Always on the lookout for fresh fish and salad recipes especially when we go on holiday and this one from Australian BH&G Diabetic Living seems to fit the bill.

2 corn cobs (husks and silk removed)
ground black pepper (fresh)
1 teaspoon lemon pepper (seasoning no added salt Masterfoods recommended)
2 (150 g) cod fish fillets (blue-eye)
cooking spray
30 g salad leaves (2 cups mixed)
30 g snow pea sprouts (trimmed)
2 tomatoes (quartered)
1/2 avocado (small thinly sliced)
1 tablespoon lemon juice (fresh)
2 teaspoons white wine vinegar
1/2 teaspoon olive oil
ground black pepper (fresh)

Steps:

  • Preheat barbecue plate and barbecue grill to medium.
  • Place each corncob on a piece of foil and season with pepper and wrap to enclose and put on barbecue plate and close barbecue lid and cook, turning once, for 20 minutes or until the corn is tender and then remove from the barbecue and set aside int he foil.
  • Tube the seasoning over each side of fish fillets and then spray each side with cooking spry and put fish on barbecue grill and cook on each side for 2 to 2 1/2 minutes or until just cooked.
  • GARDEN SALAD - meanwhile put the salad leaves, snow pea sprouts, tomato and avocado in a medium bowl.
  • Put the lemon juice, vinegar and oil in a msall bowl and season with pepper and whisk well to combine - or alternatively put all into a screw top jar, secure lid and shake to mix well and pour dressing over salad and toss to combine.
  • Divide the salad between plates and top with fish and sereve with the corncobs.

1 teaspoon coarse black pepper
1/3 cup extra-virgin olive oil
Salt
1/2 pint yellow tomatoes, halved or 2 vine ripe yellow tomatoes, seeded and chopped
2 hearts romaine lettuce, shredded or chopped

Steps:

  • Zest the lemons into a bowl. Add the juice of the lemons with the pepper, whisk in olive oil then season the dressing with salt, to taste. Toss the tomatoes and greens with dressing and adjust seasoning.

1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil

Steps:

  • In a large bowl, combine the salad greens, tomatoes, cucumber and pepper rings. In a small bowl, whisk the lemon juice, honey, chives, mustard, salt and pepper until blended. Gradually whisk in oil until dressing thickens. Drizzle over salad; toss to coat.

1 (6 ounce) can tuna
2 tablespoons mayonnaise
2 small sweet pickles
2 tablespoons lemon juice
1 teaspoon pepper
1 teaspoon salt
1 tablespoon basil pesto
1 tablespoon chopped garlic
1 dash onion powder (or 1 tbsp of chopped onion)

Steps:

  • Drain oil/water out of tuna.
  • Stir mayonnaise into tuna.
  • Finely chop and add pickles.
  • Stir in garlic, pesto, lemon juice, and onion powder.
  • Sprinkle salt and pepper over tuna and stir.
  • Serve on bread, toast, crackers or as is.

2 garlic cloves, crushed
1/4 cup olive oil
1 tablespoon lemon juice
1/2 teaspoon lemon zest, finely zested
1/2 teaspoon freshly cracked black pepper
1/2 teaspoon sea salt
1 teaspoon dried oregano leaves
2 fish fillets (1 pound/1/2 kilo estimate)

Steps:

  • Combine the garlic, oil, lemon juice, lemon zest, cracked black pepper, sea salt and the dried oregano in a large bowl. Use the bowl in which you will marinate your fish.
  • Add the fish and ensure it is thoroughly coated in the marinade. Cover and refrigerate for 15-20 minutes.
  • Line a broiler/griller tray with aluminium foil and place the fish on in a single layer. Broil/Grill the fish for 5-10 minutes each side. Only turn the fish once during the cooking (as you do not want it to fall apart). Grill until the fish is cooked.
  • Serve with a salad or veges.
