2 lbs. (900 g) lean ground pork
1 cup (115 g) fresh cilantro, minced or 2 tsp. (10 ml) dried
1 fresh serrano or jalapeño pepper seeded and minted
1/4 cup (60 ml) red wine vinegar
1 tablespoon (15 g) New Mexico or other ground chili powder
1 tablespoon (15 ml) sweet paprika
2 teaspoons (10 ml) kosher salt
1 1/2 teaspoons (7.5 ml) whole cumin seeds
1 teaspoon (5 ml) ground cumin
1/2 teaspoon (2.5 ml) ground black pepper
1/2 teaspoon (2.5 ml) ground cayenne pepper
1/4 teaspoon (2.5 ml) ground coriander

Steps:

  • In a large bowl, add all ingredients and use your hands to thoroughly work the spices into the pork until uniform in color and texture.
  • Chorizo can be refrigerated, covered, up to 3 days. For longer storage, wrap 1/2 to 1 pound of chorizo in plastic wrap and/or aluminum foil. Freeze up to 6 months. Marking the weight and date on the wrapping will make identification easier. Thaw in your refrigerator or microwave oven prior to using.

1 pound lean ground beef
1 pound ground pork
1 tablespoon finely minced garlic
1 tablespoon salt
1/4 cup white wine vinegar
1 teaspoon black pepper
1 teaspoon ground canela
1 teaspoon ground star anise
1/2 teaspoon ground cloves
2 tablespoons crushed Mexican oregano
1/4 cup dry white wine
1 teaspoon sugar
4 ounce ground ancho chile powder
1 cup boiling water

Steps:

  • Place the ground meats in a large bowl and add the crushed garlic and the salt. Add the vinegar and mix well. Sprinkle the pepper and ground spices over the mixture and blend well. Add the white wine and sugar. Mix well.
  • Place the ground chile powder in a small bowl and add the boiling water, stir well to make a paste. Work the paste into the meat mixture until well blended. Cover and refrigerate overnight.
  • In a hot skillet, cook the chorizo, making sure to break up all the lumps.
  • Serving suggestions: as a stuffing for chicken or with eggs .

I love choizo, but who knows what is in the commercially prepared kind? This homemade Mexican chorizo is delicious with scrambled eggs served in a flour tortilla. I usually prepare this chorizo with ground turkey.

1 lb ground lean pork, ground turkey can be substituted
1/4 cup cider vinegar
2 tablespoons chili powder
1 tablespoon sweet paprika
1 teaspoon ground cumin
1 teaspoon table salt
1 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano, crushed
1/4 teaspoon red pepper flakes
1/8 teaspoon ground cloves
1/8 teaspoon ground black pepper

Steps:

  • Combine chili powder, paprika, cumin, salt, garlic powder, coriander, oregano, red pepper flakes, ground cloves and black pepper in mixing bowl and stir until well combined.
  • Add cider vinegar and stir until dry ingredients are moistened.
  • Add ground meat and knead until spice mixture is well incorporated into the meat.
  • You can use the chorizo immediately, but for best flavor development, place chorizo mixture in an airtight container and store overnight in fridge.
  • Form chrizo meat into small patties or just scramble and fry the meat in a skillet until done.
