CRISPY BAKED CHICKEN QUESADILLAS

Cheesy, crispy baked chicken quesadillas are perfect to serve on weeknights! Layered with creamy chicken, topped with sautéed peppers and onions, and finished with melty cheese. Serve them with guacamole, sour cream, and fresh salsa for a family-pleasing meal!

1 tablespoon oil (plus more)
1 bell pepper, thinly sliced
½ onion, thinly sliced
¼ cup cream cheese, softened
1-2 minced chipotle peppers + 1-2 tablespoons adobo sauce
½ teaspoon EACH: adobo seasoning, ground cumin, garlic powder
2 cups shredded chicken
1 ½ cups shredded melting cheese (such as Monterey Jack)
6-8 flour tortillas (fajita size)

Steps:

  • PREP: Position a rack in the center of the oven and preheat the oven to 425ºF. Line two baking sheets with parchment paper (or foil, sprayed with cooking spray) and set aside.
  • SAUTE: Heat the oil in a skillet over medium-high heat until it's super hot. Add the peppers and onions and cook for roughly 1-2 minutes or until the peppers start to smell fragrant and soften a little. Season with a pinch of salt and pepper. Remove from heat and set aside.
  • QUESADILLAS: In a bowl, combine the softened cream cheese, chipotle pepper(s), adobo sauce, adobo seasoning, ground cumin, and garlic powder until a smooth paste form. Stir in the chicken and shredded cheese and continue to stir until thoroughly combined. On a clean work surface, lay out a tortilla. Spoon 1/4 cup of the chicken mixture on one half of the tortilla, followed by a thin layer of peppers and onions (on the same side). Then fold the other side of the tortilla over the filling (so it looks like a flat taco.)
  • BAKE: Place the prepared quesadillas on the baking tray in a single layer and brush with oil (or spray with cooking spray.) Bake for 12-14 minutes (flipping about 1/2 way through) until golden brown and crispy. Serve with homemade guacamole salsa, blender salsa, pico de gallo, or salsa verde.

2 cups shredded cooked rotisserie chicken
1 (4.25-ounce) can CHI-CHI'S® Dice Green Chilies, drained
1 cup shredded Monterey Jack and Cheddar cheese blend
1 cup shredded Monterey Jack and Cheddar cheese blend
1/3 cup diced red bell pepper
1/4 cup finely chopped red onion
Mexican toppings such as sour cream, guacamole and CHI-CHI'S® Salsa

Steps:

  • 1.Prepare grill for medium heat. 2.Spread each tortilla evenly with cream cheese. 3.In small bowl, combine chicken, chilies, shredded cheese, bell pepper and onion; mix well. Spoon evenly over each tortilla. Fold each tortilla in half, pressing to seal. 4.Brush both sides of each quesadilla with oil. Grill 2 minutes on each side or until golden brown. 5.Cut quesadillas into wedges; serve with favorite Mexican toppings such as sour cream, guacamole and salsa.

1/4 cup peanut oil
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon chopped cilantro leaves
1 tablespoon chopped green onion
1 teaspoon crushed red pepper
1 pound boneless, skinless chicken breasts
Salt
Pepper
Peanut oil
1 red onion, sliced
1/4 to 1/2 cup barbecue sauce
Eight 8-inch flour tortillas
1 cup shredded fontina cheese
1 cup shredded mozzarella cheese
3 tablespoons butter
Mexican Cream, recipe follows
Tomato Salsa, recipe follows
1 lime, juiced
1 1/2 cups sour cream
Salt
Pepper
5 Roma tomatoes
2 chipotle chiles, reconstituted
1/2 cup chopped basil leaves
1/4 cup minced garlic
1/2 cup fresh lime juice
1/4 cup balsamic vinegar
2 teaspoons sugar
2 teaspoons salt
1/2 teaspoon freshly cracked black pepper
1 cup olive oil

Steps:

