The BEST potato salad recipe! A perfect summer side dish, this recipe can be made ahead of time and stored in the fridge for up to 3 days.

2 pounds Yukon gold potatoes (cut into ½-inch pieces)
2 celery stalks (diced)
½ cup diced red onions
2 tablespoons capers
4 red radishes (halved and thinly sliced, reserve some for garnish)
⅓ cup chopped chives (reserve some for garnish)
2 to 4 tablespoons fresh dill (optional)
¼ teaspoon celery seed (optional)
¾ cup plain whole milk Greek yogurt (I like Stonyfield Grassfed)
¼ cup mayonnaise (I like Sir Kensignton's)
2 tablespoon Dijon mustard
2 tablespoons lemon juice
1½ tablespoons extra-virgin olive oil
3 garlic cloves (minced)
1 teaspoon sea salt
¼ teaspoon turmeric (optional, for color)
Freshly ground black pepper

Steps:

  • Place the potatoes in a large pot and cover with cold water by about 1-inch. Bring to a boil, then reduce the heat and simmer, uncovered, until fork-tender, about 10 minutes. Drain the potatoes, set aside to cool to room temperature, then transfer to a large bowl.
  • Make the dressing: In a medium bowl, whisk together the yogurt, mayo, mustard, lemon juice, olive oil, garlic, salt, turmeric, if using, and several grinds of pepper. Note: this will taste strong and salty at this step; it'll balance once it's mixed with the potatoes.
  • Pour the dressing over the potatoes and stir to coat. Stir in the celery, red onions, capers, radishes, chives, and dill and celery seed, if using. Season to taste and garnish with the reserved radishes and chives.

2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup shredded Parmesan cheese

  • Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil. Cook, covered, until tender, 10-15 minutes; drain. 2 cups sliced almonds
1/3 cup freshly squeezed lemon juice (from 2 to 4 lemons)
Kosher salt
1 1/2 cups extra-virgin olive oil
4 cloves garlic, crushed with the flat side of a knife, peeled and left whole
10 to 12 ounces washed and dried kale leaves, thick stems removed (weight after trimming)
1 1/2 cups freshly grated Parmesan (optional)

Steps:

  • In a toaster oven or skillet, toast almonds until golden brown and fragrant. Set aside to cool.
  • In a bowl, combine lemon juice and 1 heaping teaspoon salt. Slowly whisk in olive oil. Add garlic cloves and set aside to steep.
  • Working in batches, cut the kale into thin ribbons: gather a large handful of leaves, bunch together tightly, and use the other hand to slice into 1/4-inch-thick pieces. This need not be done very precisely or neatly; the idea is to end up with a kind of slaw. (Recipe can be made up to this point 1 day ahead. Keep kale and dressing refrigerated separately.)
  • Place chopped kale in a very large bowl. Sprinkle surface with almonds and then with cheese, if using. Remove and discard garlic cloves from dressing. Pour half the dressing over the salad and toss. Taste for dressing and salt and add more as needed, tossing to coat thoroughly. Serve within 1 hour.

2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
1/3 cup plus 1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground pepper
1 large or 2 small jalapenos, sliced into 1/8-inch rounds (about 1/4 cup), seeds removed if less heat desired
1 tablespoon finely chopped garlic (from 2 to 3 cloves)
1/2 small red onion, thinly sliced (1/2 cup)
1 of Sarah's Preserved Lemons, chopped (1/2 cup)
3/4 cup packed parsley leaves (flat leaf, curly leaf, or a combination)
1/4 cup packed fresh mint leaves
1 teaspoon fresh lemon juice

Steps:

  • Place potatoes in a large pot; cover with water by 2 inches. Bring to a boil, then reduce heat and simmer until just tender when pierced with the tip of a knife, 5 to 6 minutes. Drain and pat dry.
  • Preheat oven to 425 degrees. Toss potatoes with 1/3 cup oil on a rimmed baking sheet, season with salt, and roast, tossing occasionally, until golden brown and crisp, about 40 minutes. Add jalapenos, garlic, onion, and 7 tablespoons preserved lemon. Cook, tossing once, until onion and jalapenos are softened, about 8 minutes. Season with salt.
  • Meanwhile, toss parsley, mint, and lemon juice with remaining 1 teaspoon oil and remaining 1 tablespoon preserved lemon. Season with salt and pepper. Serve potatoes warm or at room temperature, with herb salad sprinkled over top.

