Inspired by a British dessert called posset, these no-bake, crustless pudding cups have a tart, rich filling and are a snap to make. They only take 10 minutes to put together and spend the rest of the time chilling in the refrigerator. Even the most devout key lime pie fans will be hooked on its cute cousin.

Number Of Ingredients 7

2 cups heavy cream
2/3 cup granulated sugar
1 tablespoon finely grated lime zest, plus more for serving
Pinch of kosher salt
1/3 cup fresh lime juice
Crumbled graham-crackers, for serving
Sweetened whipped cream, for serving

Steps:

  • In a saucepan, bring heavy cream, granulated sugar, finely grated lime zest, and a pinch of kosher salt to a boil over medium heat. Cook, stirring often, until reduced to 2 cups, 8 to 10 minutes.
  • Remove from heat; stir in fresh lime juice. Let cool 20 minutes, then strain through a fine mesh sieve into a liquid-measuring cup; discard solids. Divide evenly among 6 glasses. Refrigerate until set, about 2 hours. Top cups with lightly sweetened whipped cream, crumbled graham crackers, and more finely grated lime zest; serve.

1 cup boiling water
1 cup of chopped pecans
1 (6 ounce) package lime gelatin
1 (8 ounce) package cream cheese
1 (20 ounce) can crushed pineapple
1 (12 ounce) bottle of hi spot 7-Up soda or 1 (12 ounce) bottle Sprite

Steps:

  • Dissolve the gelatin in the boiling water. Add cream cheese and beat until smooth or put in a blender.
  • Stir in the pineapple and nuts, and soda. Pour in a mold and refrigerate overnight.
  • Cooking time is chilling time.

1 package white cake mix (regular size)
1 package (3.4 ounces) instant pistachio pudding mix
1 cup lemon-lime soda
1 cup canola oil
3 eggs
1 cup chopped walnuts
FROSTING:
1-1/2 cups cold milk
1 package (3.4 ounces) instant pistachio pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
1/2 cup pistachios, toasted
Whole red shell pistachios and fresh mint, optional

Steps:

  • In a large bowl, combine the first five ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes; stir in walnuts. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, in a large bowl, beat milk and pudding mix on low speed for 2 minutes. Fold in whipped topping. Spread over cake. Sprinkle with pistachios. Refrigerate for about 30 minutes before cutting. Garnish with whole pistachios and mint if desired. Refrigerate leftovers.

3 cups club soda
crushed ice
