MOM'S FABULOUS CHICKEN POT PIE WITH BISCUIT CRUST



Mom's Fabulous Chicken Pot Pie with Biscuit Crust image

Leftover chicken or rotisserie chicken from the supermarket helps on the ease of preparation of this fabulous comfort style dinner. Fresh vegetables gives this a very special added flavor and is worth the effort. Everyone loves Mom's Chicken Pot Pie! Serve with a green salad.

Number Of Ingredients 15

¼ cup butter
1 small onion, chopped
3 celery ribs, chopped
3 carrots, chopped
⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth
⅔ cup half-and-half cream
salt and ground black pepper to taste
3 cups cooked chicken, cut into bite-size pieces
1 (16.3 ounce) can refrigerated flaky-style biscuits (such as Pillsbury Grands®)
1 egg yolk, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
  • Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
  • Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

4 tablespoons unsalted butter, at room temperature
4 tablespoons all-purpose flour, plus more for dusting
2 cups chicken broth, good-quality
salt, to taste
freshly ground black pepper, to taste
1 pinch cayenne pepper, optional, to taste
2 tablespoons heavy cream, plus more for egg wash
2 lb cooked boneless, skinless chicken, shredded
½ lb carrot, peeled, cut into 1/2-inch (1cm) pieces
½ lb red-skinned potato, cut into 1/2-inch (1cm) pieces
½ cup frozen peas, or shelled fresh peas
½ lb puff pastry, defrosted following package instructions
1 black truffle, optional, to taste
1 large egg

Steps:

  • Melt the butter in a large, deep saucepan.
  • Add the flour and whisk to ensure there are no lumps before adding the chicken stock. Cook for 5-10 minutes while continuously stirring.
  • Check the consistency by dipping the back of a spoon into the sauce and running your finger along the spoon. You want the sauce to cling to the spoon and not run over the swipe you made.
  • Continue to cook and stir the sauce over medium heat until you reach the correct consistency. Season with the salt, pepper, and cayenne (if using). Taste the sauce and see if your sauce needs more seasoning.
  • Add the cream and stir to combine.
  • Add the shredded chicken, carrots, potatoes, and peas to the sauce. Cook the vegetables in the sauce for 2-3 minutes.
  • Transfer the filling to a clean bowl and chill in the refrigerator for 1 hour, or until cool.
  • Preheat the oven to 400˚F (200˚C).
  • Roll out the puff pastry, using a bit of extra flour to ensure the pastry doesn't stick to your work surface. Use a bowl or plate about an inch (2 cm) larger than the dish you are cooking your pot pie in as a guide to cut out your pastry.
  • Carefully spoon the chilled filling into oven-proof serving bowls.
  • Break the egg in a small bowl and add a tablespoon of water or cream. Whisk with a fork.
  • Brush the egg wash on the edges and rim of your dishes.
  • If desired, shave truffles over the filling. Lay the pastry rounds over the top, being careful not to stretch the pastry. Seal the edges of the pastry by lightly pushing it onto the rim of your dish to make sure it is secure.
  • Brush the top and sides with more egg wash.
  • Place the pot pies on a large baking sheet and bake for 25-35 minutes, until the pastry is a nice golden, dark brown and there are no more grayish raw patches.
  • Let cool for 5 minutes before serving.
  • Enjoy!

This is a variation of a recipe of a dish my friend Lizz from N.J. made often. It is a simple and delicious chicken pot pie. I added a choice of 3 different topping crusts.

Number Of Ingredients 12

1 (9 inch) frozen pie crusts, for bottom (optional)
2 (10 3/4 ounce) cans reduced-fat cream of chicken soup
1 cup 2% low-fat milk
1 (15 ounce) can Veg-All, drained (mixed vegetables)
1 -2 cup cooked chicken, cubed (leftovers or 1 large can chunk chicken, drained)
1/2 teaspoon ground sage
salt and black pepper, to taste
1/2 cup 2% low-fat milk
1/4 cup egg substitute
1 cup Bisquick
1 (11 ounce) package refrigerated breadstick dough (optional)
1 (9 inch) deep dish pie shells (optional)

Steps:

  • Preheat oven to 375°F In medium bowl, mix filling ingredients and then pour into bottom pie crust (if using). Select your topping, and bake for 30-40 minutes.
  • BISQUICK TOPPING: Mix milk, egg, and bisquick in a small bowl. Spread out over chicken mixture. (or the second pie crust if prefered).
  • TWISTED TOPPING: Unroll and separate the breadsticks. Place 6 of the breadsticks across the pie plate over the sausage mixture, twisting each one and spacing evenly. Place the remaining 6 breadsticks over the first in the opposite direction, creating a lattice pattern. Trim ends if needed.
  • TWO CRUST TOPPING: Place 2nd pie crust over top of filling, tucking the edges under the bottom crust and flute them together. Cut a few slits in the top to allow steam to escape.

2 (9 inch) deep dish frozen pie crusts, thawed
1 (15 ounce) can mixed vegetables, drained
2 cups cooked, diced chicken breast
1 (10.75 ounce) can condensed cream of chicken soup
½ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl combine the mixed vegetables, chicken, cream of chicken soup and milk. Pour mixture into one of the pie crusts. Turn the other crust over and pop out of the tin onto the top of the filled pie. Seal the edges and poke holes in top crust.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes or until crust is golden brown.

1 (10 ounce) package frozen mixed vegetables
cooking spray
1 (14.1 ounce) package refrigerated 9-inch pie crusts, divided
1 (10.5 ounce) can condensed cream of chicken soup
½ cup mayonnaise
½ cup milk
½ teaspoon celery salt
½ teaspoon garlic powder
½ teaspoon black pepper
⅛ teaspoon ground thyme
1 (3 pound) rotisserie chicken, boned and shredded

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place mixed vegetables in a microwave-safe bowl. Microwave on high power for 4 to 5 minutes. Drain.
  • Meanwhile, lightly grease a 9-inch pie plate with cooking spray. Place 1 pie crust in the bottom of the prepared pie plate.
  • Stir condensed coup, mayonnaise, milk, celery salt, garlic powder, pepper, and thyme together in a large bowl. Add chicken and mixed vegetables; mix well. Pour into the bottom pie crust. Place remaining pie crust on top of the pie plate. Trim so crust is even with the edge of the plate and use a fork to press crust down around edges to seal. Cut 3 small slits near the center of the crust. Cover the outside edges of the crust with foil or a pie protector to prevent edge from overcooking.
  • Bake in the preheated oven for 30 minutes. Remove foil and continue baking until crust is brown and flaky, 5 to 10 minutes.
