate.
  • Squeeze the lime juice all over the corn.
  • In a small bowl, combine the chili powder, cumin, cayenne, garam masala, and salt. Sprinkle all over the corn.

4 green onions, chopped
5 cherry tomatoes, chopped
2 cups water
2 cups milk
4 eggs
sourdough bread, or other bread, for serving

Steps:

  • Finely chop the cilantro. Slice the green onions. Chop the cherry tomatoes.
  • Add the water and milk to a medium pot and bring to a boil over medium heat.
  • Once boiling, crack the eggs into the pot. Without stirring, add the green onions and tomatoes. Let eggs cook for about 5 minutes, or until the egg yolks are just barely firm.
  • Scoop an egg into each bowl and ladle in more broth. Garnish with cilantro and serve with bread for dipping.
  • Enjoy!
