- 1. Cook pasta according to directions on box and strain. Keep warm.
- 2. While pasta is cooking, heat 2 tbs. oil in large skillet over medium heat; add garlic and saute 3 minutes.
- 3. Add spinach and cook until it wilts.
- 4. Season with salt and pepper.
- 5. Add the nuts and pasta to the skillet of garlic and spinach and toss.
- 6. Remove from heat and add cheese, lemon juice and remaining oil.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 1/2 cups cooking water, then drain the pasta. Meanwhile, put the carrots, walnuts, garlic, oregano, lemon zest, 1/4 teaspoon salt and the red pepper flakes in a food processor and pulse until finely chopped. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the walnut-carrot mixture and the raisins and cook, stirring frequently, until the carrots soften and begin to brown, about 5 minutes. Add the reserved cooking water and bring to a simmer, then add the pasta, pecorino, lemon juice, parsley, and salt to taste and toss. Divide among bowls and top with more cheese.

- Bring a large pot of water to a boil over high heat and maintain at a boil.
- Put the olive oil and garlic in a saute pan and cook over medium heat just until the garlic begins to brown.
- Remove the saute pan from the heat and pour in the wine.
- Return it to the heat.
- Cook for another 1 to 2 minutes, until the wine has been reduced by 1/2.
- Stir in the lemon juice and tomato.
- Remove the pan from the heat.
- Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute.
- Drain the pasta and put it into a warm serving bowl.
- Add the basil, parmesan, and black pepper, along with the tomato mixture.
- Toss and serve immediately.
