Homemade Freezer Pickles image

Crunchy, sweet, and tangy, these freezer pickes are homemade with love!

7 cups thinly sliced pickling cucumbers ((approximately 4 medium sized cucumbers))
2 - 3 yellow or sweet onions (, peeled and thinly sliced)
1 - 2 green bell peppers (, seeded and thinly sliced (optional))
2 Tbsp kosher salt
2 cups granulated sugar
1 cup apple cider vinegar
1 Tbsp mustard seed
1 Tbsp celery seed

Steps:

  • Add cucumbers, onions and green peppers (if using) in a large non-reactive mixing bowl. Sprinkle with kosher salt and stir to combine. Let sit for 1 hour. Transfer mixture to a colander to drain and rinse to remove excess salt.
  • Wipe out the same mixing bowl, then add drained and rinsed cucumber mixture back to the bowl.
  • In another small mixing bowl, combine sugar, apple cider vinegar, mustard seed and celery seed. Stir together to combine. If the sugar isn't mixing well, add bowl to the microwave (make sure it's microwave-safe!), and heat for 30 seconds or so, until the sugar will dissolve into the vinegar when stirred.
  • Pour liquid over the cucumber mixture in the bowl and stir to combine. Cover tightly and refrigerate for 1 full day. Transfer freezer pickles to freezer-safe containers and freeze for up to 6 months.
  • To eat: Thaw pickles out in the refrigerator overnight. Once thawed, pickles should be eaten within 2 weeks. Enjoy on their own, on top of a burger, on top of hot dogs, on top of sandwiches, or however you'd like!

8 pounds cucumbers, thinly sliced
1 cup thinly sliced onion
3 tablespoons salt
4 cups sugar
2 cups white vinegar
1 teaspoon celery seed
1 teaspoon ground turmeric
1 teaspoon mustard seed

Steps:

  • In a large container, combine cucumbers, onion and salt. Let stand for 3 hours, stirring occasionally. , In a bowl, combine the remaining ingredients; let stand for 2-3 hours, stirring often. , Drain and rinse the cucumber mixture; add sugar mixture and stir well. Pack into 1-pt. freezer containers, leaving 1-in. headspace. Cover and freeze for up to 6 weeks. Thaw before serving.

2 1/2 lbs pickling cucumbers
3 tablespoons pickling salt
1/2 cup sliced onion
1 small red bell pepper, cored,seeded,and cut into 2 ",long matchsticks
1 grated lime, zest of
2 cloves garlic, minced
1/4 cup minced fresh mint leaves
1 1/2 cups sugar
1 1/2 cups distilled white vinegar

Steps:

  • Gently wash cucumbers and thinly slice, discarding a slice from both ends of each cucumber.
  • You should have about 8 cups.
  • In a large, nonreactive bowl, toss cucumber slices with salt.
  • Let stand two to three hours, drain.
  • In a large nonreactive bowl, stir together remaining ingredients.
  • Pour over cucumbers and stir well.
  • Cover and refrigerate eight to 10 hours.
  • Pack mixture and syrup in freezer bags or rigid containers and freeze.
  • Thaw in refrigerator eight hours before serving.

LIME PICKLE

Pair this tart, tangy and refreshing lime pickle with a simple meal of dhal and boiled rice. The recipe makes a 500g jar and will last for three months

500g limes (about 7)
8 large garlic cloves, finely chopped
2 tsp Kashmiri chilli powder
1 tsp ground turmeric
30g fine sea salt
1 tsp black mustard seeds
½ tsp fenugreek seeds
1 tsp cumin seeds
1 star anise
1 tsp caster sugar
125ml vegetable oil, plus 30-50ml extra, if needed
30g root ginger, peeled and finely chopped
3 green chillies, deseeded and chopped
50ml white wine vinegar
70g granulated sugar

Steps:

