2 lbs russet potatoes (cut into french fry shapes. about 5 medium potatoes)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 450 degrees. While oven is heating, cut potatoes into fry shapes, approximately 1/4 inch thick.
  • Add cut potatoes, olive oil, salt + pepper to a large mixing bowl. Toss with a spatula to cover all of the potatoes evenly with oil + seasoning
  • Place potatoes on a parchment lined baking sheet
  • Bake at 450 for 25 minutes, flip + bake for an additional 15 minutes until all fries are golden brown.
  • Depending on oven, you can broil the fries for an extra minute at the end to make them extra crispy

cooking spray
salt and pepper

Steps:

  • Preheat oven to 350'F.
  • Wash and cut potatoes into wedges.
  • Spray baking sheet with cooking spay.
  • Arrange potatoes on sheet and spray top of potatoes with cooking spray and put alittle salt and pepper on top.

This is a delicious lower fat, lower calorie baked french fry--evidently soaking the potatoes in the salt-sugar solution draws out some of their water. This way they brown and crisp instead of steam. So yummy! (to me, these taste like the fry-daddy type french fries my mom made me when I was a kid!) My non-dieter husband also deemed these delicious. 159 calories/5 g. fat, 0 mg. cholesterol/28 g. carbs/3 g fiber Weight Watchers Points per serving: 3 This came from a WW book, but I'm not sure which one.

1 1/4 lbs baking potatoes, peeled and cut into 1/2-inch strips
1/2 teaspoon sugar
4 teaspoons oil
1 teaspoon paprika
3/4 teaspoon salt

Steps:

  • Preheat oven to 450 degrees. Spray a non-stick baking sheet w/ non-stick cooking spray.
  • In a lg. bowl, combine potatoes, 1/4 teaspoons of the salt and all of sugar w/ cold water to cover. Soak 15 min, drain and blot dry.
  • In another lg. bowl, toss potatoes w/ oil and paprika. Place in a single layer on the baking sheet.
  • Bake, turning potatoes over as they brown, until cooked through and crisp. (Could take anywhere from 25-45 min., depending on how you cut your potatoes and your oven. My fries only took about 25 minute I checked on my potatoes and turned them about every 5 minute or so. You will see them browning and hear them sizzling.) Sprinkle w/ the remaining 1/2 teaspoons of salt.

3 -4 russet baking potatoes
cooking spray
1 (1 ounce) ranch dressing mix

Steps:

  • Scrub the potatoes well and cut into thin strips. (I use my french fry cutter).
  • Place in a large zip-loc bag and spray with cooking spray while turning to coat.
  • Sprinkle in 1/2 the ranch mix, toss to coat; repeat.
  • Place on a large cookie sheet coated with cooking spray or non-stick foil. Bake at 450° for 25-30 minutes. Turning once. (Ovens vary so check at 20 minutes!).

1 3/4 teaspoons salt, divided
1 -2 russet potato
1 teaspoon extra virgin olive oil

Steps:

  • Bring water to boil in a saucepan over high heat. Add one teaspoon of salt.
  • Preheat oven to 400°F.
  • Peel potatoes and slice into 1/4 inch fries.
  • Weigh the potatoes and measure out 9 ounces.
  • Transfer potatoes to boiling water and cook exactly 2 1/2 minutes.
  • Drain in colander and let cool (about 5 minutes).
  • Transfer cooled potatoes to a mixing bowl and add oil and 1/2 teaspoon of salt.
  • Mix gently to coat.
  • Spread in a single layer on a non stick baking sheet.
  • Bake for 20-25 minutes until crisp and golden.
  • Turn every five minutes during the last half of cooking.
  • Add the remaining salt if desired. (I found them plenty salty without).
  • Note: Mine took 30 minutes to achieve the right level of crispiness--so check for crispness before removing from the oven.
  • Chef Alexander states that this recipe is equal to a medium order of fries and has 5 grams of fat (as opposed to 17 grams of fat in the original version).

