½ cup lightly packed fresh mint leaves
2 cups lime cordial
2 cups club soda
4 slices lime

Steps:

  • Reserve 4 mint leaves for garnish. Place the remaining mint leaves and lime cordial into the container of a blender, and process until mint is finely ground. Stir in the club soda. Serve in tall glasses over ice. Garnish with fresh mint leaves and lime slices.

2 (16 ounce) bottles fresh squeezed lemonade
2 cups vodka
4 cups ice cubes
2 lemons, halved
8 sprigs fresh mint, garnish

Steps:

  • In a blender combine lemonade and vodka. Fill blender with ice. Blend until ice is crushed. Pour into 4 glasses. Dip each lemon half in sugar, then attach to the rim of each glass. Garnish with 2 mint sprigs.

3 cups white grape juice
1/2 cup sugar
1/2 cup lemon juice
1 bottle (1 liter) club soda, chilled
Ice cubes
Assorted fresh fruit, optional

Steps:

  • In a pitcher, combine the grape juice, sugar and lemon juice; stir until sugar is dissolved. Refrigerate until chilled. , Just before serving, stir in club soda. Serve over ice. Garnish with fruit if desired.

1/2 cup coarsely chopped fresh mint
1/2 cup lemon juice
2 medium lemons, sliced
1/2 cup lemon sherbet, softened
1 liter ginger ale, chilled

Steps:

  • For mint ice cubes, combine the water, mint and lemon juice; pour into 2 ice cube trays. Freeze until set. In a pitcher, combine the lemons and sherbet; slowly stir in ginger ale. Add the mint ice cubes.
