1 tablespoon flour
1 (18 1/4 ounce) package light yellow cake mix
1/3 cup lemon juice, plus
4 teaspoons lemon juice, divided
1 teaspoon vanilla
1 (8 ounce) package light cream cheese
3 large egg whites
1 large egg
1 cup fresh blueberries or 1 cup frozen blueberries, thawed
1 cup sifted powdered sugar (sift before measuring)

Steps:

  • Preheat oven to 350.
  • Coat a 12-cup bundt pan with cooking spray; dust with flour.
  • Combine cake mix, 1/3 cup lemon juice, vanilla, cream cheese, egg whites and egg in a large bowl; beat at low speed of a mixer 30 seconds.
  • Beat at medium speed 2 minutes; fold in blueberries.
  • Pour batter into pan.
  • Bake for 50 minutes or until a toothpick inserted in center comes out clean.
  • Let cool in pan for 10 minutes; remove from pan.
  • Let cool completely on wire rack.
  • Combine sugar and remaining 4 teaspoons.
  • lemon juice in a small bowl; drizzle over cake.

⅓ cup shortening
¾ cup milk
1 egg
1 teaspoon lemon zest
1 cup blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch pan.
  • Sift flour, baking powder, sugar, and salt together in a large bowl. Beat shortening in a separate bowl until creamy; stir into flour mixture, alternating with milk. Beat flour-shortening mixture until mixed, about 2 minutes. Add egg and beat until mixed, about 1 minute.
  • Combine lemon zest with blueberries in a bowl; fold into batter. Pour batter into prepared pan.

2 ½ cups all-purpose flour
1 ½ cups white sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
½ cup vegetable oil
2 eggs, beaten
2 teaspoons vanilla extract
2 cups fresh blueberries
2 teaspoons all-purpose flour, or as needed
2 tablespoons butter, melted
2 tablespoons white sugar, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13-inch baking dish.
  • Sift 2 1/2 cups flour, 1 1/2 cup sugar, baking powder, and salt together in a bowl. Add milk, vegetable oil, eggs, and vanilla extract; mix into a semi-thick batter.
  • Toss blueberries with about 2 teaspoons flour in a separate bowl; fold into batter. Pour batter into prepared baking dish.

½ cup butter
½ cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 egg yolks
1 ½ cups all-purpose flour
1 teaspoon baking powder
⅓ cup milk
2 egg whites
¼ cup white sugar
1 ½ cups fresh blueberries
1 tablespoon all-purpose flour
1 tablespoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
  • Cream butter or margarine and 1/2 cup sugar until fluffy. Add salt and vanilla. Separate eggs and reserve the whites. Add egg yolks to the sugar mixture; beat until creamy.
  • Combine 1 1/2 cups flour and baking powder; add alternately with milk to egg yolk mixture. Coat berries with 1 tablespoon flour and add to batter.
  • In a separate bowl, beat whites until soft peaks form. Add 1/4 cup of sugar, 1 tablespoon at a time, and beat until stiff peaks form. Fold egg whites into batter. Pour into prepared pan. Sprinkle top with remaining 1 tablespoon sugar.

2 c sugar
1/2 c light butter
1/2 block ( 8 oz ) 1/3 less fat cream cheese softened
3 large eggs
1 large egg white
3 c flour divided
2 c fresh or frozen blueberries
1 t baking powder
1/2 t baking soda
1/2 t salt
1 8 pz carton lemon yogurt, low fat
2 t vanilla
Cooking spray
1/2 c confectioners sugar
4 t lemon juice

Steps:

  • Beat first 3 ingredients at med speed of a mixer until well blended. Add eggs and egg white 1 at a time, beating well after each addition. LIghtly spoon flour into dry measuring cups level with a knife. Combine 2 T flour and blueberries in a small bowl, and toss well. Combine remaining flour, baking powder, soda and salt. Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with the flour mixture. Fold in the blueberries and vanilla. Pour cake batter into a 10" tube pan coated with pam. bake 350 1 houri and 10 min. or until toothpick comes out clean. Cool cake in pan for 10 min, remove from pan. Combine powdered sugar and lemon juice in a small bowl. Drizzle over warm cake.

1 cup sugar
2 eggs
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1 cup milk
1 teaspoon vanilla
2 cups blueberries (fresh or frozen)
1 cup blueberries (fresh is preferred, but frozen works too) (optional)
confectioners' sugar (optional)

Steps:

  • Cream butter, adding sugar gradually.
  • Add the rest of the ingredients except blueberries
  • Mix in 1 cup of blueberries
  • Pour into a baking pan (I used an 8-inch square pan and a loaf pan).
  • Top with the other cup blueberries.
  • Bake at 325 degrees for about 45 mins until toothpick comes out clean.
  • (It rises alot because there is so much baking soda).
  • If desired, garnish with additional blueberries and powdered sugar.