4 medium potatoes
2 egg whites
dill or onion powder, etc

Steps:

  • Preheat oven to 375-400 (degrees fahrenheit).
  • Depending on how you like your french fries, either wash (for skin on fries) or peel (for skinless fries) the potatoes.
  • Cut the potatoes into either strips (for basic fries) or wedges (for texas-style fries).
  • Place the potato slices/wedges in a bowl or plastic bag and add egg whites. Toss to coat.
  • Add your seasonings of choice & toss to coat again.
  • Spread the fries evenly in a single layer on a large baking sheet.
  • Bake the fries for 15-20 minutes, flipping after 10.
  • Remove from oven and enjoy!
  • *Note: You can also line the baking sheet with tin foil and/or spray with a non-stick cooking spray to further prevent sticking.*.

You should really experiment with the seasonings... it's a great way of changing up the flavours. Try and use Hebamare in most recipes rather than just plain salt, and in this recipe I always try and use Hebamare Spicy. Try it with extra garlic or onion powder sometime as well. This is an adaptation of an adaptation, but just fantastic all the same! Original recipe was in the "Kitchen With Rosie" book, or so I am told.

2 large russet potatoes
1 egg white
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon curry powder (or other hot seasoning)
1 teaspoon fresh ground pepper
1/2 cup flour

Steps:

  • Wash the potatoes, scrubbing well to remove all of the dirt; don't bother skinning them.
  • Cut the potatoes into wedges and let soak in water for at least 15 minutes, preferably longer. Change the water once if desired, but note that while changing the water gets rid of more starch, it can impact flavour as well.
  • Combine egg white and seasonings (excluding flour) in a large bowl.
  • Drain the potatoes, pat dry and put them in the bowl with the egg mixture.
  • Coat all fries with the egg white and seasoning mix, ensuring a good coverage.
  • Coat the fries with a light coating of flour, rotating and mixing as needed to try and make it an even coat.
  • Prep a baking sheet with a light coating of vegetable oil, and spread the fries out as evenly as possible.
  • Coat the top of the fries with vegetable spray and bake for 35 to 45 minutes or until golden brown.

1 small baking potato
cooking spray
1 -2 teaspoon mixed Italian herbs
salt

Steps:

  • Preheat oven to 450 degrees.
  • Cover an 8"x8" pan with tin foil and spray with cooking oil and sprinkle on salt.
  • Cut potato to desired wedge sizes.
  • Place potato pieces into quart size bag and spray in some cooking oil and add the herbs.
  • Shake until the pieces are coated evenly.
  • Pour into the 8"x8" pan and add some more salt on top (I like mine really saltly).
  • Place in oven and bake for 15-20 minutes for softer fries and 25-30 minutes for crispier fries.
  • Enjoy with sauce of your choice!

  • Place a rack in the lower third of your oven and preheat to 450 degrees F. Drizzle a large rimmed baking sheet with 1 1/2 tablespoons olive oil, brushing it as needed so that it nicely coats the pan.
  • Scrub the potatoes and peel if desired (I leave the peels on). Slice into 1/4-inch-wide sticks. Place the potatoes in a large bowl, then pour very hot tap water over the top so that it covers the potatoes by at least 1 inch. Let sit 10 minutes.
  • Drain the potatoes, then transfer them to a clean towel and dry as completely as you can, changing the towel as needed. Rinse and wipe out the bowl you soaked the potatoes in, then return the potatoes to the bowl. Drizzle with the remaining 1 1/2 tablespoons olive oil and sprinkle with salt, garlic powder, dill weed, onion powder, and pepper. Toss to coat, making sure the spices and oil are well distributed. Spread the potatoes into a single layer on the prepared baking sheet.
  • Roast in the lower third of the oven for 15 to 20 minutes, until turning golden underneath. Remove the baking sheet from the oven and, with a large, firm spatula, carefully loosen the fries from the bottom of the pan. Flip them in large sections as best as you can so that the potatoes rotate and brown evenly on all sides (no need to painstakingly flip every single one). With your fingers (be careful—the pan is hot!) return the potatoes to a single layer. Place the pan back in the oven and continue baking until the fries are as golden and crisp as you like, about 5 to 10 additional minutes (30 minutes total was ideal timing for this crispy-fry lover). While the fries are hot, sprinkle with any desired toppings and a bit more salt to taste. DEVOUR.
