MASHED POTATO MEAT LOAF

I created this recipe when my children were young and "meat loaf shy". They loved the potato surprise inside and the sauce that has a mild zip. Occasionally, I tuck canned green beans in the center of the potatoes to create a one-dish meal. -Dava Beck, Amarillo, Texas

1-1/3 cups water
1/3 cup milk
2 tablespoons butter
1-1/2 teaspoons salt, divided
1-1/3 cups mashed potato flakes
1 egg, lightly beaten
1/2 cup quick-cooking oats
1/2 cup chopped green pepper
1/3 cup chopped onion
3/4 teaspoon pepper
1 pound lean ground beef
1 can (11-1/2 ounces) spicy hot V8 juice
1/4 cup ketchup

Steps:

  • In a large saucepan, bring water, milk, butter and 1/2 teaspoon salt to a boil. Remove from the heat; stir in potato flakes. Let stand for 30 seconds. Fluff with a fork; set aside., In a large bowl, combine the egg, oats, green pepper, onion, pepper and remaining salt. Crumble beef over mixture and mix well., On a piece of waxed paper, pat beef mixture into a 12x8-in. rectangle. Spoon mashed potatoes lengthwise down the center third to within 1 in. of edges. Bring long sides over potatoes to meet in center; seal seam and edges., Place seam side up in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30 minutes; drain. Pour V8 juice over loaf. Top with ketchup. , Bake 18-22 minutes longer or until meat is no longer pink and a thermometer reads 160°. Let stand for 5 minutes before slicing.

2 small carrots, chopped
2 celery stalks, chopped
1/4 medium onion
1/4 cup panko (Japanese breadcrumbs)
1 large egg white
3/4 pound ground beef sirloin
Coarse salt and ground pepper
1/4 cup homemade or store-bought barbecue sauce
1 pound baking potatoes, peeled and sliced 1/2 inch thick
3/4 cup low-fat buttermilk
1 pound green beans, stem ends removed
1 teaspoon olive oil

Steps:

  • Preheat oven to 450 degrees. In a food processor, chop carrots, celery, onion, and panko with egg white until smooth, about 1 minute. Transfer to a large bowl; mix in beef, 1 teaspoon salt, and 1/8 teaspoon pepper.
  • On a foil-lined baking sheet, form meat mixture into a 6-inch-long loaf; brush with half the barbecue sauce. Bake until an instant-read thermometer inserted in loaf registers 160 degrees, 25 to 30 minutes, brushing halfway through with remaining sauce.
  • Meanwhile, in a medium saucepan, cover potatoes with cold salted water by 1 inch. Bring to a boil; reduce to a simmer, and cook until potatoes are easily pierced with a knife, 15 to 20 minutes. Drain; return to pan. Stir over medium until a starchy film forms on bottom of pan, about 1 minute. Remove from heat; mash with buttermilk until smooth. Season with salt and pepper.
  • While potatoes cook, set a steamer basket in a saucepan filled with one inch water; bring to a gentle boil. Add green beans; cover, and cook until crisp-tender, 4 to 6 minutes. Transfer to a bowl; add oil, season with salt and pepper, and toss. Serve meatloaf with mashed potatoes and green beans.

1 lb potato, peeled and sliced 1/2 in thick
1/4 cup low-fat buttermilk
1 lb green beans
1 teaspoon olive oil
salt and pepper

Steps:

  • Preheat oven to 450 degrees. Chop carrots, celery, onion and panko and egg white in a food processor until fully combined. Transfer to a bowl. Add beef, salt and pepper.
  • Form mixture into a loaf on a baking sheet. Brush with barbecue sauce. Bake 25 to 30 minutes or until loaf is 160 degrees in the middle. Brush with sauce again halfway through.
  • In a saucepan, boil potatoes until done, 15 to 20 minutes. Drain and return to pan. Mash with buttermilk until creamy. Season with salt and pepper to taste.
  • Steam green beans until tender in a steamer on the stove or in a glass bowl in the microwave with a little water, covered loosely with parchment paper. About 4 to 6 minute Transfer to a bowl. Toss with 1 tbs olive oil and season with salt and pepper to taste.
  • Serve meatloaf with mashed potatoes and green beans.

I can't remember where I got this because I just have it saved in my Weight Watchers database now, but I've made it many times including for company and it's always a hit. I love that it mostly uses turkey but is still really moist and doesn't taste "light" at all. My husband loves it too! If you follow Weight Watchers it's 4 points for a serving (1/6 of the recipe). I usually serve it with sweet potatoes or steamed veggies.

2 tablespoons Worcestershire sauce
2 large egg whites (I often use one whole egg instead)
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon hot pepper sauce

8 ounces canned tomato sauce
1/2 cup uncooked old fashioned oats
12 ounces uncooked lean ground turkey
8 ounces uncooked lean ground beef (with 7% fat)

Steps:

  • Preheat oven to 350°F; spray loaf pan with cooking spray.
  • Combine beef, turkey, onion, and oats in a large bowl, set aside.
  • Mix together tomato sauce, Worcestershire sauce, hot pepper sauce, egg whites, salt, and pepper. Add to meat mixture and mix well with hands.
  • Press into pan and bake for 60-70 minutes. (Note: add an extra egg white if meatloaf does not hold together properly).

  • Combine paprika and 1/4 teaspoon each garlic powder, salt and pepper in a large bowl. Add potatoes and toss to coat. Drizzle with 1 tablespoon oil, toss again, then spread the potatoes in a single layer on one of the prepared baking sheets. (Reserve the bowl.) Place on the lower rack to roast for 10 minutes.
  • Meanwhile, combine beef, egg, onion, breadcrumbs, 2 tablespoons ketchup, Worcestershire and 1/4 teaspoon each garlic powder, salt and pepper in the large bowl. Form the mixture into 4 small loaves about 2 by 4 inches each and place on the other prepared baking sheet. Brush the tops with the remaining 1 tablespoon ketchup. Remove the potatoes from the oven and put the meatloaves on the lower rack.
  • Toss green beans with the remaining 1 tablespoon oil and 1/4 teaspoon each salt and pepper. Move the potatoes to one side of their pan and add the green beans to the other side. Roast the vegetables on the upper rack until the green beans are tender and an instant-read thermometer inserted into the center of the meatloaves registers 165 degrees F, 20 to 30 minutes more.
