My family - all of whom are self-proclaimed chocoholics - can't get enough of these rich cookies. My sister-in-law shared the recipe and believes their success lies in beating the butter and sugar very well.

Number Of Ingredients 8

2 cups butter, softened
2 cups sugar
2 teaspoon almond extract
3-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup sliced almonds

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in extract. Combine flour, baking soda, baking powder and salt; gradually add to creamed mixture. Stir in almonds. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

6 tablespoons extra-firm silken tofu
4 ounces applesauce
4 ounces canola oil
1 teaspoon almond extract
1 cup sugar
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons cinnamon sugar (for garnish) (optional)

Steps:

  • Preheat oven to 350°F
  • Place tofu, applesauce, oil, almond extract and sugar in mixing bowl.
  • Whisk together until it's smooth.
  • Sift in flour, salt and baking powder and stir until just blended. Do NOT overwork the dough, because it will make it tough.
  • Drop by rounded spoonfuls onto cookie sheet and bake 8-10 minutes.

A low-fat way to serve up an appetizer for your family and friends that doesn't taste low-fat at all.

18 large fresh strawberries
1 cup cold nonfat milk
1 ounce sugar-free instant vanilla pudding mix
2 cups reduced-calorie whipped topping
1/4 teaspoon almond extract

Steps:

  • Wash strawberries and cut off tops.
  • Cut a deep"X" in the top of each berry without cutting through the bottom.
  • Spread each strawberry apart.
  • In a medium mixing bowl, whisk milk and pudding for two minutes.
  • Fold in the whipped topping and almond extract.
  • Fill a decorating bag with pudding mixture and pipe into each strawberry.
  • I usually fill this right before serving.
  • Don't let them in the refrigerator to long.
  • Hint: It is best to chill the pudding mixture before filling the strawberries.
  • The warm air causes mixture to become to soft.

These little gems are always the hit wherever I bring them. They are bursting with almond flavor and are wonderful dunked in coffee. They freeze beautifully in an airtight container.

2 cups flour
2 tablespoons flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1 cup sugar
2 large eggs
2 large egg whites
1 tablespoon almond extract
1 teaspoon almond extract
2 -3 ounces sliced almonds, lightly toasted and coarsly chopped
2 -4 tablespoons mini chocolate chips

Steps:

  • Sift together the first 4 ingredients in small bowl.
  • Beat together the next 4 ingredients.
  • Add the flour mixture to the egg mixture and combine on low speed of mixer.
  • Add the almonds and chocolate chips.
  • Preheat oven to 325.
  • Line a large baking sheet with parchment paper.
  • Using a spoon, scoop the dough in two lines down the length of the baking sheet (use two if you need to), keeping them about 3 inches apart.
  • They'll be about 12"- 14" X 2" strips.
  • Bake until firm and barley showing color, about 25-30 minutes.
  • Cool on rack 10 minutes.
  • Lower oven temperature to 300.
  • Take the strips and slice them cross-wise into about 1/2" slices.
  • Return to the baking sheet, and standing them upright with some space between them, bake for an additional 30-35 minutes until crisp and very light golden.
  • Cool and store in an air tight container.

1 3/4 cups almonds
2 egg whites
1/3 cup honey
1 tablespoon vegetable oil
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1/4 cup fruit preserves, preferably all fruit and sugarless

Steps:

  • In a food processor fitted with metal blade or in a blender, grind together everything except the preserves until a smooth paste forms Drop teaspoonsful of the paste onto a greased or nonstick cookie sheet, or one lined with parchment paper.
  • With a wet spoon, make a depression in the centers of the cookies.
  • Place a small dollop (about 1/2 teaspoon) of fruit preserves in each depression.
  • Bake in a preheated 350F oven until lightly golden, between 10-15 minutes.
