Cheeseburger Mac & Cheese image

1 tbsp. olive oil
1 Medium Onion, Diced
2 cloves of garlic, minced
16 oz. ground beef
kosher salt
Freshly ground pepper
1 tbsp. tomato paste
1 tsp. Worcestershire sauce
4 c. beef broth
16 oz. Elbow Noodles
4 c. mixed cheese blend, shredded (Monterey Jack and Cheddar combo)

Steps:

  • Heat olive oil in a large skillet on medium-high heat. Add onion and garlic, stir until translucent, about 5 minutes.
  • Add ground beef to skillet and season generously with salt and pepper. Add tomato paste and Worcestershire sauce, mixing well into beef. Cook until beef is browned, 8 to 10 minutes.
  • Pour beef broth into skillet and bring to a simmer. Add elbow noodles and let simmer until the noodles are cooked, 15 to 20 minutes.
  • Before serving, stir in shredded cheese until melted.
  • Garnish with parsley.

1 medium onion, chopped (1/2 cup)
6 cups hot water
1 box Hamburger Helper™ cheeseburger macaroni
2 cups Frozen Broccoli Cuts
2 medium carrots, sliced (1 cup)
1 teaspoon dried thyme leaves
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chopped fresh parsley
Shredded Cheddar cheese, if desired

Steps:

  • In 4-quart Dutch oven, cook beef and onion over medium heat 5 to 7 mintues, stirring occasionally, until beef is thoroughly cooked; drain well.
  • Stir in hot water, contents of uncooked pasta and sauce mix pouches (from Hamburger Helper box), broccoli, carrots, thyme, salt and pepper. Heat to boiling, stirring constantly.
  • Reduce heat; cover and simmer 15 minutes, stirring occasionally, until pasta is tender. Stir in parsley. Garnish each serving with cheese.

½ pound lean ground beef, or more to taste
½ small onion, minced
1 teaspoon garlic powder
1 teaspoon onion powder
1 pinch salt and ground black pepper to taste
2 cups water
2 cups elbow macaroni
8 ounces reduced-fat processed cheese food (such as Velveeta®), cut into small pieces
2 tablespoons reduced-fat sour cream, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, garlic powder, onion powder, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Return skillet to burner over high heat. Add water; cover skillet and bring to a boil. Stir macaroni into the boiling water-ground beef mixture; cover and lower heat to medium. Cook, keeping covered, for 5 minutes. Stir, cover, and cook until macaroni is tender, about 5 more minutes.
  • Stir processed cheese food into ground beef-macaroni mixture until melted. Remove from heat; stir in sour cream.

1 lb macaroni
4 tablespoons unsalted butter
8 oz shredded sharp cheddar cheese
8 oz shredded parmesan cheese
8 oz american cheese, cubed
12 oz whole milk
1 tablespoon salt
1 tablespoon mustard powder
½ teaspoon cayenne pepper
1 teaspoon garlic powder
1 ½ cups all-purpose flour
4 eggs, beaten
1 ½ cups panko breadcrumbs
vegetable oil, for frying
1 ½ lb ground beef, formed into hamburger patties
salt, to taste
pepper, to taste
red onion, sliced, to serve
tomato, sliced, to serve

Steps:

  • Prepare macaroni according to package directions. Drain the macaroni in a colander and return to the pot.
  • Add butter, cheddar cheese, Parmesan cheese, American cheese, milk, salt, mustard powder, cayenne to the pot. Turn heat up to medium-low and stir until cheeses are melted and all ingredients are well combined.
  • Remove the pot from the heat and pour onto a parchment paper-lined sheet tray. Spread evenly with a spatula, cover with plastic wrap, and refrigerate for at least 30 minutes.
  • Once cooled, use a ring mold or rounded container roughly 4-inches (10 cm) in diameter to cut out 6-8 "buns."
  • Place flour, eggs, and bread crumbs in three separate bowls.
  • Dip each macaroni bun in flour, then egg, and finally bread crumbs, coating evenly.
  • Preheat vegetable oil to 350°F (175°C).
  • Place the macaroni buns gently in oil and fry 3-4 minutes, until golden brown. Remove with a slotted spoon and drain on paper towel-lined plate.
  • Season hamburger patties liberally with salt and pepper. In a cast-iron skillet over high heat, sear patties to desired doneness, flipping halfway through.
  • Place burger between two mac and cheese buns and top with sliced onions and tomatoes.

