LEMON-GARLIC LIMA BEANS

When I was growing up on Cyprus, my mother would often make this side dish to have with roast lamb. Although I hated lima beans when I was a kid (who didn't?), I love them now. They always remind me of home. -Paris Paraskeva, San Francisco, California

1 pound dried lima beans
2 bay leaves
3 tablespoons extra virgin olive oil, divided
1 medium onion, chopped
4 garlic cloves, thinly sliced
1/4 cup chopped fresh parsley
2 tablespoons lemon juice
1 tablespoon chopped fresh oregano
2 teaspoons grated lemon zest
1/2 teaspoon salt
1/4 teaspoon pepper
Additional chopped fresh parsley

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid. , Place beans in a large saucepan; add bay leaves and water to cover by 2 in. Bring to a boil. Reduce heat; simmer, covered, until beans are tender, 1-1/4 to 1-1/2 hours. Drain., In a large skillet, heat 1 tablespoon oil over medium heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add next 6 ingredients. Stir in drained beans and remaining oil; toss to combine. Sprinkle with additional parsley.

SKILLET LIMA BEANS

Skillet dishes are the cornerstone of Gullah cooking, and these lima beans are made in my favorite skillet-cast-iron. Instead of simmering the lima beans for hours and hours, I've added a fresh take to the traditional Lowcountry side dish by adding bell peppers and tomatoes.

Number Of Ingredients 10

1/2 pound thick-cut bacon
1 tablespoon unsalted butter, plus more as needed
1 white onion, chopped (about 1 cup)
2 cups fresh or frozen lima beans, thawed if frozen
1 clove garlic, minced
2 cups chicken broth
1/2 red bell pepper, chopped (about 2/3 cup)
1/2 pint cherry tomatoes, halved (about 1 cup)
Juice of 1/2 lemon (1 1/2 tablespoons)
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large skillet over medium heat and add the bacon. Cook until crispy, about 15 minutes. Remove the bacon from the skillet to paper towels, reserving the drippings in the skillet. Crumble the bacon once cooled.
  • Add the butter to the drippings in the skillet and heat until melted. Add the onion and saute until tender, about 5 minutes. Add the lima beans and garlic. Add the chicken broth and bring to a boil. Cook until the lima beans are tender and the broth has evaporated, about 25 minutes.
  • Add the bell pepper, tomatoes and crumbled bacon, adding more butter if needed. Saute until the vegetables are tender, 2 to 3 minutes longer. Remove the skillet from the heat and stir in the lemon juice. Season with salt and pepper.

White Beans With Clams image

1 pound large white dried beans
2 onions, peeled and cut in halves
4 cloves garlic, peeled
2 carrots, scraped and cut in half crosswise
2 sprigs parsley
2 bay leaves
Few strands saffron
Coarse salt
6 tablespoons olive oil
2 tablespoons minced onion
4 cloves garlic, minced
2 dozen very small clams, at room temperature
1 tablespoon paprika
2 tablespoons minced parsley
1/2 cup dry white wine
1/2 dried red chili pepper, crumbled
Coarse salt and freshly ground pepper to taste

Steps:

  • Soak the beans overnight. The following day, drain them and cover with cold water. Add the onions, garlic, carrots, parsley sprigs and bay leaves. Bring to boil, add one cup cold water to cut the boil, then return to a boil, cover and simmer very slowly one-and-a-half to two hours, or until beans are tender.
  • When the beans are almost tender, start preparing the clams. Heat the oil in a skillet and sauté the onion and garlic until the onion is wilted. Add the clams and cook over medium high heat, stirring frequently, until they open. Sprinkle in the paprika and the parsley. Add the wine, chili pepper, salt (if necessary), and pepper. Cook 5 minutes more.
  • Stir saffron and salt into the beans, add clams with all liquid in the pan. Shake to mix in clams and liquid. Cover and cook for five minutes.
  • Serve the beans in soup bowls with the clams arranged on top.

CLAMS IN WHITE BEAN SAUCE

No need to prep everything ahead: Get your chopping in while the fennel cooks. Just keep an eye on the pot!

