LESLEIGH'S CORNBREAD DRESSING

1 broiler-fryer chickens or 2 -3 turkey legs
1 stalk celery, chopped
1 medium onion, chopped
1 -2 tablespoon poultry seasoning (more or less to taste)
1 teaspoon garlic powder
salt
pepper
3 slices bread
1 (11 ounce) can evaporated milk (Pet brand preferred)
1 cornbread (see Lesleigh's Skillet recipe)
6 eggs, beaten

Steps:

  • Boil chicken (or turkey), onion, and celery until meat is done and veggies are tender.
  • Remove meat from broth and debone.
  • Preheat oven to 400°F.
  • In a large bowl, crumble cooled cornbread.
  • Pour chicken (or turkey) broth over cornbread.
  • Season with salt, pepper, garlic powder, poultry seasoning.
  • In a separate bowl, tear bread slices.
  • Pour 1/2 can of Pet Milk over the bread and allow to soak for 2 minutes, and then add to dressing.
  • Pour the rest of the milk into the cornbread mixture.
  • Add eggs and stir. (You may add meat if desired.)
  • Pour into a 13" x 9" baking dish.
  • Bake for 1 hour, or until firm.

1/2 cup butter (melted)
2 eggs (slightly beaten)
8 1/2 ounces Jiffy cornbread mix (1 box)
15 ounces whole kernel corn, drained (1 can)
15 ounces creamed corn
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl combine the wet ingredients first, then add the Jiffy mix.
  • Spoon the mixture into a 9X13 casserole dish (or crock pot).
  • Bake for 45 minutes, or until the to is golden brown and the center is cooked (use a toothpick to check).

2 cups cooked crumbled cornbread
2 eggs, beaten
1 (10 1/2 ounce) can cream of chicken soup
1 medium onion, chopped
1/2 chopped bell pepper (optional)
1/2 cup melted butter
salt

Steps:

  • Cook onion, pepper and squash with half of butter until tender.
  • mix soup, eggs, cornbread together in large bowl.
  • add squash to bread mixture.
  • add rest of butter.
  • add salt and pepper.
  • stir well.
  • put in baking dish
  • heat on 375
  • just until heated through.

My family absolutely LOVES this pie! It’s light and creamy and oh-so-good. It's a superior twist to the traditional dish.

15 ounces pumpkin
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon pumpkin pie spice
1/4 teaspoon salt
3 eggs, slightly beaten
1/4 cup sour cream
1 cup cream
1 teaspoon vanilla

Steps:

  • Preheat oven to 375.
  • In a large bowl, combine pumpkin, sugars, spice, and salt.
  • Add eggs and sour cream.
  • Beat lightly with fork.
  • Gradually stir in cream and vanilla.
  • Pour into a pastry-lined pie plate.
  • Bake for 50 minutes or until set.

This is my mom's recipe. We all love this dressing and everyone asks for the recipe when we serve it.

pre-made cornbread, crumbled up (1 pan, any way you like to make it)
1 1/2 cups finely chopped celery
1 1/2 cups finely chopped onions
3 eggs, beaten
1 (14 ounce) can chicken broth (1-2 cans)
salt
pepper
ground sage

Steps:

  • Preheat oven to 350°.
  • Mix cornbread, celery, onion, eggs and 1 can of broth together.
  • Add salt, pepper and sage to taste.
  • Bake at 350° for 30-45 minutes or until done.
  • Half way through cooking check moisture; slowly add other can of broth if needed.

1 1/2 cups martha white yellow cornmeal, mix
1/2 cup martha white all-purpose flour
1 1/2-2 cups bulgarian buttermilk
1 egg
salt
pepper
1 tablespoon oil

Steps:

  • Preheat oven to 375.
  • Grease a cast iron skillet and place in oven to heat.
  • In a mixing bowl, combine cornmeal, flour, salt, and pepper.
  • Add buttermilk and mix thoroughly.
  • Taste batter to see if it is overly bitter.
  • If so, add about 2 tbsp.
  • sweet milk.
  • (DO NOT ADD SUGAR!) Add egg and oil.
  • Pour into hot skillet.
  • Return to the oven and bake for 30-45 minutes or until done.
  • Serve hot!
