This no-fail recipe for meatloaf doesn't take long to make and is healthier with lean ground beef, low-fat milk, whole wheat bread crumbs, some fresh parsley, and carrot.

1 ½ pounds lean ground beef
1 egg
1 onion, chopped
1 cup low-fat (1%) milk
1 cup whole wheat bread crumbs
½ cup chopped fresh parsley
1 large carrot, grated
salt and ground black pepper to taste
1 tablespoon brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine beef, egg, onion, milk, bread crumbs, parsley, and carrot in a large bowl. Season with salt and black pepper. Place beef mixture in loaf pan.
  • Stir together brown sugar, mustard, and ketchup in a small bowl. Pour over meatloaf.
  • Bake in preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 lb extra lean ground beef
1 medium carrot, shredded
1/2 onion, finely chopped
1/2 green pepper, finely chopped
1 tablespoon chili powder
2 tablespoons Worcestershire sauce
1 slice whole wheat bread (to use as breadcrumbs)
2 egg whites
1/3 cup tomato ketchup

Steps:

  • Preheat oven to 400 degrees.
  • Lightly spray a nonstick or silicone muffin pan with nonstick cooking spray.
  • Crumble ground beef into a large bowl.
  • Add shredded carrots, chopped onion, and green pepper.
  • Add chili powder, Worcestershire sauce and the breadcrumbs. Stir with a fork. Add egg whites and stir again with a fork until well blended. You can knead the mixture with your hands but sometimes this makes the meat overly tough.
  • Spoon mixture into prepared muffin pan, and top each cup with ketchup. Bake for 25 minutes, making sure that the internal temperature reaches 165 degrees.
  • Serves 6.

My family loves this Italian version of a meat loaf that I make with ground turkey. Calories, fat and cholesterol wre reduced by: Using egg whites instead of a whole egg Replacing ground beef with ground turkey breast Using shredded apples to add moisture that is lost by eliminating the beef fat Using a reduced-fat spaghetti sauce. 445 calories per serving before, 227 after.

2 egg whites, lightly beaten
2 garlic cloves, minced
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried rosemary
1/4 teaspoon crushed red pepper flakes
1 medium apple, peeled, cored and finely shredded
1/2 cup chopped onion
1/2 cup fine seasoned dry bread crumb
1 lb ground turkey
2/3 cup reduced-fat spaghetti sauce
2 tablespoons grated parmesan cheese

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, stir together the egg whites, garlic, basil, salt, rosemary and red pepper.
  • Then stir in the apples, onions and bread crumbs.
  • Add the turkey and mix until well combined.
  • Spray a 8x4x2" loaf pan with non-stick spray.
  • Pat the turkey mixture into the pan.
  • Bake for 15 minutes.
  • Spread the spaghetti sauce over the top of the turkey.
  • Bake about 25 minutes more, or until the turkey is no longer pink.
  • Let stand for 5 minutes.
  • Transfer the loaf to a serving plate.
  • Sprinkle the parmean cheese over the top.
  • Slice and serve.

1-1/2 cups spaghetti sauce, divided
1 large egg, lightly beaten
2 tablespoons dried minced onion
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker. Coat strips with cooking spray. , In a large bowl, combine the bread crumbs, 1 cup spaghetti sauce, egg, onion, and seasonings. Crumble beef over mixture and mix well. 1 lb ground turkey
1 cup Egg Beaters egg substitute (fat free egg substitute)
1/4 cup ketchup
1/4 cup Worcestershire sauce
1/2 teaspoon onion salt
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional)
1 (2 ounce) package Lipton Onion Soup Mix
20 fat-free saltine crackers, crushed
1/2 cup chopped sweet gherkin (optional)
1/2 cup chopped green olives (optional)
extra ketchup, to top, if desired

Steps:

  • Preheat oven to 400 degrees.
  • Mix all ingredients together well (except for green olives and sweet pickles).
  • After you mix, if desired, add either sweet pickles (which is my favorite, or green olives).
  • Mold into oval loaf, and place on baking sheet.
  • Bake for 45 minutes.
  • Add extra ketchup if desired and bake another 1/2 hour.
