LANDRY'S UNIQUE VANILLA PECAN PIE
Adapted from Gourmet, from the recipes submitted by readers. This is very unusual - there is no corn syrup, and only egg whites are used, and there is no pie pastry. This is not like any other pecan pie I have ever seen before. I haven't tried this one yet, but have it planned for next holiday season.

Steps:
- Preheat oven to 350 F and butter a 9" pie plate.
- Beat egg whites using an electric mixer until they hold stiff peaks.
- Fold in the graham cracker crumbs, the sugar, baking powder, vanilla, and nuts using a rubber spatula.
- Pour into a buttered pie plate and bake for 25-30 minutes or until pie is puffy and golden.
- Let cool before serving.
- If desired, garnish with whipped cream.
CREOLE PECAN PIE
From a New Orleans' friend. This pie is very good, and very sweet and very rich. Serve small slices with vanilla ice cream and coffee.

Steps:
- Prebake the chilled pie shell, weighted down, at 350 degrees for 7 minutes.
- Take out the weights and bake another 2.
- Let cool.
- Beat the eggs until frothy.
- Add the remaining ingredients, mix well, pour into the shell, and bake at 350 degrees for about 40-45 minutes, or until set.
- Let cool completely before serving.
- Serve with a scoop of vanilla ice cream.
BRANDY PECAN PIE

Steps:
- In a small bowl place pecans and pour in brandy; let sit 30 minutes.
- Preheat oven to 400°.
- In medium bowl combine sugar, eggs, vanilla, corn syrup, salt and flour, mixing well.
- Stir in melted butterand brandied nuts.
- Pour into pie shell.
- Cover crust edges with narrow strips of foil to prevent over browning.
- Bake at 400° for 15 minutes; reduce temperature to 350° and bake 15 minutes. Remove foil from edges and bake 15 minutes more till puffed and golden.
- A knife inserted 1/2 way between edge and center will come out clean.
- Serve warm or cold topped with whipped cream or vanilla ice cream.
