Vibrant Orange & Arugula Salad image

You're going to love this beautiful green salad featuring fresh oranges, goat cheese, almonds and radishes! A simple lemon dressing ties it all together. Recipe yields 6 side salads.

Number Of Ingredients 10

1/4 cup sliced almonds
5 to 6 ounces baby arugula
2 oranges, peeled and sliced into thin rounds
2 ounces goat cheese, crumbled (about 1/2 cup)
1/4 cup thinly sliced and roughly chopped radishes
Pinch of ground cinnamon, to sprinkle on top
1/4 cup extra-virgin olive oil
3 tablespoons lemon juice
1 1/2 teaspoons honey
1/4 teaspoon salt

Steps:

  • First, toast the almonds: In a small skillet over medium heat, warm the almonds until they are fragrant and starting to turn golden on the edges, stirring frequently (careful, they'll burn!), about 5 minutes. Transfer them to a bowl to cool.
  • Place the arugula on a large serving platter or into a large serving bowl. Arrange the oranges, toasted almonds, goat cheese and radishes on top. Sprinkle the top lightly with a pinch or two of cinnamon. Set aside.
  • In a small bowl, combine the olive oil, lemon juice, honey and salt. Whisk together until blended. Taste, and add a little more honey if it's unpleasantly tart.
  • Once you're ready to serve, drizzle the dressing lightly over the salad (you might have a little extra), toss, and serve immediately.

Insalata D'arancio e Limone, Orange and Lemon Salad ~ a unique vintage citrus salad recipe straight from the heart of Sicily.

3 large lemons (I chickened out and used milder and sweeter Meyer lemons)
3 large oranges
1 head lettuce (I used a spring mix)
1/2 tsp chopped mint (I used a lot more mint, a big handful at least)
4 Tbsp olive oil (I used more)
salt and pepper to taste
I threw in a cup of Kalamata olives
and a touch of sherry vinegar

Steps:

  • Peel and section the lemons and oranges. (A sharp serrated grapefruit knife is helpful here)
  • Toss the fruit with the olive oil, mint, salt and pepper
  • Serve over the lettuce

1 package (3 ounces) lemon gelatin
2 cans (11 ounces each) mandarin oranges, drained
1 can (21 ounces) pineapple tidbits, drained
1 carton (8 ounces) frozen whipped topping, thawed
Pastel miniature marshmallows, optional

Steps:

  • Place sour cream in a large bowl. Sprinkle with gelatin and stir until blended. Fold in the oranges, pineapple and whipped topping. Sprinkle with marshmallows if desired.

1 box 6 oz orange jello
1 small can mandarin oranges
1 can(s) 1- 9oz can crushed pineapple
1 pkg 1 small lemon-instant pudding
1 can(s) 1 sm can frozen orange juice
1 small container cool whip

Steps:

  • 1. Dissolve box of orange jello into 2C boiling water. Add small can of frozen orange juice. Chill until slightly congealed.
  • 2. Add can of mandarin oranges (undrained) and crushed pineaople (undrained) Mix and let set until firm in a 9x13 dish
  • 3. Mix lemon pudding as directed on package and add 1/2 to 3/4 of the container of Cool Whip, Blend and frost the jello once it is totally firm. Chill until ready o serve.

6 cups confectioners' sugar
1 egg yolk
2 tablespoons lemon juice
3 tablespoons orange juice
1 lemon
2 large oranges
¼ cup butter

Steps:

  • Beat the butter until it has the appearance of thick cream, stir in confectioners sugar, a little at a time, and continue working until mixture is very smooth. Beat in egg yolk and lemon juice. Stir in enough orange juice to make a spreadable frosting, then add grated rind of 1 lemon and 2 grated orange rinds. Spread on sides and top of cake.

3 cups boiling water
1 (20 ounce) can crushed pineapple
3 cups cold water
4 medium firm bananas, sliced
2 1/2 cups miniature marshmallows
1/2 cup sugar
1 tablespoon all-purpose flour
1 egg, beaten
1 (8 ounce) package cream cheese, softened
1 cup whipping cream, whipped
3/4 cup chopped pecans, toasted
1/2 cup flaked coconut, toasted

Steps:

  • In a bowl, dissolve gelatin in boiling water.
  • Drain pineapple, reserving juice.
  • Stir cold water, bananas, marshmallows and pineapple into gelatin.
  • Pour into a 13-in.
  • x 9-in.
  • x 2-in.
  • dish coated with nonstick cooking spray; refrigerate until firm.
  • Meanwhile in a saucepan combine the sugar and flour.
  • Stir in reserved pineapple juice until smooth.
  • Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened and bubbly.
  • Reduce heat; cook and stir 2 minutes longer.
  • Remove from heat.
  • Stir a small amount of hot filling into the egg; return all to the pan, stirring constantly.
  • Bring to a gentle boil, cook and stir 2 minutes longer.

  • In a mixing bowl, beat cream cheese until smooth; add cooled filling.
  • Fold in whipped cream.
  • Spread over gelatin.
  • Sprinkle with nuts and coconut.
