You won't believe that you can enjoy this Easy Cheesy Pasta when counting calories or following a diet plan like Weight Watchers!

300 grams Dried Pasta
75 g Primula Light Spread
2 Brown Onions (chopped finely)
20 g Lighter Cheddar Cheese
Basil (chopped - for garnish)
Cherry Tomatoes (chopped - for garnish)
1/2 tsp Coarse sea salt
Low Calorie Cooking Spray

Steps:

  • Preheat oven to 200°C. Make the pasta up as per instructions on the pack, then drain and place in a bowl
  • Mist a frying pan with low calorie cooking spray and cook the onion until brown
  • Add the onion to the cooked pasta along with the Primula and stir well
  • Transfer to an oven proof dish, sprinkle the cheese on top and bake for about 15-20 minutes until golden brown
  • Cook the tomatoes, basil and salt until the tomatoes start to ooze
  • Plate up the pasta and serve the tomatoes on the side!

I adapted this from a similar recipe on recipezaar to suit my low fat diet needs. This is a GREAT base recipe or even great on it's own! You can put virtually anything in this and it's fun to play around with the cheese too...sometimes i sue a parmesan and fontina blend to give it a little bit of a different flavor. I prefer to use Barilla Plus pasta for this. I love the lightness of this cheese sauce, it's a great alternative to Alfredo!

Number Of Ingredients 10

1 (8 ounce) box whole wheat penne
3/4 cup vegetable broth (chicken may also be used)
3/4 cup fat-free evaporated milk
1/3 cup grated parmesan cheese
4 garlic cloves
1 teaspoon olive oil
1/2 tablespoon butter
3 teaspoons flour
sea salt
pepper

Steps:

  • Cook box of penne per package directions and keep warm.
  • Mince garlic and sauté in butter/olive oil blend until garlic is slightly golden.
  • Add broth and milk.
  • Add 3 tsp flour, salt/pepper to taste.
  • Simmer and stir constantly until sauce thickens.
  • Pour over warm pasta, coat and enjoy!
  • **You can put anything in this, chicken, broccoli, any vegetables -- play with it! Have fun with it!
