SWEET VANILLA QUICHE
This is almost like a vanilla custard pie, but with a less-sweet crust and less-sweet filling, it works as a great brunch dish. A very light sprinkle of grated nutmeg or ground cinnamon over the top is a nice addition. If you sprinkle the top with sugar and brulee it, this could be a wonderful addition to afternoon tea. - Preheat oven to 375°F Set a pie pan on a rimmed baking sheet; place the pie crust into it. Roll or crimp the edges of the crust.
- In a large bowl, whisk eggs, egg yolks, sugar and flour until lightened and frothy, about two minutes. Add half and half. Split vanilla bean, scrape out seeds and add seeds to bowl; whisk until well-mixed.
- Pour custard into pie shell. (Sprinkle with nutmeg or cinnamon if desired.) Bake in preheated oven 55-60 minutes until custard is puffed and golden. Cool at least 15 minutes before slicing; serve warm or at room temperature.

Steps:
- Preheat oven to 350^F.
- In a 13x9x2 in baking pan, place 6 3/4 cup custard cups.
- In a medium bowl, whisk the first 5 ingredients together.
- Add the coconut and mix well.
- Equally divide between the six custard cups.
- Pour hot water into baking pan to come half way up the sides of the custard cups.
- Bake about 30 minutes, or until custards are just set.
- Remove from pan and refrigerate at least 2 hours until cold.
- Can be made well in advance.
- For the Topping: Beat cream and powdered sugar in a medium bowl until stiff peaks form.
- Spoon or pipe onto custards and sprinkle with diced mango.

- Preheat oven to 450-degrees F.
- Lay turkey in a roasting pan.
- Remove leaves from herbs stems. Add sage, thyme, rosemary, and oregano to mayonnaise; combine well. Rub mayonnaise/herb mixture all over outside and interior of bird.
- Liberally salt, and pepper turkey. Add the celery, and onion, inside and out, and tuck the butter in the cavity.
- Roast turkey in 450-degrees F oven for 30 minutes. Then turn the oven down to 350-degrees F, and insert the meat thermometer into the thickest part of the thigh, being careful not to touch bone. Continue roasting, uncovered, until internal thermometer reaches 165-degrees F. Cover legs with foil partway through roasting if desired. Depending on size of turkey, total cook time will be around 1½-2 hours. Once the thermometer reaches 165-degrees F in the thigh, check the internal temperature of the thickest part of the breast to make sure it reads at least 165-degrees F as well.
- Remove from oven. Cover loosely with foil and let rest for at least 20-30 minutes (depending on size) before carving.
- Remember to reserve turkey drippings and juices for gravy.

- Bake according to the package instructions for your frozen pie crusts. Usually, it involves defrosting the pies a little bit, poking holes with a fork on the bottom of the crust, and baking for the specified amount of time on the packaging. Chill the pie crusts on a wire rack while you move on to making the filling.
- Adjust oven temperature to 350°F. Juice the lemons to get 1/2 cup of fresh lemon juice. Mix together fresh lemon juice, eggs, sweetened condensed milk, sugar, baking powder, and lemon zest in a bowl.

- After the pies are thoroughly chilled, take them out and set them aside. Take the mixing bowl and beaters out of the freezer and attach beaters to your hand or standing mixer. In the bowl, combine the heavy whipping cream, confectioners sugar, and vanilla extract and beat until soft peaks form.
