CARAMELIZED ONION DIP
You will never use onion soup mix again to make dip.

Steps:
- Heat oil in a skillet over low heat; stir in onion. Cook and stir until onion is soft but not browned, 20 to 30 minutes. Increase heat to high, add butter, and sprinkle sugar over onions. Cook and stir frequently until onion is very tender and dark brown, 8 to 10 minutes more. Remove from heat and cool to room temperature.
- Combine sour cream, yogurt, and mayonnaise together in a bowl; season with salt and black pepper. Mince cooled onions on a cutting board; stir onions into sour cream mixture. Store in refrigerator to allow flavors to blend, at least 1 hour.

CARAMELIZED ONION DIP (LOW FAT)
This is a wonderful dip from one of my favorite author/teacher, Rose Reisman. You can use vidalia, maui, walla walla, Bermuda or Spanish onion. The sweeter the onion, the tastier the dip will be!

Steps:
- In a large nonstick skillet sprayed with vegetable spray, heat the oil and add the onion.
- Sauté for 5 minutes, stirring frequently.
- Simmer on low heat for another 10 minutes or until the onion is soft and browned, stirring occasionally.
- Add the sour cream, mayonnaise, cream cheese, salt and pepper and mix until well combined and the cheese is melted.
- Garnish with parsley and serve with whole wheat crackers, baked tortilla chips or pita wedges.

LOW-FAT CARAMELIZED ONION DIP
Another wonderful recipezaar.com contributor recipe I've modified for dietary reasons. See Caramelized Onion Dip/Spread from kittencal for the original. This dip is so good with veggies, crackers, or on a burger. We couldn't get enough of the sweet caramelized onions and kick of cayenne flavors, and we didn't even miss the fat.

Steps:
- Heat the butter and oil in the fry pan over medium heat.
- Add in the onions, cayenne, salt and pepper; saute until softened.
- Add in garlic and cook for 2-3 minutes; be careful not to burn the garlic.
- Reduce heat to medium-low and cook stirring occasionally for approximately 20 minutes more until onions are brown and caramelized;
- Drain the excess fat from the onions and set aside to cool.
- In a bowl, beat the cream cheese, sour cream, mayonnaise and Worcestershire until smooth.
- Add in the onion mixture; mix well to combine.
- Cover and place in fridge for at least 2 or more hours before serving.

- In a large nonstick skillet coated with cooking spray, cook onion in oil over medium heat for 8 minutes, stirring frequently. Add garlic; cook 3 minutes longer. , Stir in broth and wine or additional broth. Reduce heat to medium-low; cook for 25-30 minutes or until onions are golden brown and liquid is evaporated, stirring occasionally., Transfer to a bowl. Stir in the sour cream, spinach and salt. Serve with tortilla chips. Refrigerate leftovers.
