5-INGREDIENT EASY MEATLOAF WITHOUT BREADCRUMBS
This 5-Ingredient Easy Meatloaf recipe may be short on ingredients, but it is loaded with flavor. The lack of breadcrumbs means you don't have them soaking up the juices, so the meat stays moist - and it's gluten free too! Parmesan cheese, onion, egg, ketchup, salt, and pepper are all that go into this yummy loaf of goodness!

Steps:
- Preheat oven to 400 degrees F. Line a loaf pan with aluminum foil for easy removal of the meatloaf after it is cooked.
- Finely dice the Onion
- Mix all ingredients (except the 1/3 cup Ketchup reserved for the top) together in a large bowl with a fork or with hands: beef, parmesan cheese, onion, egg, ketchup, salt, pepper.
- Form a loaf in the loaf pan. Spread the remaining 1/3 cup Ketchup over the top of the meatloaf. Bake in the oven for 45 minutes.
- Remove from the oven and let sit for 5 minutes. Remove from the pan, cut and serve with roast or mashed potatoes or salad. Enjoy!

- Preheat oven to 375 degrees.
- Mince the green pepper, onion, and garlic.
- Add to a large bowl with the ground beef, eggs, almond flour, cheddar, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use your hands to combine.
- Shape mixture into a loaf, about 7x4 inches, and place in a 9x13 baking dish.
- Cut the bacon slices in half and drape over the meatloaf.
- Bake for 25 minutes.
- Whisk together the ketchup and Italian dressing. Spoon half of the mixture over the meatloaf.
- Increase heat to 425 and bake an additional 10 minutes and then spread the remaining sauce over the meatloaf.
- Continue baking for 10-15 minutes or until the internal temperature reaches 160 degrees.
- Let rest 5 minutes before slicing and serving.

- Preheat oven to 400°F. Line a small pan with foil and spray with cooking spray.
- Cook onion and garlic in olive oil until tender. Cool completely.
- Combine all meatloaf ingredients in a bowl and mix well.
- Form into a 3"x8" loaf and place on prepared pan.
- Bake 30 minutes uncovered. Top with topping and bake an additional 30-40 minutes or until loaf reaches 160°F.

LOW CARB BEEFED-UP MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- In a small bowl, mix together the tomato topping ingredients. Set aside. You may add a few drops of water to thin to a ketchup consistency.
- In a large bowl, mix together the beef, eggs, Parmesan, vegetables, herbs, and seasonings.
- Working on a waxed paper lined sheet pan or counter, form meatloaf mix into a 10 by 8-inch flat rectangle on the waxed paper. Place a layer of prosciutto slices on top, followed by a layer of provolone slices. Roll up the stuffed meatloaf mix like a burrito and seal the edges all around by pinching the meat.
- Place the roll, seam side down, into a 5 by 9-inch loaf pan. Spread a heavy coat of the tomato topping to completely cover the top of the meatloaf. Place in oven and bake for about 1 hour and 15 minutes, or until the temperature on a meat thermometer registers 165 degrees F. Drain fat and let rest at least 10 minutes before slicing.

LOW CARB, BREADLESS MEATY LOAF
This low-carb. option is delicious and pairs great with a vegetable side dish for dinner tonight! Made with hard boiled egg and ground-up pork rinds (I actually hate them by themselves) instead of bread or crackers makes this high in protein while avoiding the carbs that bread would add. My husband loved it and ate half the loaf when I last made it!

Steps:
- Combine sauce ingredients and set aside.
- Add meats, chopped eggs, onion, celery salt and pepper into a large bowl blend together thoroughly .
- Add Worcestershire sauce, soy sauce, sambal oelek to the meat mixture.
- Right before baking, mix in the ground-up pork rinds, otherwise they will become soggy.
- Form meat mixture into loaf shape in baking dish and pour water or beef broth around loaf. (Make sure that loaf is no wider than 4 inches and no thicker than 2 inches, length does not matter).
- Cover dish with foil.
- Bake for 50 minutes at 360 Degrees.
- Take out of oven, uncover and check that meatloaf is to temperature, then place back in oven uncovered for an additional 10 minutes.
- Take out of oven and cover with 1/2 cup sauce mixture, making sure the loaf is coated thoroughly.
- Place back in over for 3-5 minutes on broil.
- Remove from oven, sauce should not be burned, only less watery.
- Remove from baking dish with spatula and let sit for 5 minutes then slice and serve, utilizing the leftover sauce as desired.
