Pear honey is an old recipe that's been passed down through families. We especially like it with hot biscuits and butter. It's also good on pound cake or even ice cream. Make sure the pears you use are very firm. -Charlotte McDaniel, Jacksonville, Alabama

Yield 6 half-pints.

Number Of Ingredients 3

8 medium pears, peeled and quartered
4 cups sugar
1 can (20 ounces) crushed pineapple, drained

Steps:

  • Place pears in a food processor; process until finely chopped. In a Dutch oven, combine pears and sugar; bring to a boil. Reduce heat; simmer, uncovered, 45 minutes, stirring occasionally. Stir in pineapple; cook and stir 5 minutes longer., Remove from heat. Ladle hot liquid into 6 hot half-pint jars; wipe rims. Seal and allow to cool. Refrigerate up to 2 weeks.

My Granny made pear honey when pears came into season and canned it. Oh yum. I think you'll love it, too, over hot buttered biscuits.

Number Of Ingredients 4

9 c finely chopped or grated pears (ripe ones)
8 c sugar
1 can(s) (20 oz) crushed pineapple, undrained
2 Tbsp lemon juice

Steps:

  • 1. Combine all together in a stainless steel or non-reactive stockpot, bring to a boil and lower heat to medium-low or low (to prevent burning). Cook for two-three hours or until mixture is thickened and of a golden color - similar to honey.
  • 2. For Canning: Ladle mixture into hot, sterile half-pint or pint jars, leaving 1/4" headspace. Cover with prepared lids/rings. Process in boiling water bath according to your county extension office guidelines (generally 5 minutes unless you live in high altitudes, etc.). Set jars aside overnight and check to make sure lids are sealed. If you have one that doesn't seal, refrigerate promptly. Keep sealed jars in a cool, dry place for 6-8 months.
  • 3. Enjoy!
  • 4. Optional: Add in 2 tsp freshly grated ginger for Gingered Pear Honey - it adds a unique flavor to an old-fashioned recipe.

This is an old family recipe from my great-grandmother Sullivan. She had 15 children and knew how to cook! This tastes like honey and can be used like honey in recipes and on biscuits. I made it a couple of days ago for the first time and the family loves it!

10 c pears (peeled,cored and diced)
1 1/2 c unsweetened pineapple juice
10 c sugar

Steps:

  • 1. Put diced pears into a large stainless steel pan, add pineapple juice and stir to coat pears to prevent them from browning. Add sugar, bring to a boil over medium-high heat. Stir constantly to prevent scorching. When the pears are at a full boil, reduce heat to medium, cook until the mixture is the color and texture of honey. It will get thicker the longer you cook it, (it takes 2-3 hours). Ladle into hot sterile jars, to within 1/4 inch of the jar rim. De-bubble as needed. Wipe rims with a clean damp cloth, and seal jars with lids and rings to fingertip tight. Process in a boiling water canner with lid on for 20 minutes, remove lid and let it sit in canner for 5 minutes. Remove from canner to towel lined counter to set and cool for 24 hours before storing. Yields 5-6 pints. Made this two days ago... tastes like honey!

This is so simple and so good. Update: I have changed the sugar ingredient amount from 5 1/2 cups to 2 1/2 cups-5 cups because it is so sweet, you don't need all the amount. Enjoy!

3 lbs fresh pears, peeled, cored, and finely chopped
2 1/2-5 cups sugar
1 (8 ounce) can crushed pineapple in juice
1 tablespoon lemon juice

Steps:

  • In a 6 quart stainless steel kettle combine all ingredients.
  • Bring to boiling, stirring occasionally.
  • Simmer 40 minutes.
  • Spoon into sterile jars, leaving a 1/2 inch head space.
  • Wipe jar rims, adjust lids.
  • Process in boiling water for 10 minutes.
  • Makes 7 half pints.

This summer was the first time I'd heard of Pear Honey but I began making some. My 91 year old neighbor said she used to make it; she and her son love it. Someone gave me Pears so I have made several pints, it does have a good taste. Plus, I loved making it for them.

