SWEET-TART LEMON CHEWS CANDY
Steps:
- Prepare a 9 x 5-inch loaf pan by lining it with foil and spraying the foil with nonstick cooking spray.
- Combine the butter, corn syrup, and granulated sugar in a medium saucepan over medium-high heat. Stir until the butter and sugar dissolve, then wash down the sides of the pan with a wet pastry brush to prevent sugar crystals from forming. Insert a candy thermometer .
- Cook the candy, stirring occasionally until the thermometer reads 245 F (118 C). It's very important not to overcook this candy, as even slight overcooking can cause it to harden and lose its wonderfully chewy texture.
- As soon as it reaches the proper temperature, remove the pan from the heat and stir in the lemon extract, citric acid, and yellow food coloring. Stir until the ingredients are well dispersed, then pour the candy into the prepared pan.
- Allow the candy to set at room temperature until it cools and sets completely at least 4 hours or overnight.
- Once set, remove the candy from the pan using the foil as handles and flip it upside down on a cutting board. Carefully peel the foil off the back. Use an oiled chef's knife to cut the candy into small 1-inch squares to serve.
- Because Lemon Chews are soft and chewy, they will gradually lose their shape if left alone at room temperature. We recommend wrapping them in waxed paper to make them easy to save and handle. Individually wrapped Lemon Chews can be stored in an airtight container at room temperature for up to two weeks.

LEMON BUTTER CHEWS
Steps:
- 1. Combine cake mix, 1 egg and butter. Spoon into an ungreased 9 x 13 baking pan. Press evenly into the bottom of the pan.
- 2. Combine cream cheese, 2 eggs and powdered sugar and beat at least 3 minutes or until smooth. Spread over cake batter.
- 3. Bake at 350° for 45 minutes. Cool and slice into squares before serving.
LEMON CHEWY CRISPS
Great fresh lemon taste in a chewy little cookie with a nice crisp brown edge. If you don't have the almonds, you can substitute 1/4 cup additional sugar instead.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat butter and sugar in a large bowl with electric mixer on high speed until fluffy. Beat in remaining ingredients except flour until well blended.
- On low speed, beat in flour just until blended.
- Drop by rounded teaspoonfuls 1 1/2 inches apart on ungreased cookie sheets. Sprinkle with sugar or almonds.
- Bake 10 to 12 minutes until edges are lightly browned. Cool on cookie sheet 1 minute before removing to wire rack to cool completely. HINT: These cookies will have a nicely browned edge if baked on a regular thin cookie sheet rather than a thick or insulated one.

SOFT AND CHEWY LEMON COOKIES
These soft and chewy lemon cookies are packed with big, bold lemon flavor for all you lemon lovers! They're soft, chewy and not at all cakey!

- To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, sugars, egg, lemon extract, and beat on medium-high speed until creamed, light, fluffy, and well combined, about 4 minutes.
- Stop, scrape down the sides of the bowl, add the lemon zest, honey, optional food coloring, and beat on medium-high speed until well combined, about 2 minutes. I used 1 teaspoon gel food coloring; add drops or gel to desired shade. One teaspoon gel makes the batter quite yellow but it mellows slightly after adding the dry ingredients.
- Stop, scrape down the sides of the bowl and add the flour, cornstarch, optional salt, and baking soda (keep the baking soda in a nice little mound rather than sprinkling it).
- Add the lemon juice directly on top of the baking soda. It will bubble and foam, which means the baking soda has been activated and this is good; if your soda doesn't bubble it's old and expired. Beat on low speed until just combined, about 1 minute.
- Stop, scrape down the sides of the bowl, and using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 12 equal-sized mounds of dough, roll into balls, and flatten slightly.
- Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 3 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.
- Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart (I bake 8 cookies per sheet).
- Bake for about 10 minutes, or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don't overbake or undersides could become too browned. Cookies firm up as they cool.
- Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don't use a rack.
- Optionally, dust with confectioners' sugar. Or, for increased lemon intensity, make the lemon glaze and then sprinkle with additional lemon zest.

LEMON BUTTER CHEWS BARS
These bar cookies have a lemony cheesecake flavor and a kick of white chocolate. Fast and easy to make due to the cake mix. Tried and true recipe brings raves. These turn out a fabulous 2-layer lemon bar and are so easy to make. I also varied the recipe and used a devil's food cake mix for a brownie variation. - Preheat oven to 350°F Line a 9 x 13-inch baking pan with nonstick foil.
- Combine cake mix, 1 egg, and butter with a large spatula or wooden spoon. This will give your arm a workout, but if you keep folding it over and pressing to mix, it will eventually come together into a dough that resembles children's play-dough.
- Using your fingers, press dough evenly into the bottom of the prepared pan. Sprinkle with the white chocolate chips and gently press a bit into the dough so they do not roll around.
- In a medium bowl, beat cream cheese and 2 eggs for 30 seconds. Stir in sugar just until combined, then beat on medium speed for 3 minutes until smooth.
- Spoon the cream cheese mixture evenly over the bottom layer. Sprinkle with graham cracker crumbs.
- Bake 30 to 35 minutes, until center is set. Remove from oven and let cool on rack to room temperature. Slice cookie bars into squares to serve.
LEMON BUTTER
Steps:
- Place the ingredients in a small bowl and mash together with a fork. Place the butter mixture in a piece of parchment paper or plastic wrap and roll into a 1-inch-diameter cylinder. Twist the ends and refrigerate until ready to use.
LEMON BUTTER
Serve this thick and creamy, lemon-flavored butter warm over gingerbread or blueberry muffins. You can also top ice cream with it! This recipe will also work with margarine instead of butter.
