cooking spray
1 (15 ounce) can green lentils, drained and rinsed
3 tablespoons water, or as needed
3 eggs
7 tablespoons white sugar, or more to taste
3 tablespoons margarine (such as Smart Balance®)
1 teaspoon vanilla extract
6 tablespoons cocoa powder
5 scoops vanilla protein powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat bottom and sides of an 8-inch baking pan with cooking spray.
  • Place lentils and water in a blender; puree into a smooth paste.
  • Transfer lentil paste to a large bowl. Mix in eggs, sugar, margarine, and vanilla extract. Stir in cocoa powder and protein powder until batter is thick and well-combined. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.

You don't have to feel guilty about eating brownies anymore. Paired with chocolate chips and cocoa powder, lentils transform these sweet treats into nutritiously stunning chocolaty delights. Go ahead and pile them up on a plate. Lentils are superfoods high in protein, iron, and fiber!

3 c cooked black lentils
2 c milk chocolate chips
1/2 c unsweetened applesauce
2 eggs
2 tsp pure vanilla extract
2 Tbsp unsweetened cocoa powder
1/2 tsp salt
1 c chopped walnuts

Steps:

  • 1. Preheat the oven to 350° F.
  • 2. In a food processor, puree lentils, chocolate chips, applesauce, eggs, and vanilla extract.
  • 3. Add coco powder, and salt. Puree until well combined. Then, stir walnuts into the batter.
  • 4. Line an 8x8 pan with parchment paper leaving enough paper to stick out the sides. Spoon batter into the pan. Bake for about 30-35 minutes. Cool before cutting.

  • Line a brownie pan with parchment paper ( I use 8 by 8 inch). Preheat the oven to 350 degrees F/180ºc . (9 by 5 loaf pan also works.)
  • Rinse the red lentils. Drain and add to a saucepan. Add 1.5 cups of water and cook over medium heat. Cook for 12 to 13 minutes or until the lentils are cooked (total time including coming to a boil). Stir once in between. Cool for a few minutes, then drain any excess water from the saucepan (there should be hardly any) and add the lentils to a food processor. process until somewhat smooth. (Or use a cup of cooked chickpeas instead)
  • Heat maple syrup and oil in a skillet over medium heat. When hot, add chocolate and sugar and mix. Take off heat. Continue to mix until chocolate is melted and well combined.
  • Add the melted chocolate and the rest of the ingredients to the food processor and process until a smooth batter. Add 1 tbsp Cocoa powder for darker brownies (depends on the chocolate used). Add spices such as cinnamon, or fold in chopped walnuts for variation. **
