ROASTED RED PEPPER PASTA



Roasted Red Pepper Pasta image

This wonderful, creamy pasta recipe has a nice kick from the roasted red peppers.

Number Of Ingredients 9

1 lb penne pasta
2 tablespoons olive oil
1 large yellow onion, finely diced
2 cloves garlic, minced
16 ounces roasted red bell peppers, roughly chopped
2 tablespoons all-purpose flour
1 cup milk
5 ounces shredded parmesan, divided
2 tablespoons roughly chopped basil

Steps:

  • Heat a large pot of salted water over high heat. When it's boiling, cook the pasta according to package directions.
  • Heat the olive oil in a large skillet or dutch oven. Add the onion and cook it for 5 minutes or until translucent. Then add the garlic and cook it for 30 seconds. Then add the red pepper and stir it in.
  • Sprinkle the flour over the onions and stir continuously for 30 seconds. Add the milk and stir occasionally for 2 to 3 minutes or until it thickens. Then add 1/2 cup of the pasta water to the sauce and cook for another 2 minutes until the sauce thickens again.
  • Remove the pot from the heat.
  • Use an immersion blender or a blender to blitz the sauce so the bell pepper breaks down and the sauce is creamy. Add the sauce back to the pot.
  • Add the parmesan cheese to the sauce and stir till it has melted.
  • Divide the pasta between bowls and top with the optional additional parmesan and chopped basil.

Quick and Easy Roasted Red Pepper Pasta image

I made this for a quick dinner last night, so I thought I'd share it with you this morning.

Number Of Ingredients 12

12 oz. weight Pasta Of Your Choice (I Prefer Short Ones Like Rigatoni, Penne, Etc.)
4 tbsp. Butter
1/2 whole Large Onion, Finely Diced
3 cloves Garlic, Minced
1 jar (15.5 Ounces) Roasted Red Peppers, Drained And Roughly Chopped
1 c. Vegetable Or Chicken Broth
1/2 tsp. Salt, More To Taste
Freshly Ground Black Pepper
1/2 c. Heavy Cream (more To Taste)
1/2 c. Parmesan Shavings (more For Serving)
Finely Minced Parsley
Chopped Fresh Basil (if You Have It!)

Steps:

  • Cook pasta in salted water according to package directions. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add the onions and garlic and saute for 2 to 3 minutes or until starting to soften. Add the chopped red peppers and cook for 2 to 3 minutes, until hot. Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers.) Heat the other 2 tablespoon butter back to the skillet over medium heat. Pour the pepper puree back into the skillet. Add the broth, salt, and pepper, and stir until heated. Splash in the cream and stir to combine. Taste and adjust seasonings if you need to.Drain the pasta and add it to the skillet. Add Parmesan and parsley/basil, then stir it together to coat the pasta. Serve in bowls with extra Parmesan and a sprinkling of parsley on top.

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions.
  • Meanwhile, add the oil and butter to a large skillet over medium-high heat and melt the butter. Add the garlic and onions and saute until starting to soften, 2 to 3 minutes. Add the chopped red peppers and cook until hot, 2 to 3 minutes.

PASTA WITH ROASTED RED PEPPERS AND GOAT CHEESE



Pasta With Roasted Red Peppers and Goat Cheese image

Years ago, I stayed with an Italian friend in Bologna who worked long hours at his job. By the time he got home, he was hungry, so he'd start water boiling and cast about his tiny kitchen to see what he could use for dinner. Then, to my fascination, he'd whip up a delicious pasta sauce from almost nothing: a few anchovies and some walnuts, or a can of tuna and another of beans. Yesterday's bread became today's bread crumbs, browned in olive oil with garlic and tossed with spaghetti, olives, capers and jarred tomato purée. I try to keep a jar of roasted peppers handy at all times. They're useful for panini, pizzas and especially pastas like this one. Spanish piquillo peppers are particularly sweet, but bell peppers will do as well. If you have basil, it's delicious in this dish - but not required.

2 garlic cloves, minced
1 cup thinly sliced roasted sweet red peppers
Salt

4 large basil leaves, cut in slivers chiffonade optional
3 ounces goat cheese, crumbled
3/4 pound pasta, any shape

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat the olive oil over medium heat in a large, heavy skillet. Add the garlic. Cook, stirring, until fragrant, about 30 seconds. Add the sliced roasted peppers, and stir together for about a minute until well infused with the oil and garlic. Season with salt and pepper, and stir in the basil (if using) and goat cheese. Remove from the heat.
  • When the water comes to a boil, salt generously and add the pasta. Cook until al dente - firm to the bite - following the recommendations on the package. Ladle about 1/2 cup of the pasta cooking water into the frying pan, and stir well so that the goat cheese begins to melt. Drain the pasta, and toss immediately with the pepper mixture in the pan. Serve.

From a local source. We used fresh pasta, fresh parsley (out of basil!) and Oregon-grown hazelnuts (they grow abundantly here). Easy!

