FEATHER-LIGHT BISCUITS

I usually used a glass as a cutter so the biscuits are bigger than average size, and I always baked some extras to send home with the kids. They liked to split them and fill them with cheese or peanut butter and strawberry jam. -Eleanore Hill, Fresno, California

Yield about 2 dozen.

Number Of Ingredients 6

6 cups buttermilk baking mix
1/4 cup sugar
1 package (1/4 ounce) active dry yeast
1/3 cup shortening
1 to 1-1/4 cups warm water (120° to 130°)
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the baking mix, sugar and yeast. Cut in shortening until mixture resembles coarse crumbs. Stir in enough warm water to form a soft and slightly sticky dough. Turn onto a floured surface; knead gently 3-4 times. , Roll dough to 3/4-in. thickness; cut with a 2-1/2-in. round biscuit cutter. Place on ungreased baking sheets. Brush tops with melted butter. Bake at 400° until lightly browned, 10-12 minutes.

2 1/2 cups self-rising flour
1/2 cup vegetable shortening
1 to 11/4 cups buttermilk
1/4 cup melted butter

Steps:

  • Preheat oven to 450 degrees. Put self-rising flour in a large bowl. Cut in shortening with a pastry blender or two knives until it is the size of grains of rice. Add buttermilk and toss gently with a fork until the mixture leaves the side of the bowl - mixture should be very wet and sticky. Turn out onto a lightly floured surface and knead just until the mixture holds together. Divide dough into 12 equal pieces and round into a ball. Dip each biscuit into melted butter then into one of the desired coating mixtures below. Place in an ungreased 12 - inch round pan. Once all of the biscuits are in the pan, press the tops slightly so that they spread and are just barely touching. If there is any coating left over, sprinkle it evenly on top. Bake in a preheated 450 degree oven for 10 to 12 minutes until golden brown.
  • Cinnamon/Sugar Coating: In a small bowl combine 2 teaspoons cinnamon 1/3 cup granulated sugar and 1/3 cup unbleached flour.
  • Herb Coating: In a small bowl combine 1/3 cup Parmesan cheese, 1/4 cup finely chopped fresh basil, 2 tablespoons unbleached flour, and 1 teaspoon garlic powder.
  • Spiciy Coating: In a small bowl combine 1/3 cup finely chopped Cheddar cheese and 3 tablespoons unbleached flour.
  • One of the coatings listed below.

These biscuits remind me so much of my wonderful mother. She got up every morning to make biscuits before we all left for school..When I can home from school, there were hot biscuits just coming out of the oven for our dinner. I didn't really realize how special they were until I didn't have them anymore. All of my friends in the neighborhood would come by and eat those cold biscuits off the stove. They were amazing. This recipe is close, but still not the same. Enjoy though.

2 1/2 cup(s) self rising flour
1 tablespoon(s) granulated sugar
1/2 cup(s) butter flavor shortening
1 large egg, lightly beaten
2/3 cup(s) milk or buttermilk
1 tablespoon(s) butter or margarine, melted

Steps:

  • Preheat oven to 450 degrees. Combine flour and sugar in a medium bowl, stirring well. Cut in the shortening with a pastry blender until mixture is crumbly.
  • Combine egg and milk: add to the flour mixture, stirring just until dry ingredients are moistened. Turn dough out onto a floured surface and knead three or four times.
  • Roll dough out to 1/2 thickness.Cut with a three inch round biscuit cooker.
  • Place biscuits on an ungreased baking sheet. Bake in a hot 450 degree oven for 12 to 15 minutes or until golden brown.
  • Remove from oven and swab the top of the biscuits with the melted butter.

1 (370 ml) can fat-free Carnation Evaporated Milk
1/2 cup lemon juice or 1/2 cup vinegar
1 (11 ml) package dry yeast
1/2 cup warm water
5 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup crisco all vegetable shortening

Steps:

  • Combine evaporated milk and lemon juice. Reserve.
  • Dissolve yeast in 1/2 cup warm water. Let stand 5 minutes.
  • Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Cut in shortening with a pastry blender or 2 knives until mixture resembles coarse meal., Add yeast mixture and reserved evaporated milk mixture to flour mixture. Stir just until moist. Cover and refrigerate for 1 hour.
  • Preheat oven to 425°F Line a baking sheet with parchment paper.
  • Knead dough on a floured surface about 5 times. Roll out dough to 1/2-inch thickness with a 2-inch cutter. Place on prepared baking sheet.
  • Bake in preheated oven for 12-13 minutes or until golden brown.
  • TIPS: When cutting out biscuits always cut straight down and do not twist cutter as this will seal the edges and biscuits will not rise properly.
  • Add chopped chives and grated cheeses for a different taste.

2 cups self raising flour
1 cup buttermilk
1/4 cup water (roughly)
3 1/16 cups canola oil (roughly)

Steps:

  • Pre-heat the oven to 450 Degrees Fahrenheit.
  • Generously cover the bottom of an 8" square glass baking dish with Canola Oil, and set it in the oven.
  • Combine Buttermilk and Flour in a mixing bowl.
  • Add water until the consistency is slightly sloppier than dough. This wonderful little recipe works with a variety of consistencies - from slightly soggier than normal dough all the way to just-about-pourable.
  • Add the 3 1/6th cups of Oil, and mix as little as necessary to combine all ingredients. Overmixing can lead to tough biscuits, so be careful not to fall for that trap!
  • Take your glass dish from the oven, and pour/scoop/scrape your dough into it. Smooth it over the top if necessary, to ensure even sized biscuits. (no worries if you don't do this well, they still taste great).
  • Oil a blunt knife and dip it in flour, and use it to cut your dough into 9 even squares.
  • Bake in the oven for 10-12 minutes, checking at 8, until they're golden brown.
  • Remove from the oven and serve.

  • Stir in milk and egg together.
  • Sprinkle flour on a clean counter and knead dough briefly.
