This is a easy and tasty side dish. The croquettes can be made into smaller portions for appetizers. It is also lends itself as recipe that can be adapted easily to personal tastes and cooking styles.

Number Of Ingredients 7

24 ounces prepared mashed potatoes
6 slices crumbled cooked bacon
3 tablespoons plain yogurt
1 chopped green onion
2 cups seasoned bread crumbs
1/4 teaspoon garlic salt
1/4 teaspoon white pepper

Steps:

  • Preheat oven to 400 degrees.
  • Mix all of the ingredients except 1 cup bread crumbs.
  • Shape mixture into 8 balls.
  • Flatten croquettes to 3/4 inch thick.
  • Roll croquettes in remaining bread crumbs.
  • Place on non-stick pan and bake for 20 minutes turning once.

Number Of Ingredients 12

1 extra-large potato
2 ounces unsalted butter, softened
1/3 cup chopped bacon, diced and rendered
2 tablespoons sour cream
2 tablespoons whole milk
1 green onion, sliced thin
Salt and freshly ground black pepper
4 cubes Cheddar or Jack cheese (about 2 ounces)
1 egg, whisked
1 tablespoon whole milk
1/2 cup all-purpose flour
2 quarts canola oil

Steps:

  • For the baked potato croquettes: Preheat the oven to 350 degrees F. Wash and bake the potato on a rimmed baking sheet or large pot, until fork tender, about 45 minutes. Cool and put through a ricer in a large bowl. Add the butter, bacon, sour cream, milk, green onion, salt, pepper. Mix together and form 4 balls. Place 1 piece of cheese in the center of each ball.
  • For the egg wash: Whisk the egg and milk together in a shallow bowl. Place the flour in a second shallow bowl. Roll the balls in the flour and then the egg wash, then again in the flour.
  • For frying: Heat the canola oil to 350 degrees F in a deep fryer or large pot. Deep fry the croquettes in batches in the oil until golden brown and hot in the middle, 3 to 4 minutes.

  • Line a baking sheet with parchment paper and add the Panko bread crumbs, distribute them evenly and bake them on the middle rack of the oven for 10-15 minutes until lightly browned. Remove from the oven, allow to cool. Reserve.
  • Add the potatoes to a food processor and pulse them to break up the clumps. Or, alternatively, mash them with a fork or potato masher. The potatoes should be smooth.
  • Transfer the potatoes to a shallow bowl and add one of the eggs that has been lightly whisked and stir into the potatoes. Add the bacon, cheese, and 1/2 cup of the chives. Mix thoroughly to combine all the ingredients.
