9 cups Rice Chex cereal
1 (12 oz) package white chocolate chips
1 (3 oz) box lemon Jell-O gelatin
1 (0.23 oz) packet unsweetened lemonade Kool-Aid powder
1 cup confectioners powdered sugar

Steps:

Place cereal in a large mixing bowl or pot; set aside. In a small bowl, whisk together the Jell-O powder, Kool-Aid powder, and confectioners sugar; set aside. Melt chocolate chips per package directions. Pour melted chocolate over the cereal and stir gently to coat evenly. Pour cereal mixture and Jell-O mixture into a plastic ziptop bag and gently shake until completely coated. Pour out onto a large baking sheet to set. NOTE-- For lime lovers, use lime Jell-O and lime Kool-Aid instead of lemon.

4 teaspoons grated lemon peel
2 tablespoons fresh lemon juice

Steps:

Into large bowl, measure cereal; set aside.
In 1-quart microwaveable bowl, microwave chips, butter, lemon peel and juice uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
Add powdered sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container.

Place white chocolate chips, butter, lemon zest, and lemon juice in a microwave-safe bowl; microwave on high for 45 seconds; stir. Continue to microwave in 15 second intervals until the chocolate has melted and the mixture can be stirred smooth.
Pour half the melted chocolate mixture over the top of the cereal, gently fold with a spatula. Poor the remaining mixture over the top and fold gently to combine (doing this in two steps helps make sure all the cereal is evenly coated.)

In a small bowl, melt the Vanilla Baking Chips and the Butter together (about 30 seconds in the microwave). Use a citrus juicer to juice one lemon until you have about 2 tablespoons of lemon juice. (If there is a little more it can be added in for extra flavor!). Mix the lemon juice with the melted vanilla chips and butter.pour the lemon vanilla mixture over the top of the cereal and use a spatula or a spoon to mix well until all of the pieces are coated.
Measure the powdered sugar and pour over the coated cereal. Stir gently until the pieces look dry and all of them have a powdered sugar coating.