POTATO SALAD WITH LEMON, GARLIC AND PASTRAMI



Potato Salad With Lemon, Garlic and Pastrami image

Every time I take out my recipe to make this, my mouth waters in anticipation. By tossing the diced warm potatoes with the lemon, garlic and olive oil mixture, the flavors really get into the potatoes and moistens them. This allows you to use less mayonnaise and eliminates the need for bacon fat. The pastrami more than makes up for the traditional bacon flavor. Cooking time does not include chilling time. This is best made the day before serving so the flavors can meld.

8 medium yukon gold potatoes, cut in half and peeled if you like
4 tablespoons lemon juice
1 lemon, zest of

3 tablespoons red wine vinegar
1 tablespoon Dijon mustard
3/4 cup mayonnaise
2 tablespoons fresh oregano, chopped
1 tablespoon fresh parsley, chopped
3 celery ribs, very finely chopped
1 medium onion, very finely chopped
1/4 lb pastrami, shaved at the deli counter
3 hard-boiled eggs, chopped

Steps:

  • Place the potatoes in a large pot of cold water. Bring the water to a boil, add 1 tbs of kosher salt then lower the heat and simmer for 20 minutes or until the potatoes are barely tender when pierced with a knife.
  • Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot off the heat and cover with a clean, dry kitchen towel. Leave the potatoes to steam for 15 minutes, until tender but firm.
  • Whisk together lemon juice, zest, olive oil, pressed garlic, salt and pepper together in a LARGE bowl.
  • Dice the warm potatoes, add to the lemon mixture and toss gently to coat.
  • Blend the vinegar, mustard, mayonnaise and herbs in a separate bowl.
  • Add the celery, onion, pastrami and eggs to the potato mixture.
  • Toss the vinegar blend over the potato salad and fold in gently until combined.
  • Chill overnight.
  • Bring to room temperature, toss and taste before serving. You might want to add a little more salt and pepper, depending on your taste.
  • Enjoy!

Homemade garlic aioli gives this otherwise classic potato salad a pungent kick. If you don't want to add the hard-cooked eggs, use another 1/2 pound of potatoes instead. This is best served at least an hour or so after making to allow the flavors to mellow. Or make it the day before and store it in the refrigerator; bring it to room temperature before serving. If you can find garlic chives, there's no better place for them than here.

3 large eggs
2 garlic cloves, grated
1/2 teaspoon kosher salt, more as needed
1 tablespoon lemon juice, more as needed

1/4 cup sour cream
1/2 cup finely chopped celery
1/4 cup finely chopped red onion
2 pounds small waxy white or yellow potatoes, roughly about the same size

Steps:

  • Place 2 eggs in a small pot with water to cover. Bring to a boil over high heat; immediately remove from heat and cover for 8 minutes. Transfer eggs to a bowl of ice water to cool. Peel and dice small.
  • Meanwhile, combine grated garlic, salt and lemon juice in a blender, and pulse a few times to combine. Pulse in egg yolk. With motor running, slowly drizzle in olive oil until completely incorporated and mayonnaise is thick. Scrape into a bowl and fold in sour cream. Fold in celery and red onion.
  • Place whole unpeeled potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil over medium-high heat and cook until potatoes are just tender, 15 to 25 minutes depending upon size. Drain and cut potatoes into 1 1/2-inch chunks as soon as you can handle them.
  • Transfer hot potatoes to a large bowl and toss with diced boiled eggs and 2/3 of the dressing. Let cool to room temperature, or refrigerate until ready to use. Just before serving, toss with some of the remaining dressing to taste (if desired). Season with black pepper and add more salt if necessary. Sprinkle with chives.

  • Halve potatoes and place in a large pot of cold water, covering the potatoes by at least a couple of inches. Bring to a boil over high heat, then continue boiling until potatoes are just tender.
  • While potatoes are boiling, crush the garlic clove in a small bowl together with the 1 tsp salt until it forms a paste. Zest lemon, then juice the lemon and measure out the 4 Tbsp. Immediately pour dressing on top while the potatoes are still hot and toss to combine. *There may be a pool of extra dressing at the bottom, but not to worry. It will be absorbed by the potatoes as they cool. Allow to stand at room temperature until the potatoes stop steaming. You can serve this salad warm, or cover and refrigerate. If refrigerating, remove from the fridge 15-20 minutes before serving to allow it to warm slightly, as the flavours are best when it isn't too cold. Toss with chopped chives or green onion before serving.