1 (15-ounce) can baby lima or cannellini beans or other medium white beans, rinsed
1/4 cup olive oil, plus more for drizzling
Kosher salt, freshly ground pepper
1 fennel bulb
3 garlic cloves
1 sprig rosemary
1 lemon
Handful of parsley leaves
36 littleneck or Manila clams, scrubbed
4 thick slices country-style bread, toasted

Steps:

  • Toss beans in a medium bowl with a drizzle of oil; season with salt and pepper. Set aside.
  • Halve fennel and remove fronds (don't toss the fronds!). Thinly slice one half of fennel and transfer to a medium bowl along with fronds. Place a damp paper towel directly on fennel to help prevent browning and set aside. Finely chop remaining half of fennel, then thinly slice garlic.
  • Heat 1/4 cup oil in a large heavy pot over medium. Add chopped fennel, garlic, and rosemary sprig and cook, stirring often, until fennel is translucent and tender but still has some bite, about 5 minutes.
  • While that's happening, remove 2 wide strips of zest from lemon with a vegetable peeler. Halve lemon and pick out seeds. Coarsely chop parsley.
  • Add clams and lemon zest to pot, squeeze in juice from a lemon half, cover pot, and cook until some clams start to open, 5-7 minutes. Toss and stir clams; use a slotted spoon to transfer any open ones to a medium bowl. Cover pot and cook until remaining clams open, checking sporadically and transferring them to bowl as they are done, 7-9 minutes; discard any clams that don't open. Add reserved seasoned beans to pot and stir to combine; loosen sauce with water if it looks too tight. Return clams to pot, add half of parsley, and toss well.
  • Add remaining parsley to bowl with reserved sliced fennel and squeeze remaining lemon half over. Season fennel-herb salad with salt and pepper and toss to coat. Drizzle with a very small amount of oil and toss again.
  • Serve clams topped with salad and toasted bread for dipping into sauce.

EASY LIMA BEANS

Baby lima beans are steamed in chicken broth. This is a very tasty lima bean recipe that is also low in fat.

1 ½ cups chicken broth
1 (16 ounce) package frozen baby lima beans

Steps:

  • Heat a large saucepan over medium heat, and spray with cooking spray. Saute onions until soft and translucent. Pour in chicken broth, and bring to a boil. Add lima beans, and enough water just to cover. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, until beans are tender.

RAGOUT OF CLAM, HOMINY, SQUASH AND LIMA BEAN

1 pound hot Italian sausage, pricked with the tines of a fork
60 littleneck clams
4 medium onions, cut in half and sliced into thin half-moons
2 medium heads Belgian endive, coarsely chopped
2 tablespoons minced garlic
1 Scotch bonnet pepper, seeded and chopped (optional)
3/4 cup white wine
2 1/2 cups canned plum tomatoes, crushed with their juice
1 stick unsalted butter, cut in 8 pieces
1 cup dried lima beans, soaked over night
1 small butternut squash, cut in half, seeded, peeled and cut in 1/4-inch dice
1 tablespoon minced fresh rosemary
2 15-ounce cans hominy, drained
1 teaspoon kosher salt, or to taste
Freshly ground black pepper to taste

Steps:

  • Preheat the oven to 500 degrees. Bring 6 cups of water to a boil in a medium saucepan. Add the sausages and boil for 8 minutes. Drain and let cool. Cut the sausages into 1/4-inch dice.
  • Lay the clams in a roasting pan. Top with the sausage, onions, endive, garlic, Scotch bonnet pepper, wine, 1 cups tomatoes and butter. Bring to a boil on top of the stove, then roast in the oven for 8 minutes. Turn the clam mixture and roast for 5 to 10 minutes longer, or until the clams have opened. Remove the shells, reserve the clams and pour the remaining solids and liquid into a medium saucepan. Simmer for 10 minutes.
  • Drain the lima beans and add them to the pot and simmer, covered, for 45 minutes, stirring occasionally. If the mixture begins to stick add cup water. Stir in half of the squash and the rosemary and simmer for 30 minutes. Add the remaining squash and tomatoes and the hominy. Simmer for 20 minutes. Stir in the reserved clams and simmer for 5 minutes. Season with salt and pepper and serve with polenta, couscous or rice.

1 tablespoon extra-virgin olive oil
1 large onion, quartered, cut crosswise into 1/4-inch-thick slices
1 bay leaf
1/3 cup dry white wine
2 10-ounce packages frozen baby lima beans, thawed
2 large garlic cloves, minced
24 small clams, scrubbed
3 large tomatoes, seeded, diced
1/4 cup finely chopped fresh parsley

Steps:

  • Heat oil in heavy large deep skillet over medium-low heat. Add onion and bay leaf and sauté until onion is golden, about 10 minutes. Add wine and simmer 1 minute. Season with salt and pepper. Arrange clams atop beans. Increase heat to medium-high. Cover and cook until clams open, about 8 minutes. Discard any that do not open. Transfer clams to dish. Remove half of clams from shells and stir into beans. Mix tomatoes and parsley into beans. Mound lima bean mixture in large shallow bowl. Top with remaining clams in their shells and serve.
