This Salmon With Dill Sauce And Roasted Baby Potatoes Sheet Pan Dinner is packed full of flavor! The best part? It'll be on your table and ready in less than 30 minutes.

1 ½ pounds baby potatoes ((1 1/2 lb bag))
2 tablespoon olive oil
1 tablespoon dried rosemary
1 tablespoon dried oregano
tablespoon fresh parsley (chopped)
½ teaspoon salt (or to taste)
½ teaspoon black pepper (or to taste)
4 fillets salmon ((no skin) about 1 lb)
1 tablespoon olive oil
½ teaspoon salt (or to taste)
½ teaspoon black pepper (or to taste)
4 slices lemon
⅓ cup Greek yogurt (plain)
⅓ cup mayonnaise
1 teaspoon horseradish
1 tablespoon lemon juice (freshly squeezed)
¼ cup fresh dill (chopped)
1 shallot (finely chopped)
¼ teaspoon salt (or to taste)
¼ teaspoon black pepper (or to taste)

Steps:

  • Preheat your oven to 425 F degrees. Spray a large baking sheet with cooking spray and set aside.
  • In a medium size bowl, toss the baby potatoes with the 2 tbsp of olive oil, rosemary, oregano, parsley, and season with salt and pepper.
  • Place the salmon fillets onto the prepared sheet pan. Drizzle with 1 tbsp of olive oil and season with salt and pepper on both sides. Arrange the potatoes on the pan in between the salmon fillets. Place a lemon slice on top of each salmon fillet, for additional lemon flavor.
  • Place the sheet pan in the oven and bake for 20 minutes.
  • Meanwhile, In a bowl whisk together the yogurt, mayonnaise, horseradish, lemon juice, dill, shallot, salt, and pepper. Cover with plastic wrap and refrigerate until ready to use.
  • Remove the lemon slices from the salmon fillet and top with a couple tbsp of the dill sauce. Serve along with roasted potatoes.

This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!

1 pound salmon fillets
¼ cup butter, melted
5 tablespoons lemon juice
1 tablespoon dried dill weed
¼ teaspoon garlic powder
sea salt to taste
freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place salmon in the baking dish. Mix the butter and lemon juice in a small bowl, and drizzle over the salmon. Season with dill, garlic powder, sea salt, and pepper.
  • Bake 25 minutes in the preheated oven, or until salmon is easily flaked with a fork.

½ pound baby red and yellow potatoes, or to taste
1 cup fresh green beans, trimmed, or to taste
2 tablespoons olive oil, divided
2 (6 ounce) salmon fillets
1 clove garlic, crushed
1 sprig chopped fresh dill
½ lemon, sliced
½ lemon, juiced
½ teaspoon freshly ground black pepper
⅓ teaspoon coarse salt
3 tablespoons mayonnaise
1 ½ tablespoons capers, roughly chopped
1 lemon, juiced
½ teaspoon freshly ground black pepper
¼ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add potatoes and green beans, cover, and steam until tender, about 10 minutes. Drain.
  • Brush the shiny side of 2 large pieces of aluminum foil with 1 teaspoon olive oil each. Place salmon skin-side down in the center. Brush remaining olive oil and garlic over salmon. Sprinkle dill on top. Divide lemon slices over salmon; squeeze 1/2 lemon on top. Season with 1/2 teaspoon pepper and 1/3 teaspoon salt.
  • Cover salmon with 2 pieces of aluminum foil, shiny-side down. Roll aluminum foil inwards on all sides to create a pouch. Transfer pouches to a baking sheet.
  • Bake in the preheated oven until salmon flakes easily with a fork, 10 to 12 minutes.
  • Mix mayonnaise and capers together in a small bowl to make a tartar sauce. Stir in juice from 1 lemon, 1/2 teaspoon pepper, and 1/4 teaspoon salt.
  • Serve steamed potatoes, green beans, and tartar sauce alongside salmon.

This is one of those great meal ideas for after work. I'm always looking for quick, easy and delicious dinners that combine fresh ingredients in a flash. I believe this originally appeared in Good Housekeeping magazine but have seen it on other cooking sites with no reference.

1 1/2 lbs red potatoes, cut into 1-inch chunks
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
4 (6 ounce) salmon fillets
1/2 teaspoon salt
2 tablespoons horseradish
1/2 cup fresh dill, divided

Steps:

  • Preheat oven to 450°.
  • In a 15 1/2" x 10 1/2" jelly roll pan, toss potatoes with oil, salt and pepper. Roast potatoes in oven for 10 minutes.
  • After 10 minutes, remove pan from oven. With spatula, push potatoes to one end of the pan to make room for the fish.
  • Place fish in pan, sprinkle with 1/2 t. salt. Return to oven and continue roasting with potatoes for 15 minutes or until fish flakes easily and potatoes are brown. At this point, you may need to remove the fish and continue roasting the potatoes until done.
  • Transfer fish to a platter, top with horseradish sauce and half of the fresh or dried dill.
  • Toss potatoes with remaining dill and serve alongside the salmon.

  • Salmon and Marinade: Arrange fillets in a 8 x 8 inch or 9 x 13 inch baking pan. In a medium-small mixing bowl, mix 2 tablespoons olive oil, 2 tablespoons fresh squeezed lemon juice, 2 tablespoons Dijon mustard, 1/4 up chopped parsley and 1-2 tablespoons drained capers. Spread over the top of the salmon until fully coated, add lemon slices if desired and a tablespoon of butter over the lemon. Cover with wrap and refrigerate for a half hour or longer (you can also marinate overnight). You can start baking the salmon in the last half hour that the potatoes are baking.
  • Roasted Red Potatoes with Dill: In a large mixing bowl, mix cubed red potatoes with 1 teaspoon dill, 2 tablespoons olive oil, salt and pepper until coated. Arrange on a foil-lined baking sheet in a single layer. Bake at 350 degrees for 60 minutes, stirring at 30 minutes along. If potatoes are tender when inserted with a fork you can take them out earlier.
  • Roasted Green Beans: On a foil-lined baking sheet, pile the green beans, pour 1-2 tablespoons olive oil and season with salt and pepper. Mix with your hands and arrange in a single layer. Bake at 350 degrees F for 20-25 minutes. You can put the green beans in 20-25 minutes before the red potatoes are done. If you do not have enough room in your oven, you can just do one of the components of the recipe earlier or have one going in a toaster oven that has baking capability.