8 cup(s) very firm pears, peeled and chopped with food processor.
5 cup(s) sugar
2 cup(s) crushed pineapple, drained
1 teaspoon(s) ground ginger

Steps:

  • Mix all ingredients into a 5 quart stainless steel pot on medium degree stove burner. Let slowly come to slow boil. Continue to low boil until finely ground pears are tender, about 30 minutes or so.
  • Turn oven on to 250 degrees F to sterilize well washed, clean pint jars. Place 7 pint jars in a 13x9x2 metal oven pan. And 7 canning flats in simmering water on eye. Have 7 canning rings ready to seal jars, Can funnel to fill jars and an eating plate to sit glass jar on while filling.
  • While keeping pear honey at a slow boil, remove 1 sterilized pint from oven at a time. Sit pint on plate with canning funnel in place. Use a long ladle and ladle Pear honey into pint jar, secure flat and lid by firmly tightening lid on jar.. Sit on folded kitchen towel to cool and seal. Repeat process until all pear honey is canned. The jars will seal when you can hear a snap noise. Leave on towel until completely cold. Test lid to see if sealed by lightly pressing on center of lid, it should be secure.

1/4 cup fruit fresh
1 teaspoon salt

Steps:

  • Peel pears and run through a food chopper using the medium blade.
  • Add to sugar and salt.
  • Add crushed pineapple and juice and bring to a boil for 5 minutes.
  • Add the fruit fresh and cook on medium.
  • Boil for 20 minutes.
  • Makes 8 pints.

4 small pears
4 cups water
2 cups sugar
1 cup honey
1 small lemon, halved
3 cinnamon sticks (3 inches)
6 to 8 whole cloves
1 vanilla bean
1 sheet frozen puff pastry, thawed
1 large egg, lightly beaten

Steps:

  • Core pears from bottom, leaving stems intact. Peel pears; cut 1/4 in. from the bottom of each to level if necessary., In a large saucepan, combine the water, sugar, honey, lemon halves, cinnamon and cloves. Split vanilla bean and scrape seeds; add bean and seeds to sugar mixture. Bring to a boil. Reduce heat; place pears on their sides in saucepan and poach, uncovered, until almost tender, basting occasionally with poaching liquid, 16-20 minutes., Remove pears with a slotted spoon; cool slightly. Strain and reserve 1-1/2 cups poaching liquid; set aside., Unfold puff pastry on a lightly floured surface. Cut into 1/2-in.-wide strips. Brush lightly with beaten egg. Starting at the bottom of a pear, wrap a pastry strip around pear, adding additional strips until pear is completely wrapped in pastry. Repeat with remaining pears and puff pastry., Transfer to a parchment-lined 15x10x1-in. baking pan. Bake on a lower oven rack at 400° until golden brown, 25-30 minutes., Meanwhile, bring reserved poaching liquid to a boil; cook until liquid is thick and syrupy, about 10 minutes. Place pears on dessert plates and drizzle with syrup. Serve warm.

6 small, slightly under-ripe pears, such as Bartlett, unpeeled, halved and cored
2 star anise pods
1 (2-inch) piece cinnamon stick
1/2 teaspoon fennel seeds
2 whole cloves
1/2 cup light brown sugar
1/2 cup golden raisins
1/4 cup dark rum
3 tablespoons lemon juice
3 tablespoons unsalted butter, cut in small cubes
2 tablespoons mild honey
1 tablespoon rosemary leaves, from a small sprig
1/2 cup roughly chopped walnuts

Steps:

  • Heat oven to 400 degrees. Choose a baking dish or roasting pan large enough to hold pears in one layer, or use 2 pans. Scatter star anise, cinnamon stick, fennel seeds and cloves on bottom of dish.
  • Put pears in a large mixing bowl. Add brown sugar, raisins, rum and lemon juice. Coat pears evenly with mixture. Transfer to baking dish, cut-side down, in one layer. Dot with butter.
  • Bake, uncovered, until pears are soft and well caramelized, about 45 minutes. Remove pears from oven, and let them sit at room temperature. Shortly before serving, drizzle the pears with honey, and sprinkle them with rosemary leaves and chopped walnuts. Bake for 10 minutes. Serve warm with plenty of sauce from the baking pan.