  • Combine the peanut oil, ginger, garlic, cilantro, green onion, and red pepper. Add the chicken and marinate in the refrigerator overnight. Remove the chicken from the marinade and season with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Heat a large ovenproof saute pan over medium-high heat. When the pan is hot, add enough peanut oil to coat the bottom of the pan. Add the chicken and sear on both sides. Place the pan in the oven and roast until cooked through, about 10 to 15 minutes. Remove from the oven, cool slightly, and dice into 1/2-inch pieces.
  • Preheat a grill or grill pan. Drizzle the onion slices with oil and place on the grill. Cook until the onions are soft, about 4 minutes per side. Remove from the grill.
  • Place the chicken into a bowl and add barbecue sauce, to taste. Place 4 tortillas on a flat surface. In a separate bowl, mix the fontina and mozzarella cheese. Place some of the cheese mixture on each tortilla. Top with some of the chicken and grilled onions. Top each with another tortilla.
  • Heat a large saute pan over medium-high heat. Add 1 tablespoon of the butter and cook until it is foamy. Add 1 quesadilla and cook until golden brown on both sides, about 3 minutes per side. Repeat with the remaining quesadillas, adding more butter as necessary.
  • Cut each quesadilla into 6 pieces. Top with Mexican Cream and Tomato Salsa.
  • Combine all of the ingredients. Refrigerate until needed.
  • Over a hot grill, roast the tomatoes until blackened. Transfer to a bowl and add the chipotles. Cover and allow to cool for 15 minutes. Add the basil, garlic and lime juice and marinate for 10 minutes. Transfer to a blender or food processor and pulse until chunky. Transfer to a bowl and add the vinegar, sugar, salt and pepper. Slowly whisk in 1 cup of olive oil. Reserve.

1 pound boneless skinless chicken breast, julienned
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 dashes cayenne pepper
1 1/2 tablespoons cumin
1 clove garlic, minced
1 red bell pepper, julienned
1 green bell pepper, julienned
1 small red onion, thinly sliced
1 ounce tequila
8 ounces Colby Jack cheese, Monterey Jack, or Cheddar, shredded
2 tablespoons unsalted butter
2 tablespoons finely chopped cilantro leaves
2 tablespoons sliced scallions
1 1/2 cups soy flour
1/4 cup sugar substitute (recommended: Splenda)
1/2 teaspoon salt
3 eggs
3/4 cup heavy cream
1/3 cup club soda
Non-stick vegetable oil cooking spray

Steps:

  • Preheat oven to 375 degrees F.
  • Make the soy flour flat bread: In a medium bowl, whisk together the soy flour, sugar substitute, salt, eggs, heavy cream, and club soda to make a smooth, thick, pancake-like batter. Spray pizza pans generously with the vegetable oil spray. Using a rubber spatula, spread the batter as thinly and evenly as possible over the 2 pans. Bake for about 12 to 15 minutes, or until lightly golden brown and firm to touch.
  • In a large saute pan or wok, heat oil over high heat. Season the chicken with salt, pepper, cayenne, cumin, and garlic, and add to the hot oil. Next add the peppers and onions, and remove pan from the heat and add tequila. Cook for about 5 minutes, or until chicken is cooked thoroughly. Keep warm.
  • Cut 1 flat bread into 4 pieces. On 2 pieces, layer cheese, cooked chicken mixture, and more cheese, and cover with the other 2 pieces. (Wrap the other flatbread and freeze for another use).
  • Lastly, melt butter until very hot in a saute pan over medium-high heat. Add quesadillas and cook for about 2 minutes on each side until toasty and the cheese is melted. Cut quesadillas into 3 pieces each and serve. Garnish with cilantro and scallions, and serve with salsa picante, guacamole, and sour cream, if desired.

1 flour tortilla

Steps:

  • First make the pesto:
  • In a sturdy and large plastic cup put a large handful of fresh basil leaves, 1 clove of garlic, a 1/4 cup of roasted almonds, 1/4 cup of shredded Parmesan, a drizzle of olive oil, and a pinch of salt and pepper. Use an immersion blender to blend it all together, until smooth and bright green. Reserve.
  • For the chicken:
  • Mix together the paprika, pepper, and cumin in a bowl with a teaspoon of salt. Dust the chicken breasts with the spice mixture and rub in. Grill on a medium hot grill, turning occasionally until chicken is just cooked through. Depending on how thick the breasts are, about 5 to 6 minutes per side. Remove from grill and let rest. Cut the chicken into 1/2-inch slices and set aside. Lay a tortilla over low heat on the grill and spread a thin layer of pesto over it. Lay the strips of chicken over the tortilla and sprinkle with Parmesan, cover with another tortilla. Cook until you get color on the bottom and carefully flip it over to cook the other side. Once it is done, remove from heat and let rest for 1 minute. Cut the tortilla like a pizza and serve.
