Lauri's Banana Bread image

This is my Banana Bread with a Caramel drizzle on it. I has been a great hit for many who just want a little more of a sweet flavor to it.

1/2 c butter, cold
2 c flour
1 c sugar
1 tsp baking soda
2 eggs
1/4 tsp salt
3 mashed bananas
1/4 c nuts
CARAMEL DRIZZLE
1 c sugar
6 Tbsp butter
1/2 c heavy whipping cream

Steps:

  • 1. Cream butter and sugar. Add eggs and bananas. Sift remaining ingredients and chopped nuts. Bake in greased pan or 8 X 8 pan at 350* until golden brown. About an hour.
  • 2. Caramel Drizzle First, before you begin, make sure you have everything ready to go - the cream and the butter next to the pan, ready to put in. Making caramel is a fast process that cannot wait for hunting around for ingredients. If you don't work fast, the sugar will burn. Safety first - make sure there are no children under foot and you may want to wear oven mitts; the caramelized sugar will be much hotter than boiling water.
  • 3. Heat sugar on moderately high heat in a heavy-bottomed 2-quart or 3-quart saucepan. As the sugar begins to melt, stir vigorously with a whisk or wooden spoon. As soon as the sugar comes to a boil, stop stirring. You can swirl the pan a bit if you want, from this point on. Note that this recipe works best if you are using a thick-bottomed pan. If you find that you end up burning some of the sugar before the rest of it is melted, the next time you attempt it, add a half cup of water to the sugar at the beginning of the process, this will help the sugar to cook more evenly, though it will take longer as the water will need to evaporate before the sugar will caramelize.
  • 4. As soon as all of the sugar crystals have melted (the liquid sugar should be dark amber in color), immediately add the butter to the pan. Whisk until the butter has melted.
  • 5. Once the butter has melted, take the pan off the heat. Count to three, then slowly add the cream to the pan and continue to whisk to incorporate. Note than when you add the butter and the cream, the mixture will foam up considerably. This is why you must use a pan that is at least 2-quarts (preferably 3-quarts) big.
  • 6. Whisk until caramel sauce is smooth. Let cool in the pan for a couple minutes, then pour into a glass mason jar and let sit to cool to room temperature. (Remember to use pot holders when handling the jar filled with hot caramel sauce.) Store in the refrigerator for up to 2 weeks. Warm before serving.

10 tbsp. butter at room temp.
1 cup mashed bananas(about 2 large bananas)
1/2 cup vanilla greek yogurt at room temp.
2 large eggs at room temp.
1 tsp vanilla
2 cups all purpose flour
2/3 cup white sugar
1/4 cup brown sugar
1 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
1/2 cup toasted walnuts, chopped
1/2 - 1 cup semisweet chocolate chips

Steps:

  • preheat oven at 350 degrees F. Spray pan with baker's spray(cooking spray w/flour). Beat together mashed bananas, yogurt, eggs, vanilla just until blended. Sift together flour, sugars, baking soda, baking powder and salt into the bowl of a electric mixer with whisk attachment. Add the butter and mix on med-low speed until blended(about 30 sec). Add in banana mixture in 3 batches, scraping sides of bowl and mixing on medium between each addition. Fold in nuts and half of the chocolate chips if using. Pour into prepared loaf pan. sprinkle remaining chocolate chips on top and stir in lightly(I found this helps with more uniform chip distribution). Bake until lightly browned and bread bounces back to touch. About 1hr to 1hr 10min. Cool on rack in pan 10min, then turn out loaf onto wire rack to cool completely.

1 cup granulated sugar
8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
  • Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
  • Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
  • Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
  • Spread slices with honey or serve with ice cream.

This recipe for nut bread has been handed down from my grandmother and is sooo delicious. It's easy to make and everyone who tries it always asked for the recipe. For best results, mix with a wooden spoon, not with an electric mixer. It will overmix and become tough.

2 cups white sugar
2 eggs
2 tablespoons cooking oil
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups buttermilk
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pas.
  • In a large bowl, stir together the sugar, eggs, vegetable oil and vanilla until smooth using a wooden spoon. Combine the flour, baking soda, salt and cinnamon; stir into the sugar mixture alternately with the buttermilk just until mixed. Stir in the walnuts. Divide the batter evenly between the two pans.
  • Bake for 55 minutes in the preheated oven, until a toothpick inserted into the crown comes out clean. Allow the bread to cool for about 10 minutes before removing from the pans, and wrap in aluminum foil.
