1 tbsp cream cheese
1 tsp tomato paste
1 tsp chili flakes
1 tsp cumin
1 cup chicken, shredded
2 garlic cloves, minced
½ cup mozzarella, shredded
½ zucchini, grilled
2 tortillas
½ avocado
2 tbsp olives, pitted and chopped
2 tsp jalapeno slices, pickled
1/2 cup spinach
2 tbsp fresh chopped basil*

Steps:

  • In a small bowl mix the chicken with cream cheese, tomato paste, chili flakes, cumin, garlic, basil (or cilantro) and mozzarella.
  • Put ½ of the mixture in the middle of a flour tortilla.
  • Add jalapeno, spinach, zucchini, and olives.
  • Wrap like a burrito and toast on both sides in a pan with a little bit of olive oil at medium for 2-3 minutes or until golden brown. Slice in the middle and enjoy.

Low Fat Breakfast Wraps image

A great filling way to start your day! Feel free to use real eggs and cheese if you like. These would make a great lunch also.

4 (6 inch) low-fat flour tortillas
1 cup Egg Beaters cheese and chive egg substitute
3 tablespoons salsa
4 slices turkey bacon
4 teaspoons fat free cream cheese

Steps:

  • Place bacon on paper towel on top of paper plate. Cover with another papertowel and cook on high 2 minutes.
  • Flip bacon over and cook 30 sec to 1 min more or till crispy.
  • Scramble egg substitute in a non-stick pan coated with cooking spray.
  • Once egg substitute is fluffy add in salsa and warm through.
  • Spread each tortilla with 1 t. cream cheese, fill with 1/4 of egg mixture and one slice bacon.
  • Wrap up and serve.
