A double dose of chocolate in these whole wheat brownies.

4 (1 ounce) squares semisweet chocolate
½ cup butter
1 cup white sugar
2 each eggs
1 teaspoon vanilla extract
¼ teaspoon salt
1 cup whole wheat flour
1 cup dark chocolate chips
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  • Place chocolate and butter in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from the heat and set aside to cool for 5 minutes.
  • Combine sugar, eggs, vanilla extract, and salt in a large bowl; beat with an electric mixer until smooth and creamy. Stir in the cooled melted chocolate until incorporated. Fold in flour and then stir in chocolate chips and walnuts. Pour batter into the prepared baking pan and spread evenly.
  • Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, 25 to 28 minutes. Let cool completely before cutting into bars.

½ cup all-purpose flour
6 tablespoons unsweetened cocoa powder
1 cup white sugar
⅛ teaspoon salt
2 tablespoons vegetable oil
½ teaspoon vanilla extract
1 (4 ounce) jar pureed prunes baby food
2 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.
  • In a medium bowl, stir together flour, cocoa, sugar, and salt. Pour in oil, vanilla, prunes, and eggs. Mix until everything is well blended. Spread the batter evenly into the prepared pan.
  • Bake for 30 minutes in the preheated oven, or until top is shiny and a toothpick inserted into the center comes out clean.

1/2 cup unsalted butter
2 cups packed brown sugar
3/4 cup Dutch-processed cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon espresso powder (optional)
1 tablespoon vanilla extract
1/2 cup unsweetened applesauce
4 large eggs
1 1/2 cups traditional whole wheat flour
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Lightly grease 9x13 inch pan.
  • Melt butter in microwave-safe bowl or in saucepan over low heat. Add sugar and stir to combine.
  • Return mixture to heat briefly until it's hot and starting to bubble (this allows the sugar to dissolve, which will yield a shiny top crust).
  • Stir in cocoa, baking powder, salt, espresso powder, and vanilla. Cool until you can test with finger and mixture feels like comfortably hot bath water.
  • Mix in applesauce.
  • Whisk in eggs, stir until smooth, then add the flour and chips, again stirring until smooth. Spoon batter into prepared pan.
  • Bake until sharp knife or cake tester poked in middle reveals wet crumbs but not raw batter, 30 minutes. The brownies should feel set on edges and in the center. Remove from oven and cool on rack, cover when cool. Let sit overnight before serving to allow the bran to soften.

1 1/3 cups whole wheat pastry flour
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 cup unsweetened applesauce (I like to use Santa Cruz Apple Cherry Sauce)
1 teaspoon canola oil
3/4 cup sugar
12 ounces silken lite firm tofu
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/3 cup cocoa powder
2 tablespoons finely chopped nuts (optional)

Steps:

  • Preheat oven.
  • Combine flour, baking soda, and cinnamon in a medium bowl.
  • Separately, mix well applesauce, oil, sugar, tofu, extracts, and cocoa powder in a blender or food processor.
  • Pour mixture into the combined dry ingredients and mix well with a spatula.
  • Lightly spray a 7x5 or 8x8 cake pan with a Canola oil cooking spray.
  • Pour mixture into greased pan and cover with chopped nuts if desired.
  • Bake for 25 to 30 minutes at 350 degrees.

Using dates in place of sugar makes for a very fudgey and chocolaty-tasting brownie with no added sugar. These brownies are slightly cakey; if you prefer a denser brownie, use only 1 egg instead of 2.

1 cup pitted Deglet Noor dates
1 cup hot water
½ cup unsalted butter, softened
2 large eggs
2 teaspoons vanilla extract
⅓ cup whole wheat flour
⅓ cup unsweetened cocoa powder

¼ teaspoon salt
½ cup bittersweet chocolate chips

Steps:

  • Place dates in a small bowl and pour in hot water. Soak for 10 to 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Line an 8x8-inch baking dish with parchment paper, leaving enough paper to hang over the sides of the dish.
  • Drain dates and transfer to a food processor. Pulse until dates are completely smooth, 1 to 2 minutes. If date paste is too thick, add hot water 1 tablespoon at a time until completely pureed.
  • Add softened butter to the food processor and pulse to combine, about 30 seconds. Add eggs and vanilla extract and process until light and fluffy, about 1 minute. Add whole wheat flour, cocoa powder, baking soda, and salt. Pulse until mixture is just combined, about 30 seconds. Gently stir in chocolate chips by hand. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until edges just begin to set, 20 to 25 minutes. Cool in the pan for 10 minutes, then remove brownies from pan by gently lifting up edges of parchment paper. Allow to cool completely on a cooling rack. Cut into 16 pieces.

1 cup peanut butter

1 teaspoon baking powder
¼ teaspoon baking soda

Steps:

  • In a large mixing bowl, beat together margarine and sugars; add eggs one at a time, and beat until mixture is light and fluffy. Stir in peanut butter, vanilla, and water.
