OATMEAL BANNOCK (LOW FAT)



Oatmeal Bannock (Low Fat) image

Bannock is a bread used primarily by the North American First Nations People. I got this recipe during a 3 day field trip with my daughter's grade 7 class (many, many moons ago!!!). Not knowing what bannock was, we were making up this awful glue mess and cooking it over the fire, like the natives used to do. It wasn't until way into the day that I realized it was like a baking soda biscuit that we managed to get it right, (plus, because of rain, we got to go indoors and use an oven) My bad!!! This recipe is lower in fat and calories because it is not fried up like the traditional way. I have been using this recipe for many years since...and doing it the proper way!!!

1 cup whole wheat flour
1/2 cup rolled oats
1 tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1/3 cup butter or 1/3 cup margarine
1/3 cup low-fat milk

Steps:

  • Combine flour, oats, baking powder, sugar and salt. With pastry knife cut in cold butter until crumbs are size of peas.
  • Pour in milk and mix quickly just until dry ingredients are moistened.
  • Turn dough onto lightly floured board; knead 3 - 5 times. Pat out dough to about 3/4" thickness. Cut into rounds with a 2" cutter.
  • Bake on parchment or ungreased sheet at 425 for 12 - 15 minutes or until lightly browned.

1 cup teriyaki marinade
4 chicken breast fillets
8 cups chopped romaine lettuce
8 cups chopped iceberg lettuce
3 cups shredded red cabbage
3 cups shredded green cabbage
2 cups shredded carrots
1 cup chopped green onion
1 1/3 cups crisp chow mein noodles
2 cups water
1/2 cup sugar
3 tablespoons dry pectin
1 tablespoon white vinegar
1/2 teaspoon soy sauce
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon paprika

Steps:

  • Combine teriyaki marinade and chicken breasts in a medium bowl or plastic bag. Marinate chicken for 3-4 hours.
  • Prepare dressing by combining all ingredients in a small saucepan over medium heat.
  • Bring mixture to a boil while stirring often with a whisk.
  • Remove pan from heat to cool. When it has cooled, pour into a covered container and chill.
  • When chicken breasts have marinated, preheat grill or skillet to high heat. Cook for 3-4 minutes per side or until done.
  • Combine lettuces,cabbages , and 1 cup carrots; toss with dressing in a large bowl.
  • Divide salad among four plates. Sprinkle green onions and chow mein noodles over each salad.
  • When breasts are done, slice each one widthwise into one inch strips, then cut again into small pieces.
  • Top salad with chicken and add rest of carrots to the center of each salad.

I created this recipe after I started a new high protien diet. I cut out many of the fats and substituted a lot, it took a few times to get it right, but once I did it was delicious and guilt free!

Number Of Ingredients 8

4 halibut fillets (about the size of 2 decks of cards)
1/4 cup low-fat mayonnaise
1/2 lemon, juice and zest of
1/4 cup cottage cheese
1/4 cup grated low-fat monterey jack cheese, set aside half of it (or any cheese you like)
2 garlic cloves, minced
salt and pepper
1 tablespoon cayenne pepper

Steps:

  • Wash and dry fillets.
  • Place in a cassorle dish and sprinkle with salt and pepper.
  • Mix all ingredients left in a bowl. Consistency should be "chunky".
  • Spread on halibut, top with rest of cheese set aside and bake at 400 degrees or until white and flaky when pierced with a fork.
  • Top should be bubbly and browned.
  • Enjoy!
