1 cup cubed cinnamon-raisin bread
1 large egg
2/3 cup 2% milk
3 tablespoons brown sugar
1 tablespoon butter, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
1/3 cup raisins

Steps:

  • Preheat oven to 350°. Place bread cubes in a greased 2-cup baking dish. In a small bowl, whisk the egg, milk, brown sugar, butter, cinnamon, nutmeg and salt until blended. Stir in raisins. Pour over bread; let stand for 15 minutes or until bread is softened. , Bake until a knife inserted in the center comes out clean, 35-40 minutes. Serve warm.

6 slices day-old whole wheat bread
½ cup raisins
1 large apple, peeled and chopped
2 tablespoons butter, melted
4 eggs, beaten
2 cups low-fat milk
½ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break bread into small pieces into an 8-inch square baking dish. Mix in raisins and apple. Drizzle with melted butter.
  • Combine eggs, milk, sugar, cinnamon, and vanilla extract in a mixing bowl. Beat until well mixed. Pour over bread and lightly push down with a fork until bread is covered and soaking up egg mixture.
  • Bring a kettle of water to a boil. Place bread pudding baking dish into a large roasting pan. Carefully pour boiling water around pan.
  • Bake in preheated oven until a knife inserted into the middle of pudding comes out mostly clean, about 45 minutes.

1 tablespoon oil (can use butter or margarine)
1/2 cup raisins (optional)
8 egg whites
2 cups low-fat milk
1/2 cup white sugar (or sweetner)
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Break bread into small pieces into an 8 inch square baking pan.
  • Drizzle melted oil over bread.
  • If desired, sprinkle with raisins.
  • In a medium mixing bowl, combine egg whites, milk, sugar, cinnamon, and vanilla Beat until slighty foamy.

I just tried this and I love it! I'm a real bread pudding fan and I always save the bread heels and any bread that may be aging in the freezer. I only use whole wheat/multi grain and this works fine for any bread pudding. I love Lindt bittersweet chocolate with a passion so I used 2 ozs of that. This recipe asks for 1-3/4 cups milk and that seemed a bit dry to me so I made it 2 cups. It's from Kraft.

4 ounces light cream cheese spread, Philadelphia
1/4 cup Splenda brown sugar blend
2 large egg whites
3/4 teaspoon ground cinnamon
2 cups nonfat milk
6 -8 slices cubed whole wheat bread (6 cups)
2 (1 ounce) baker's semi-sweet chocolate baking squares, coarsely chopped

Steps:

  • Preheat oven to 350°F.
  • Beat cream cheese spread and sugar in large bowl with electric mixer on medium speed until well blended.
  • Add egg whites and cinnamon; mix well.
  • Gradually add milk, mixing until well blended.
  • Place bread cubes in 8-inch square glass baking dish.

A lovely bread pudding that will have your family or guests believing that it could not be low fat. It also is great for any occasion.

3/4 loaf challah
32 ounces fat-free half-and-half (Land-O-Lake is the brand I use)
1/2 teaspoon kosher salt (You can use table)
2 tablespoons cinnamon
1/2 cup white sugar
3 large eggs or 3 large egg substitute
1/2 cup raisins
fat free butter-flavored cooking spray

Steps:

  • Preheat oven to 200 degrees F.
  • Slice challah bread if not already presliced, and the cut into 1 inch cubes.
  • Place cubes onto cookie sheet, lightly spray with butter spray, and bake in oven until completely dry, stirring occasionally.
  • In the meantime, in a medium sauce pan, mix together the half and half, salt, cinnamon, and sugar.
  • Bring to a boil oven medium heat, stirring occasionally.
  • In the meantime, in a medium bowl, wisk together the eggs or egg substitute.
  • Once the half and half mixture comes to a boil SLOWLY whisk it into the eggs, never stop whisking until fully mixed together.
  • When bread is dry, remove from the oven and spray with butter spray again, and layer the bread HALF way up the casserole dish.
  • Sprinkle on half the rasins and then add the rest of the bread, but only until it reaches the top of the casserole dish.
  • Sprinkle on the rest of the raisins.
  • Slowly pour on the half and half mixture.
  • Let this sit for 1 hour, stirring occasionally.
  • Preheat oven to 350 degrees F Bake for 30-40 minutes, uncovered.
