1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 can (14 oz) sweetened condensed milk (not evaporated)
2 teaspoons grated lemon peel
1/2 cup fresh lemon juice (from 2 to 3 medium lemons)
3 cups whipping cream, divided
4 drops yellow food color, if desired

Steps:

  • Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie plate. Bake 9 to 11 minutes or until lightly browned. Cool completely, about 15 minutes.
  • In medium bowl, mix condensed milk, lemon peel and lemon juice; set aside. In large bowl, beat 2 cups of the whipping cream and the food color with electric mixer on high speed until stiff.
  • Fold lemon mixture into whipped cream just until blended. Spoon into crust. Cover; refrigerate at least 3 hours until set.
  • In medium bowl, beat remaining 1 cup whipping cream with electric mixer on high speed until stiff. Spoon dollops on pie or slices of pie when serving. Store covered in refrigerator.

(1) 9-inch Homemade Graham Cracker Crust, or store-bought
(2) 14oz Cans of Sweetened Condensed Milk, 2 tablespoons reserved
4 Large Egg Yolks
6oz Fresh Squeezed Lemon Juice
1 Tablespoon Fresh Lemon Zest
2oz Heavy Cream
8oz Heavy Whipping Cream
2 Tablespoons Reserved Sweetened Condensed Milk
Fresh Lemon Zest

Steps:

  • Preheat your oven to 350F/180C and par-bake your graham cracker crust for 8 minutes, then set aside.
  • In a large bowl whisk together the sweetened condensed milk, egg yolks, lemon zest, lemon juice, and heavy cream until fully combined.
  • Pour into pie shell and shake/spread into an even layer. Bake for 20-26 minutes, the pie filling should be set but the center should just slightly jiggle. When baked let the pie cool on a wire rack for an hour or so then cover in plastic wrap and chill in the fridge for at least 3 hours.
  • In the bowl of an electric mixer fitted with a whisk attachment or in a large bowl with an electric handheld mixer whisk the heavy cream and sweetened condensed milk until medium-stiff peaks are formed. Store covered in the fridge until ready to use. Spread on top of the lemon pie and add fresh lemon zest on top. Store leftovers in the refrigerator for up to 5 days.

All-purpose flour, for surface
Cornmeal Dough
3 cups whole milk
12 chamomile tea bags
1/4 cup cornstarch
1 1/4 cups plus 2 tablespoons sugar
Salt
4 large eggs, separated
1 1/2 teaspoons finely grated lemon zest (from 2 lemons)
1/4 cup fresh lemon juice (from 2 lemons)
2 ounces (4 tablespoons) unsalted butter, softened
1/2 teaspoon pure vanilla extract
1/4 teaspoon cream of tartar
1 teaspoon dried chamomile flowers from chamomile tea bags
Fresh chamomile flowers, for garnish (optional)

Steps:

  • On a lightly floured work surface, roll cornmeal dough to 1/8-inch thickness. Fit into a 9-inch pie dish. Trim edges, leaving a 1-inch overhang. Tuck overhang under dough so edges are flush with rim, and crimp edges. Lightly prick bottom of dough with a fork. Refrigerate for 30 minutes.
  • Preheat oven to 375 degrees. Line dough with parchment, and fill with pie weights or dried beans. Bake until edges begin to turn gold, 15 to 18 minutes. Carefully remove weights and parchment. Bake until crust is golden brown, 12 to 15 minutes. Let cool completely on a wire rack. (Cornmeal crust can be stored overnight.)
  • Bring milk to a boil in a medium saucepan, and remove from heat. Add tea bags, cover, and steep for 5 minutes. Strain through a fine sieve, pressing on tea bags to extract liquid. Discard tea bags.
  • Combine cornstarch, 1 cup sugar, and 1/4 teaspoon salt in a medium saucepan. Whisk in milk mixture. Set over medium-high heat, and cook, stirring constantly, until bubbling and thick, about 7 minutes total (about 2 minutes after it comes to a boil).
  • Whisk yolks in a medium bowl until combined. Pour in milk mixture in a slow, steady stream, whisking until completely incorporated. Return mixture to the saucepan. Cook over medium heat, stirring constantly, until it returns to a boil, 1 to 2 minutes.
  • Remove from heat, and stir in lemon zest and juice. Add butter, 1 tablespoon at a time, whisking until butter melts before adding next piece. Let custard cool in saucepan on a wire rack, whisking occasionally, for about 10 minutes.
  • Pour custard into cornmeal crust. Press plastic wrap directly on surface of custard. Refrigerate until custard filling is chilled and firm, at least 4 hours (or overnight).
  • Just before serving, combine whites and remaining cup plus 2 tablespoons sugar in a mixer bowl. Set over a saucepan of simmering water. Whisk until sugar dissolves and mixture is warm, about 3 minutes. Transfer bowl to a mixer, and add vanilla, cream of tartar, and a pinch of salt. Whisk on medium-high speed until shiny, stiff peaks form, about 7 minutes.
  • Spread meringue over pie. Crush dried chamomile flowers until powdered, and sprinkle over meringue. Garnish with fresh chamomile flowers if desired. Serve immediately.

1/2 cup egg substitute
1/2 cup lemon juice
2 teaspoons grated lemon zest
2-1/2 cups reduced-fat whipped topping

Steps:

  • In a small bowl, combine the cracker crumbs, butter and 1 tablespoon sugar. Press onto the bottom and up the sides of a 9-in. pie plate coated with cooking spray. Bake at 350° for 8-10 minutes or until golden brown. Cool on a wire rack., In a heavy saucepan, combine the cornstarch, salt and remaining sugar. Gradually stir in water and buttermilk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot filling into egg substitute. Return all to pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes longer. Remove from the heat. Stir in lemon juice and zest. Pour into crust. , Cover and refrigerate for at least 4 hours. Just before serving, spread whipped topping over filling.

Steps:

⅓ cup butter
1 (16.5 ounce) package lemon bar mix
¼ cup finely chopped blanched almonds
1 ½ cups cold water
1 (.25 ounce) package unflavored gelatin
2 egg yolks, beaten
1 (8 ounce) package cream cheese, softened
3 drops yellow food coloring

Steps:

  • To Make Crust: In a 10 inch skillet over medium heat, melt butter or margarine. Stir in dessert bar crust mix and almonds. Cook 4 minutes, stirring constantly, until mixture begins to brown and crumble.
  • Reserve 2 tablespoons of crust mixture for topping. Use the back of a fork to press remaining crust mixture into an ungreased 9 inch deep dish pie plate. Cool completely.
  • To Make Filling: Pour cold water into a 2 quart non-aluminum saucepan. Sprinkle gelatin over water and allow to soften 5 minutes. Using a wooden spoon, stir dessert bar filling mix into gelatin, mixing until smooth. Cook over medium-high heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute, then remove from heat.
  • Place egg yolks in a medium bowl. Whisk 1/4 cup of hot lemon mixture into egg yolks. Whisk egg yolk mixture back into rest of lemon filling. Return mixture to heat. Boil and stir 1 minute. Remove from heat. Cover and refrigerate.
  • In a medium mixing bowl, combine cream cheese and 1/4 cup of lemon filling (may be slightly warm), beating until smooth. Gradually beat in remaining filling mixture until smooth. Mix in food coloring if desired.
  • Pour filling into crust. Cover and chill at least 4 hours before serving. Sprinkle reserved almond mixture over top just before serving.
