LEMON CREPES

Lemon Crepes image

The taste of lemon is a little like the shift in the air when the season starts to turn from chilly to warm-refreshing and deliciously unpredictable. In this dish, paper-thin crepes are topped with slices of candied lemon and drizzled with a caramel sauce that includes limoncello, a vibrant lemon liqueur.

Yield Makes about 18

Number Of Ingredients 9

6 tablespoon unsalted butter, cut into small pieces, plus about 1 tablespoon, melted, for pan
3/4 cup plus 2 tablespoons all-purpose flour
1/4 cup sugar
1/4 teaspoon salt
1 1/4 cup milk (not skim)
1/4 teaspoon pure vanilla extract
3 large eggs
Lemon-Caramel Sauce
Candied Lemon Slices

Steps:

  • Bring 2 tablespoons water to a boil in a small saucepan. Reduce heat; add 6 tablespoons butter, a little at a time, whisking until butter is completely melted.
  • Whisk together flour, sugar, and salt in a medium bowl. In a separate bowl, whisk together milk, vanilla, and eggs. Gradually add milk mixture to flour mixture, whisking until smooth. Whisk in butter mixture. Pour batter through a fine sieve into a bowl; discard lumps. Transfer batter to an airtight container; refrigerate at least 2 hours (or overnight).
  • Preheat oven to 200 degrees. Lightly coat a 6-to 7-inch crepe pan or nonstick skillet with melted butter. Heat over medium heat until just starting to smoke. Remove pan from heat; pour 2 to 3 tablespoons batter (depending on size of pan) in center. Swirl to cover bottom. Reduce heat to medium-low; return pan to heat. Cook until edges of crepe turn golden and center is dry, about 45 seconds. Flip crepe; cook until underside is brown in spots, about 45 seconds more.
  • Slide crepe onto an ovenproof plate; cover with foil, and transfer to oven. Repeat process with remaining batter, coating pan with more butter as needed.
  • Fold each crepe into quarters to form a triangle. Arrange 3 crepes on each plate; drizzle with lemon-caramel sauce and garnish with candied lemon slices.

LEMON CREPE BATTER

Lemon Crepe Batter image

This is a recipe from an old 1970's cookbook that myself and my oldest Son still cook from. They are really great and very easy. I included the one hour resting time in the preparation time. Enjoy!

Provided by Nif_H

Categories     Breakfast

Time 1h20m

Yield 12 crepes, 4 serving(s)

Number Of Ingredients 9

3 eggs
2 egg yolks
1/4 cup lemon juice, freshly squeezed is preferred
3/4 cup 1% low-fat milk
1 cup plain flour
1 1/4 tablespoons sugar
1/2 teaspoon salt
1 1/2 tablespoons vegetable oil
2 teaspoons lemon zest

Steps:

  • Beat together the eggs, egg yolks and lemon juice together with a whisk or in an electric blender. (We always use the blender and it's easy to pour from).
  • Add the milk and beat well.
  • Sift together the flour, sugar and salt and gradually add to the egg mixture.
  • Add the vegetable oil and blend thoroughly.
  • If beating by hand, strain the mixture through a sieve to remove any lumps.
  • Stir in the lemon rind and allow mixture to stand for at least an hour before using (my kids can't do that!). If the batter is too thick, add a little milk and mix.
  • Pour one or two tablespoons of the batter in the centre of a hot, nonstick frying pan. Tilt to spread the batter to the edges of the pan. Cook until the top is dry. Turn over and cook the other side for about 15 seconds. Don't worry if the first couple aren't perfect - those are the trial ones for me!
  • You can roll these with fruit inside and top with whipped cream. I have a friend who just likes to eat these with a bit of powdered (confectioner's) sugar on them. Be adventuresome and try it with whatever sounds good with lemon!

CREPES

Crepes image

You can make the crepes in advance; they could sit, piled between torn-off sheets of baking parchment and well wrapped in the refrigerator, for a good three days without coming to any harm.

Provided by Nigella Lawson

Categories     appetizer

Time 30m

Yield 8 to 12 crepes

Number Of Ingredients 7

1 cup Italian 00 flour (available at specialty markets) or all-purpose flour
Pinch of salt
1 large egg
1 1/4 cups milk, or more as needed
2 tablespoons melted and cooled butter
2 teaspoons Grand Marnier or triple sec liqueur, optional
Vegetable oil or nonstick vegetable oil spray, for pan

Steps:

  • In a small mixing bowl, combine flour and salt. Form into a mound, making a small well. Crack egg into well, and mix with a wooden spoon, gradually incorporating flour from sides.
  • Mix in 1 1/4 cups milk to make a smooth batter. Using a whisk, blend in melted butter and liqueur. Allow to stand for 30 minutes. Batter should thicken to consistency of heavy cream; if necessary, add more milk to thin.
  • Lightly oil an 8-inch crepe pan or nonstick skillet. Place over medium-high heat until well heated. Pour about 3 tablespoons batter into pan, just enough to line bottom. When pancake has a bubbly surface, after about 30 seconds, carefully flip it with a spatula and let it brown again 20 to 30 seconds. Transfer finished crepe to a large plate. (First crepe may tear and need to be discarded.) Repeat until batter is gone, reoiling pan about every fourth crepe and layering finished crepes with baking parchment or waxed paper. Allow to cool, cover with plastic wrap and refrigerate until needed.
