This lovely lemon chicken can be served with mashed potatoes, corn or green beans, and a salad. The lemony sauce tastes delicious mixed with a salad.

6 bone-in, skin-on chicken breast halves
4 lemons, cut in half
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons paprika
2 ½ cups water, divided
1 cube chicken bouillon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts, skin-side up, in baking dish. Season chicken with 1/2 the salt, 1/2 the pepper, 1/2 the garlic powder, 1/2 the onion powder, and 1/2 the paprika, respectively. Turn the chicken over and season with remaining salt, pepper, garlic powder, onion powder, the paprika, respectively. Squeeze lemons over the chicken; discard lemons and add 1 cup water to the baking dish.
  • Bake chicken in the preheated oven for 30 minutes.
  • Stir remaining 1 1/2 cups water and chicken bouillon together in a saucepan; bring to a boil. Pour bouillon mixture over chicken. Flip chicken skin-side up. Continue baking chicken in the oven until skin is golden and crispy, and the chicken is no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

This is a wonderful and very easy chicken dish. Everything is in one pan so it makes for easy cleanup. Goes great with mashed potatoes or rice.

3 large skinless, boneless chicken breast halves
¼ cup water
½ cup olive oil
2 lemons, juiced
½ cup bread crumbs
1 tablespoon garlic powder
1 tablespoon dried parsley
1 teaspoon paprika
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange chicken breasts in a large baking dish. Pour water, olive oil, and lemon juice over chicken; sprinkle with bread crumbs, garlic powder, parsley, and paprika. Season with salt and pepper. Cover baking dish with aluminum foil and cut a few slits in foil to vent.
  • Bake chicken breasts in preheated oven until no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

I am a new cook and I created this recipe for my boyfriend who loved his mother's lemon butter chicken to death but it was a bit heavy on the butter for me. My compromise utilizes half a stick of butter and has great flavor. Serve this over rice for an amazing dinner! Great leftovers too!

3 tablespoons olive oil
1 medium yellow onion, diced
3 each shallots, sliced
4 cloves garlic, sliced
½ stick unsalted butter, divided
4 each skinless, boneless chicken breasts, cut into bite-sized pieces
1 pinch salt and ground black pepper to taste
3 each lemons, zested and juiced
1 (14.5 ounce) can chicken broth
1 tablespoon cornstarch
¼ cup water

Steps:

  • Heat olive oil in a deep skillet over medium heat. Add onion, shallots, and garlic; cook and stir until onion becomes translucent, about 5 minutes. Add 1/2 of the butter.
  • While onion mixture is cooking, season chicken thoroughly with salt and pepper. Add chicken to the skillet and toss to coat. Add the zest and juice of 1 lemon. Stir until chicken becomes opaque. Season with pepper again and add remaining lemon zest and juice.
  • Pour in chicken broth and remaining butter; stir, cover, and let simmer until chicken is no longer pink in the center and juices run clear, 10 to 15 minutes.
  • Mix cornstarch with 1/4 cup water and stir into the skillet. Cook over medium-low heat until sauce thickens, about 5 minutes.