3 ounces parmigiano-reggiano cheese, cut into pieces
4 red bell peppers, roasted and peeled (red bell peppers or a combination of red, orange and or or yellow)
about 1/3 cup fresh basil leaves or about 1/3 cup fresh Italian parsley
1/4 cup extra-virgin olive oil
2 fresh garlic cloves, peeled
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1/4 teaspoon spanish smoked paprika (this replaced red pepper flakes)
12 ounces linguine (fresh pasta is preferred but dried will work)
1/4 cup coarsely chopped roasted hazelnuts (or pine nuts)
additional shredded parmigiano-reggiano cheese, to garnish
fresh basil or parsley, for garnish

Steps:

  • ROASTING THE BELL PEPPERS: This time I chose to roast the bell peppers over an open flame on the range top. Take long handled tongs and run the bell peppers over medium flame until the skin starts to blister evenly.
  • Place the roasted bell peppers in a cast iron or heat resistant skillet and cover with a lid for 15-20 to "sweat". After the time has passed, remove as much skin as you can (if there are a few bits and pieces of blistered skin remaining that is okay). Take a knife and scrape off the seeds; remove the stem and membrane. Chop the bell peppers coarsely. Proceed with recipe.
  • Place the cheese chunks in a food processor and grind using the PULSE button so that you don't over-process the cheese.
  • Add the roasted peppers, basil, olive oil, garlic, salt, pepper and Spanish smoked paprika.
  • Continue processing on the PULSE setting until the mixture is ground to a coarse sauce consistency (chunks will remain).
  • Adjust the seasoning, adding additional salt and pepper if necessary, then scrape the sauce into a bowl and set aside.
  • Bring a large pot of salted water to a boil. Add the pasta and cook just until tender. Drain the pasta from the water (reserving about 1/4 cup of the hot pasta water, which you will add to the sauce when tossing with the pasta).
  • Place the cooked and drained pasta in a large bowl. Add the sauce and toss well to coat the linguini.
  • If the mixture seems a bit dry, add a couple of tablespoons of the hot pasta water.
  • Garnish with the hazelnuts and toss again before serving.
  • Additional cheese may be passed at the table. Garnish with fresh basil or parsley, too.
  • Note: the sauce was at room temperature when it was added to the pasta.

250g jar roasted red peppers
60g hazelnuts, toasted
1 large garlic clove, crushed
50ml extra virgin olive oil
pinch of chilli flakes, optional
½ tsp sherry or white wine vinegar
30g parmesan, grated, plus extra to serve
½ small bunch of parsley
400g dried pasta, penne, rigatoni or orecchiette work well

Steps:

  • Drain the peppers and tip them into a food processor with the toasted hazelnuts, garlic, olive oil, chilli flakes, vinegar and a good pinch of salt. Blitz to a smooth paste. Add the parmesan and parsley, then blitz again. Check the seasoning.
  • Cook the pasta following pack instructions. Drain and reserve a cup of the cooking water. Toss the pesto with the pasta and a splash of cooking water to loosen. Serve in bowls with extra parmesan grated over.

180g linguine or spaghetti
50g blanched hazelnuts , roughly chopped
2 tbsp olive oil
1 garlic clove , crushed
½ small pack fresh oregano , leaves picked
1 lemon , zested
100ml double cream
30g parmesan , or vegetarian alternative, finely grated

Steps:

  • Cook the pasta for 1 min less than pack instructions.
  • Meanwhile, toast the hazelnuts in a dry frying pan over a medium heat then, once golden, add the oil, garlic, oregano and three quarters of the lemon zest. Stir so that everything is well coated, cook for 30 secs or so, then stir in the cream and take off the heat.
  • Drain the pasta straight into the frying pan, adding a little of the cooking water to the pan. Stir through the cheese, season well with black pepper, then toss everything together and serve immediately with the remaining lemon zest scattered over the top.

1 roasted red pepper (from a jar or roast one yourself)
30ml olive oil
50g walnuts , toasted, plus extra to serve
1 small garlic clove
100g linguine or spaghetti
parmesan or vegetarian alternative, grated, to serve

Steps:

  • Blitz the roasted red pepper with the olive oil, walnuts and garlic in a food processor, season well and set aside.
  • Bring a pan of salted water to the boil, add the pasta and cook for 1 min less than the pack instructions and drain, reserving a ladleful of cooking water. Tip the pasta back into the pan, along with the reserved cooking water and red pepper sauce, and return to the heat to warm through. Tip the pasta into a bowl and top with the parmesan and some chopped toasted walnuts. Season and serve.

6 roasted garlic cloves (use leftovers from our roast pepper & chorizo salad dish - recipe right)
4 roasted red peppers (use leftovers from our roast pepper & chorizo salad dish - recipe right)
1 tsp cayenne pepper
75g blanched almonds , roughly chopped
50g parmesan (or vegetarian alternative), roughly chopped, plus extra for serving (optional)
2 tbsp olive oil
400g pasta (we used tripolini)
large pack basil leaves

Steps:

  • Remove the skin from the roasted garlic cloves. In the small bowl of a food processor, whizz the roasted peppers, garlic, cayenne, almonds, Parmesan and oil until it makes a rough pesto consistency. Taste and season.
  • Bring a pan of water to the boil and cook the pasta following pack instructions. Drain, reserving a little cooking water. Return the pasta to the pan with the pesto, basil and a little of the cooking water, then heat through. Serve with extra Parmesan, if you like.

½ tsp dried thyme
500g passata

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Cut the peppers and the onions into chunks. Toss in the oil and dried thyme, then roast for 30 mins until soft and slightly blackened.
  • Cool, then blend or process until just chunky. Stir through the passata, season and warm through.
