LEMON GARLIC FOIL PACKET FISH WITH BROCCOLI
Easy lemon garlic foil packet fish is made with white fish, broccoli & cannellini beans and can be grilled or baked for a healthy family dinner recipe.

- Prepare foil packets by tearing 4 pieces of aluminum foil that are about 8-9" long. Fold up the sides to create a pocket and spray with nonstick cooking spray.
- In a large bowl, combine broccoli, zucchini and cannellini beans. Drizzle with olive oil and sprinkle with salt and pepper. Toss to combine.
- Evenly distribute the veggies and beans to the four foil packets.
- Pat each piece of fish with a paper towel to dry. Lay each piece of fish on top of the vegetables. Sprinkle with salt and pepper.
- Place butter in a small sauce pan over medium-low heat. Once melted add garlic and simmer 2-3 minutes. Remove from heat and stir in Dijon mustard, lemon juice and fresh basil.
- Evenly spoon butter sauce into each of the four foil packets. Gently stir the veggies to coat. Seal the foil packets together so there are no openings.
- If grilling: preheat grill on medium heat. Add foil packets and cook, 25-30 minutes until veggies are tender and fish is flaky.
- If baking: preheat oven to 375 degrees. Place foil packets on baking sheet and cook 30-35 minutes or until veggies are tender and fish and flaky.
- Serve with lemon wedge and garnish with more fresh basil if desired.

EASY LEMON BUTTER BAKED FISH

Steps:
- Pre-heat the oven to 200ºC/400ºF and line a sheet pan with parchment/baking paper.
- Combine the butter, lemon, garlic and herbs in a saucepan and bring to a simmer. Cook for 2-3 minutes until fragrant then remove from the heat and set aside to cool slightly.
- Place the fish and asparagus onto the lined sheet pan then season with salt and pepper.
- Pour the lemon butter sauce over the fish and asparagus and top the fish with lemon slices (optional).
- Place in the oven and bake for 10-12 minutes or until the fish and asparagus are cooked. Fish is cooked when it flakes easily and the flesh is opaque, white throughout.
- Remove from the oven and serve.

- Preheat oven for 200 C/390 F.
- Melt the butter in an oven safe frying pan or skillet over medium-high heat, then pour in the wine and bring to a boil. Simmer for 2 minutes.
- Add cream and simmer for 2 minutes.
- In a small bowl, mix the lemon juice with a few tablespoons of the cream sauce, then add to the sauce and simmer for 1 minute.
- Remove the pan from the heat and add the capers. Taste test and season with salt as needed.
- Place the fish filets in the bottom of the pan and place the broccoli on top. Spoon some sauce over the fish & broccoli.
- Cook in the middle of the oven for 10-15 minutes. For thin plaice filets, 10 minutes is enough, for thicker fish filets like cod 15 minutes might be needed.
- Serve on its own, or with a side of rice.

- Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.

- Heat oven to 425 degrees. Thinly slice half the lemon into rounds and set the other half aside. Toss lemon slices, garlic and broccolini with the olive oil on a rimmed baking sheet. Season with salt and pepper, making sure everything is evenly coated, especially the broccolini tips so they get fried and crisp.
- Sprinkle with Parmesan and roast until the broccolini is bright green, starting to char and the cheese is golden brown, 10 to 15 minutes.