1 lb cavatappi pasta
1 lb ground sirloin
1 tablespoon grill seasoning
1/4 cup ketchup
1/4 cup yellow mustard
3 tablespoons extra virgin olive oil, divided
2 tablespoons butter
1 medium red onion, chopped
salt & fresh ground pepper
2 tablespoons flour
2 cups milk
1 1/4 cups yellow cheddar cheese, grated and divided
1 1/4 cups swiss cheese, grated and divided
3 small tomatoes, seeded and chopped (optional)
1 deli-style pickle, chopped (optional)

Steps:

  • Preheat oven to 400ºF.
  • Place a large pot of salted water over high heat and bring to a boil.
  • Add pasta to boiling water and cook just shy of al dente, according to package directions.
  • Drain the cooked pasta and reserve.
  • In a medium-size mixing bowl, combine the ground sirloin with the grill seasoning, ketchup and yellow mustard.
  • Grab about a tablespoon of meat in your hand and roll it into a small ball. Place the mini meatballs onto a baking sheet, drizzle with 2 tablespoons of olive oil and bake until cooked through, about 15 minutes.
  • Turn off the oven and turn on the broiler.
  • While the mini meatballs are in the oven, heat a large saucepot over medium-high heat with about 1 tablespoon olive oil, and the butter.
  • Cook the red onion with some salt and pepper until softened, about 5 minutes.
  • Sprinkle flour over top and cook for about 1 minute.
  • Whisk in the milk, season with salt and pepper, and cook until thickened, about 5 minutes.
  • Remove sauce from heat and whisk in 1 cup of each cheese.
  • Add the drained pasta to the cheese sauce along with the baked meatballs and toss to combine.
  • Pour everything out into a casserole dish and sprinkle with the remaining cheddar and Swiss cheeses.
  • If serving immediately, toss the mac under the broiler until the top is golden brown and bubbly.
  • Top with the chopped tomatoes and pickles, if desired, and serve.

1 teaspoon McCormick® Garlic Powder
1 teaspoon McCormick® Paprika
½ teaspoon onion powder
⅛ teaspoon cayenne pepper
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 large eggs, beaten
2 cups shredded cheddar cheese
½ cup mayonnaise
¼ cup ketchup
2 tablespoons white onion, minced
1 tablespoon sweet relish
2 teaspoons white vinegar, distilled
½ teaspoon kosher salt
1 ½ tablespoons unsalted butter
2 ½ tablespoons all purpose flour
1 ¼ cups whole milk
3 cups shredded cheddar cheese
¾ teaspoon kosher salt
4 ground beef patties
kosher salt, to taste
freshly ground black pepper, to taste
8 slices pickle
2 cups iceberg lettuce
8 slices thick cut bacon, cooked

Steps:

  • Make the mac 'n' cheese waffles: In a large bowl, combine the mac 'n' cheese, flour, garlic powder, paprika, onion powder, cayenne, salt, black pepper, eggs, and cheddar cheese. (If you are using cold mac 'n' cheese, microwave briefly to loosen up for easier mixing). Mix well to combine.
  • Heat the waffle iron to medium-high heat or 375°F (190°C).
  • Scoop ¾ cup of the mac 'n' cheese mixture into each of the waffle divots. Close the waffle iron and cook for 8-10 minutes, until the waffles are golden brown and crispy all over. Remove the waffles from the iron (cutting into individual waffles with kitchen shears for easier removal) and repeat with the remaining mac 'n' cheese mixture. You should have 8 waffles total.
  • Meanwhile, make the burger sauce: In a medium bowl, mix together the mayonnaise, ketchup, onion, sweet relish, white vinegar, and salt. Refrigerate until ready to use.
  • Make the cheese sauce: In a small saucepan, melt the butter over medium-low heat until bubbling. Whisk in the flour and cook for 1-2 minutes, until light golden brown, whisking continuously to prevent burning. Pour in the milk, whisking continuously to prevent clumping. Cook for 2-4 minutes, whisking occasionally to prevent burning, until slightly thickened and steaming. Remove the pot from the heat and whisk in the cheese and salt until melted and smooth.
  • Transfer the sauce to a 2-cup liquid measuring cup and use an immersion blender to blend until completely smooth. Set aside until ready to use.
  • Make the burgers: Heat a large cast-iron skillet over medium-high heat until smoking. Generously season the ground beef patties on both sides with salt and pepper. Cook the patties for 4-5 minutes on each side, depending on your desired doneness.
  • Assemble the burgers: Spoon 1-2 tablespoons of the burger sauce onto a mac 'n' cheese waffle. Top with 2-4 pickle slices, ½ cup shredded lettuce, a burger patty, ¼-⅓ cup cheese sauce, 2 slices of bacon, and another mac 'n' cheese waffle. Repeat to make the remaining burgers.
  • Serve immediately.