  • Put the limes in a saucepan and cover with water. Place a small heatproof plate on top of the fruit to keep them submerged and then bring to a boil over a medium heat and simmer for 20-30 mins until the limes are tender. Scoop out the limes, pat them dry with kitchen paper, and discard the cooking water.
  • Once the limes are cool enough to handle, chop them (peel and pith included) into 3cm chunks and tip everything, including any juice, into a mixing bowl. Stir in the chopped garlic, chilli powder, turmeric and salt, and leave to one side for 1 hour.
  • Heat a sturdy and dry frying pan over a medium-low heat, and add the mustard seeds, fenugreek, cumin and star anise, Stir and toast the spices for about 40 seconds until aromatic. Tip them into a mortar, add 1 teaspoon of sugar and pound to a powder with a pestle - you can also use an electric spice grinder for this, too.
  • Add this ground spice mix to the limes, stir well, spoon everything into a sterilised jar and then seal. Leave the pickle in a warm place or on a sunny window ledge for 2-3 days so that flavours mature. Stir the limes once a day with a metal spoon to ensure they are evenly coated in the spice mix.
  • Heat the oil in a wok or karahi over a medium-high heat and fry the ginger and green chillies for 2-3 mins, until the ginger starts to turn golden. Add the vinegar and sugar and simmer over a medium-low heat until the sugar has dissolved, then boil for 2 mins.
  • Turn the heat off and add the steeped limes and masala. Leave on one side to cool and then spoon the pickle back into the same jar. Using a metal spoon, push the limes down into the jar so that they are covered by the spicy oil - you might need to add a little extra oil. Seal the jar and leave the pickle for 3-4 days before tasting. It will keep for 3 months at room temperature.

2 gallons water
2 cups pickling lime (calcium hydroxide)
7 pounds cucumbers, cut into chunks
6 cups cold vinegar
8 cups white sugar
2 teaspoons pickling spice
1 teaspoon salt
1 teaspoon celery seed
½ teaspoon whole cloves
1 drop food coloring, or as desired

Steps:

  • Mix 2 gallons water and pickling lime together in a large bowl; add cucumbers and soak, stirring often, for 24 hours. Drain and thoroughly rinse cucumbers under cold water.
  • Fill a large bowl with ice water and soak cucumbers for 3 hours; drain.
  • Pour cold vinegar into a large pot. Mix sugar, pickling spice, salt, celery seed, cloves, and food coloring into vinegar until dissolved. Add cucumbers; let sit, 8 hours to overnight.
  • Bring cucumber mixture to a boil; remove pot from heat.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack cucumber mixture into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1 tablespoon chopped fresh mint
1 ½ cups finely crushed pretzels
6 tablespoons butter or margarine, melted

Steps:

  • Line 9-inch round pan with plastic wrap, with ends extending over side of pan. Beat Neufchatel cheese and 1/4 cup sugar with mixer until blended. Add dry gelatin mix, zest and juice; mix well.
  • Whisk in COOL WHIP and mint; pour into prepared pan. Mix pretzel crumbs, remaining sugar and butter; sprinkle over pudding mixture. Cover dessert with ends of plastic wrap; use to gently press crumb mixture into filling.
  • Freeze 3 hours or until firm. Invert dessert onto serving plate; remove pan and plastic wrap. Let dessert stand at room temperature 15 min. to soften slightly before cutting to serve.

Sweet, yet tangy, full of flavor...this recipe just screams SUMMER to me! We make these every summer, and usually have enough to last us through the winter (this recipe makes a lot). This year, we didn't quite make it, so I can't wait to make a batch when the cukes are ready!!These are also great to have on hand when you get invited to a BBQ/party and have no time to cook something (got me out of quite a few pinches;) Using a mandolin makes the slicing much easier, and gets the slices thinner than cutting by hand.

25 medium cucumbers, washed and sliced very thin
8 -10 medium onions, sliced
1/2 cup salt
5 cups sugar
3 cups white vinegar
5 -6 cloves garlic, chopped
ice water

Steps:

  • Combine sliced cucumbers, onions, and salt in large bowl.
  • Cover with ice water.
  • Cover and place in refrigerator for 48 hours.
  • Mix sugar, vinegar, and garlic together in saucepan and bring to boil.
  • Let cool.
  • Drain cucumber and onion mixture well.
  • Pack in freezer containers and pour enough vinegar mixture over top to cover veggies (leave 1-inch space at top of container for expansion).
  • Freeze.
  • Let thaw before eating.
